SIMPLE BREAKFAST POTATOES
After yoga this morning I was craving a hearty breakfast and wanted restaurant style breakfast potatoes. I couldn't find a good recipe online for breakfast potatoes so I came up with my own. My boyfriend loved them and said they were really good served in combination with eggs over easy, turkey bacon, sliced apples and toast. I enjoyed mine with good-old ketchup and he had his with salsa. Try playing with the spices in your cupboard if you don't have the basics that I had stocked. Next time I might try a sprinkle of cayenne pepper to spice it up a bit. This recipe could serve 4 hungry people.

Steps:
- Place chopped unpeeled potatoes in a big pot and fill with water to about one or two inches above potatoes.
- Bring to a boil and simmer on medium heat for about 20 minutes or until tender.
- Drain potatoes.
- Heat olive oil in a skillet on medium heat.
- Add potatoes.
- Add Seasonings.
- Saute until crispy 5-10 minutes.
- Serve with your favorite style of breakfast eggs and enjoy!

Swapping out the usual spuds for sweet potatoes gives this classic breakfast side dish a healthy boost. Jalapeno adds just the right amount of heat.

- Preheat oven to 450 degrees. On a rimmed baking sheet, toss sweet potatoes with oil and 1/4 teaspoon paprika; season with salt and pepper. Roast, rotating sheet and flipping potatoes halfway through, until browned, about 30 minutes.
- Meanwhile, in a large skillet, heat butter on medium-high. Add onion, bell pepper, and jalapeno, season with salt and pepper, and cook, stirring occasionally, until vegetables are soft and golden, about 10 minutes.
- Add roasted sweet potatoes to skillet with vegetables. Toss with remaining 1/4 teaspoon paprika, then strip the leaves from thyme sprigs into skillet; stir to combine. Check seasoning; serve immediately.

- Crisp the prosciutto in a 350° oven for 10 minutes. Let cool then crumble into small pieces.
- Set oven to 375°.
- Separate the egg whites and yolks. Whip the 3 egg whites until stiff.
- Mix together the Simply Potatoes, 1 egg yolk, prosciutto, and white cheddar cheese. Fold in the egg whites.
- Put the mixture into a greased mini-cheesecake pan. Sprinkle 2 t. of chives on top.
- Bake for 25-30 minutes. Let cool for 5 minutes, then remove from pan. Sprinkle the remaining chives on top.

- Measure potatoes into a medium size mixing bowl. Add beaten eggs and mix thoroughly. Add pancake mix and dill and stir to combine. Allow mixture to sit for 5 or 10 minutes. Take a teaspoonful of the cream cheese and roll into small ball about the size of a marble. Using hands, take just enough of the potato mixture to totally surround the cream cheese ball and form into a ball, gently applying just enough pressure to hold potato mixture together. A little messy but kind of fun! Gently drop potato balls into hot oil with a slotted spoon and fry until golden about 3 -4 minutes. Allow to cool slightly -- cheese inside will be hot!

- Butter a 9" X 12" baking dish well and press Simply Potatoes Hash Browns along the bottom and up sides of the dish.
- Crack eggs into blender and add canned soup. Blend well.
- Add remaining ingredients and pour over hash browns in prepared baking dish.

- Preheat oven to 350 degrees F.
- Turn a large muffin tin upside down. Place a slice of bacon down the middle of the inverted cup. Place another piece of bacon perpendicular to the first piece. Continue to place bacon slices on cups slightly overlapping each piece until the cup is covered in bacon. Repeat on remaining cups until all bacon is used.
- Place bacon cups in oven and cook 20-30 minutes or until bacon is golden brown.
- Remove from oven and set aside to cool.
- Cook potatoes in skillet according to package instructions. Set aside.
- Beat eggs and half-and-half in a medium bowl.
- Scramble eggs in a non-stick skillet over medium low heat until cooked through.
