CARIBBEAN SEASONED RICE

2 tablespoons peanut oil
Salt and fresh ground pepper
6 to 8 chicken thighs, halved
2 tablespoons butter
1 medium onion, diced
1/4 cup scallions, chopped
2 sprigs thyme
2 bay leaves
3 cups long grain rice, rinsed
1 tablespoon garlic, chopped
1 1/2 cups butternut squash, small dice
1 1/2 cups frozen peas
5 cups water

Steps:

  • Heat oil in saucepan until just smoking. Salt and pepper chicken pieces and brown both sides in single layers. When all the pieces are browned off, remove chicken from the pan and set aside. Drain oil from pan. Add butter, onion, scallions, thyme, bay leaves, and saute for 4 minutes. Add rice and saute for 4 to 5 minutes more, then add garlic, chicken, squash, peas and water. Bring to a boil then reduce to a simmer and cover for 35 minutes.

2 cups rice
2 1/4 cups water
1 (14 1/2 ounce) can chicken broth (1 3/4 cup)
1 chicken leg
1/2 onion
1/2 green pepper, diced
2 celery ribs, diced
1 tomatoes, chopped
2 tablespoons olive oil
salt & pepper

Steps:

  • Bring the rice to a boil, using water and chicken broth, turn down heat and simmer for 15-20 minutes, until done and liquid absorbed.
  • Put the chicken leg in a saucepan, cover with water, and bring to boil with salt and pepper for 15 minutes.
  • Once chicken and rice are ready, shred the chicken from the bone.
  • Fry the onion, green pepper, celery and tomato in the olive oil until it's golden brown, about 10 minutes.
  • Add the shredded chicken and the cooked rice to the vegetables and mix thoroughly. Serve and enjoy!

2 medium onions, chopped
1 medium green bell pepper, cored seeded and finely chopped
2 garlic cloves
1 teaspoon finely chopped seeded fresh red chile
1 teaspoon salt
pepper
3 tomatoes, peeled and chopped
3/4 cup tomato paste
1/2 cup dry white wine

Steps:

  • In a medium heavy-based saucepan, heat oil over low heat. Add onions, green pepper, garlic and chilies; saute until the peppers are soft.
  • Add salt, pepper and tomatoes. Cook about 10 minutes over low heat, stirring occasionally.
  • Add tomato paste and wine and simmer, stirring occasionally.
  • Serve hot.

3/4 cup shredded coconut
1/2 cup onion, minced
2 cups rice
4 cups chicken broth
1 firm ripe mango, peeled and cubed
1/4 cup fresh chives, minced

Steps:

  • Heat oil in a large saucepan and add coconut.
  • Cook, stirring constantly until very lightly browned Add minced onion.
  • Continue cooking and stirring 1 minute longer.
  • Add rice, stir to coat.
  • Add broth and bring to a boil.
  • Cover and reduce heat to low.
  • Simmer 25 to 30 minutes until rice is tender.
  • Remove from heat and stir in mango.
  • Sprinkle with chives.

6 -8 spring onions
2 garlic cloves
1 red chile
6 ounces cooked chicken, shredded or diced
2 tablespoons vegetable oil
1 teaspoon ground turmeric
300 ml coconut milk
900 ml chicken stock
2 ounces small soup pasta or 2 ounces spaghetti, broken into small pieces
1/2 lemon, sliced
salt & freshly ground black pepper
1 -2 tablespoon freshly chopped coriander (cilantro)
1 sprig fresh coriander (to garnish)

Steps:

  • Trim the spring onions and thinly slice.
  • Peel the garlic and finely chop.
  • Cut off the top from the chilli, slit down the side and remove seeds and membrane, then finely chop.
  • Heat a large wok, add the oil and when hot, add the spring onions, garlic and chilli and stir-fry for 2 minutes or until the onion has softened.
  • Stir in the turmeric and cook for 1 minute.
  • Blend the coconut milk with the chicken stock until smooth, the pour into the wok.
  • Add the pasta or spaghetti with the lemon slices and bring to the boil.
  • Simmer, half-covered, for 10-12 minutes, or until pasta is tender, stirring occasionally.
  • Remove the lemon slices and add the chicken.
  • Season to taste with salt and pepper and simmer for 2-3 minutes or until the chicken is heated through.
  • Stir in the chopped coriander and ladle into heated bowls.
  • Garnish with sprigs of fresh coriander and serve immediately.

  • Pastechi. Pastechis are deep-fried pastry pockets stuffed with myriad types of goodies. Typically you’ll find cheese, ham, beef, chicken or tuna inside a pastechi but you can sometimes find chop suey filling, thanks to the Asian influence on the island.
  • Keshi Yena. Often called Aruba’s national dish, this comfort food casserole was borne of necessity since it was created entirely of leftovers baked into a hollow rind of Edam Cheese!
  • Sopis (soups) A top food in Aruba to try is soup. Arubans are big on hearty soups, especially fish soup (sopi di pisca) which will depend on the catch-of-the day for its base.
  • Pisca Hasa and Other Fresh Fish in Aruba. Of course, being an island, Aruba is blessed with a bounty of goodies from the sea, and scads of seafood and fish restaurants preparing it a myriad of ways.
  • Keri Keri. Though originally made with shark, any firm whitefish will do to make this dish. It’s made by mixing flaked stewed or leftover fish with sautéed annatto powder (achiote), fresh basil, onion, celery, tomato and green pepper.
  • Lobster, Shrimp and Prawns. As for seafood, Caribbean (rock) lobster and jumbo shrimp/prawn dishes are also treated without much fuss. Try the jumbo fresh local steamed shrimps at legendary Charlie’s Bar in San Nicolas, open for lunch only.
  • Pan Bati. Pan bati is the proverbial Aruban side, meaning “smashed bread.” It’s a thin corn flour pancake that’s ideal to soak up sauces or dip in soups.
  • Funchi and other Typical Sides. Other typical Aruban side staples include bananas hasa (fried plantains), arroz moro (beans and rice) and a cornmeal polenta called funchi.
  • Ayacas. Up until recently, it was very tough to find ayacas in restaurants on Aruba unless you were on island at Christmas time as they are typically made in the home during the holidays and each family has their own secret recipe.
