MINI POTATO PANCAKES WITH SOUR CREAM AND PEPPER JELLY

Steps:
- Grate the potatoes on the large holes of a box grater and rinse with cold water in a colander. Strain well and squeeze dry in a towel. Transfer to a bowl and add the chopped chives and egg. Mix well to thoroughly combine, then sprinkle with the flour, 3/4 teaspoon salt and a few grinds of pepper. Mix to combine.
- Heat about 1/8 inch of oil in a large nonstick skillet over medium-high heat until shimmering and hot. Working in batches, spoon rounded tablespoons of the mixture into the skillet and flatten each to make thin pancakes. Cook, turning once, until golden brown on both sides, 2 to 3 minutes per side. Transfer to a paper towel-lined plate to drain.
- Spoon a little bit of sour cream on each pancake followed by a dollop of the pepper jelly. Garnish with the chive segments and serve.

- Combine the grated onion and potato in a kitchen towel and wring out as much liquid as you can. Pour the mixture into a mixing bowl. Dust with the flour and mix to disperse it. Add the egg, lemon zest, chopped dill, salt and pepper and mix until well combined.
- Heat the olive oil and butter in a large nonstick saute pan over medium-high heat. Once the bubbles from the butter subside, spoon 3 heaping tablespoons of the potato mixture into the pan. Repeat, making 4 to 8 pancakes. Cook the pancakes about 4 minutes on each side, assuring that both sides are well browned and the potato is cooked through. Reduce the heat of the pan if the potato cakes are browning too quickly in order to make sure the inside is cooked completely.
- Remove the cakes to a paper-towel-lined plate as they finish and season with salt while hot.
- (You can cover them with foil and keep in a 200 degrees F-oven to stay warm until ready to serve.)
- To serve, transfer the potato pancakes to a platter and dollop each one with the creme fraiche. Top with a sprig of dill.

- Grate the onion on the large section of a box grater into a bowl to retain the onion juice.
- Add the Simply Potato hash browns, Mix in the eggs, sprinkle 1 Tablespoon Flour and 1/2 Teaspoon Garlic Powder.
- Drop 1 Heaping tablespoon Hash browns into medium hot skillet with 8 tablespoons of oil. Spread outward to create a cake about only 1/16" thickness-do not crowd skillet. Crisp the bottom about 3 minutes, flip and cook about 2 minutes.
- Drain on paper towel; keep warm on wire rack in warm oven as you cook additional batches.

Official Contest Entry: Simply Potatoes 5Fix. Appetizer but could be a side dish as well. At Thanksgiving we had our neighbors over to watch Cowboys game. Needed to come up with a last minute appetizer and had an extra bag of Simply Mashed Potatoes and some fresh ranch dressing on hand and simply improvised. They were all gone within 15 minutes. Can insert with fancy toothpicks for added presentation and ease of dipping and eating.

- Fold potatoes, goat cheese, green onions and basil together until nicely combined. Roll into balls about the size of a quarter. Roll the potato balls in the crushed Rice Krispy cereal until well coated. Place on baking sheet and spray with cooking oil spray nicely coating.
- Bake at 375 for 20 minutes.
- Can serve with a nice fresh ranch dressing as a dipping sauce.

- Mix mashed potatoes, garlic, cheese, egg and flour, salt & pepper until blended. Mixture will be thick but spoonable.
- In a skillet, melt 2 tablespoons butter, with spoon, place mixture into skillet, let cook a few minutes until edges start to brown, flip and continue cooking until browned. Similar to pancakes. Continue until all potatoes are cooked. Use additional butter, if skillet dries out.

- Melt some butter in a small saucepan over low heat. Then add the garlic and cook until fragrant, about 1 to 2 minutes, then cool.
- Mix together the garlic, cream cheese, dill, season with salt and pepper in a medium bowl. Use a wooden spoon to stir in the mashed potatoes and then the flour, being careful not to over-mix (it will be very sticky). Let mixture rest 5 to 10 minutes.
- Make small patties out of the mixture and set for frying.
- Coat the bottom of a large skillet with oil and heat over medium heat. Once the oil is hot, add a few cakes into the oil, cooking the cakes in batches so that you don't overcrowd the pan.
- Once the cakes are put into the oil, use an oiled metal spatula to gently shape the cakes slightly. Cook until golden brown on both sides, flipping once. Once cooked, transfer the cakes to a paper towel-lined plate to drain any excess oil.
- Serve hot, warm, or room temperature with sour cream (non-dairy, if desired) and enjoy!

- Follow directions on the Hash Brown package, when they are cooking, get your skillet out and cook your bacon until it is completely cooked and crispy. Keep your bacon grease to cook your omelet.
- In a medium bowl, beat eggs for a couple of minutes. Pour eggs into a heated skillet (on my electric stove, it is a notch before medium), add crumbled Bacon, Red Pepper (save about pieces for garnish), Onion and finally the Simply Potato Hash Browns. When omelet is golden brown on the bottom, flip half of the egg over to the other side. Wait about two minutes and then flip on the other side for the same amount of time. Serve with a garnish of mint and a few pieces of red pepper for added color.
- Enjoy every delicious bite!

- Preheat oven to 350 degrees.
- Cut chicken breast into small cubes, cook on stove top in frying pan until done and no longer pink. I added a little olive oil to keep chicken from sticking to the pan.
- Fry bacon and crumble.
- In a 9 x 13 baking dish spray with non stick spray, add potatoes, chicken, bacon and corn, mix all together.
- bake uncovered for 30 minutes, when finished sprinkle cheese on top and pop back in oven until cheese is melted.

- Par boil your peeled chunked sweet potato.
- Grate it & mix in with the Simply Potatoes shreds.
- Blend in the egg & the rest of ingredients.
- Heat a non stick skillet brushed with EVOO & some melted butter.
- Put the mixture by 1/4 cups into the hot skillet. Press out to flatten.
- Brown 1-2 minutes per side.
- Serve with applesauce, butter, maple syrup or even just a sprinkle of white sugar over the butter!
- This was a favorite lunch of my parents. Also I fixed it often for my Mom & her gal friends after my Dad's passing.
