Oh man, I really love this recipe. It's truly awesome! Most people like corn tortillas with their enchys, but I prefer flour...by all means, go with what you like! Sometimes I throw black beans into the meat mixture, Anyway Enjoy!

1 lb ground beef
1 onion, chopped
1/2 bell pepper, chopped
2 garlic cloves, minced
2 serrano peppers (optional) or 2 jalapeno peppers, minced (optional)
1 1/4 ounces taco seasoning mix
4 ounces cream cheese, softened
2 cups enchilada sauce, divided
8 ounces monterey jack cheese
12 flour tortillas, softened (6 inch)

Steps:

  • Brown beef, onions, peppers and garlic in large skillet over medium-high heat until browned and veggies are soft.
  • Add taco seasoning and 1/2 cup of enchilada sauce, stirring until combined. Turn off heat and add cream cheese. Stir until cream cheese has melted into mixture.
  • Spread 1/2 cup of enchilada sauce into the bottom of a greased 13x9 casserole dish. Spoon about 1/4 cup of meat mixture down the center of each warmed tortilla and roll up. Place enchiladas seam side down in dish.
  • Top enchiladas with remaining 1 cup of enchilada sauce. Then top with monterey jack cheese.
  • Bake for 20 minutes at 350 degrees or until cheese is melted. Serve with rice and beans if you so desire!

1 ½ cups water
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 (1.25 ounce) package taco seasoning
1 cup water
1 (16 ounce) can refried beans
1 cup cottage cheese
1 cup shredded Cheddar cheese
10 (8 inch) flour tortillas
1 (7.75 ounce) can red enchilada sauce
1 cup sour cream
1 cup shredded Cheddar cheese

Steps:

  • Bring rice and 1 1/2 cup water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until the rice is almost tender and the liquid has been absorbed, 15 to 20 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 9x13-inch baking dishes.
  • Cook beef in a large skillet over medium heat, breaking it up as it cooks, until crumbly and browned, about 10 minutes. Drain excess grease and stir in onion and garlic until thoroughly combined. Stir taco seasoning and 1 cup water into the mixture, bring to a boil, and reduce heat to low; simmer 5 minutes to thicken. Gently stir in rice. Cook, stirring often, until liquid is absorbed. Mix refried beans, cottage cheese, and 1 cup Cheddar cheese into the filling and stir until fully combined.
  • Spread about 1/2 cup of filling in a line down the center of each tortilla and roll tortillas; place 5 tortillas with seam sides down into bottom of each prepared baking dish.
  • Mix enchilada sauce with sour cream in a bowl and pour half the sauce down the center of each pan of enchiladas; sprinkle tops with 1 cup Cheddar cheese.
  • Bake in the preheated oven until the cheese topping is melted and the filling is hot, 20 to 25 minutes.

1 envelope taco seasoning
1 cup water
2 cups cooked rice
1 can (16 ounces) refried beans
2 cups shredded cheddar cheese, divided
12 flour tortillas (8 inches), warmed
1 jar (16 ounces) salsa
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Stir in rice. Cook and stir until liquid is evaporated. , Spread about 2 tablespoons refried beans, 1/4 cup beef mixture and 1 tablespoon cheese down the center of each tortilla; roll up. Place seam side down in 2 greased 13x9-in. baking dishes., Combine salsa and soup; pour down the center of enchiladas. Sprinkle with remaining cheese. , Bake 1 casserole, uncovered, at 350° for 20-25 minutes or until heated through and cheese is melted. Cover and freeze remaining casserole for up to 3 months., To use frozen casserole: Thaw in the refrigerator overnight. Cover and bake at 350° for 30 minutes. 1 (1 ounce) packet taco seasoning mix
½ cup chopped sweet onion
4 green onions, or to taste, chopped
1 (8 ounce) package cream cheese, softened
1 cup chunky salsa
12 corn tortillas
1 cup shredded pepperjack cheese, divided
2 ½ cups enchilada sauce
4 ounces sliced black olives

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Stir taco seasoning mix into the beef; transfer to a large bowl, reserving drippings in the skillet.
  • Cook and stir sweet onion and green onion in the hot drippings until tender, 5 to 7 minutes; add to seasoned ground beef along with cream cheese and salsa. Stir the mixture until the cream cheese melts completely.
  • Arrange tortillas onto a flat work surface. Spoon even amounts of the beef mixture in a line down the center of each tortilla. Top beef with even portions of the pepperjack cheese. 1 8-oz. container sour cream
2 10-oz. cans mild green enchilada sauce
1/4 c. jalapeno peppers, seeded and chopped
1 lb. ground beef, browned and drained
1/2 c. shredded sharp cheddar cheese
1 sweet onion, chopped
1/2 c. sliced black olives
8 8-inch flour tortillas
Garnish: sliced black olives, chopped tomato, shredded lettuce, chopped green onion

Steps:

  • In a large bowl, blend together cream cheese, sour cream, sauce, and jalapenos; set aside. Combine beef and shredded cheese in another bowl; set aside. Fill each tortilla with 1-2 tablespoons cream cheese mixture and 1-2 tablespoons beef mixture. Sprinkle each with onion and olives; roll up tortillas. Place seam-side down in a greased 13x9 inch baking pan; cover with remaining cream cheese mixture. Bake, uncovered, at 400° for 30-40 minutes; cover if top begins to brown.

1 tablespoon butter
1 diced onion
1 bell pepper
8 ounces mushrooms
1 (8 ounce) package cream cheese, cubed
1/2 cup sour cream
1/2 teaspoon chili powder
1/2 teaspoon cumin
1 1/2 cups shredded cheddar cheese
1 (10 ounce) can rotel
8 -12 flour tortillas
2 (10 ounce) cans enchilada sauce (red, green, or one of each)

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet melt the butter over medium heat.
  • Sautee the onions, mushrooms, and bell pepper until softened, 10-15 minutes.
  • Add in the cream cheese, sour cream, chili powder, cumin, and 3/4 cup of shredded cheddar cheese.
  • Heat until all the cheeses are completely melted.
  • Combine in the shredded chicken.
  • Coat a baking dish with cooking spray.
  • Scoop a large spoonful of the chicken mixture into the center of a tortilla, roll, and place it seam side down into the baking dish.
  • Repeat until you are out of the chicken mixture, tortillas, or room in your dish.
  • Pour enchilada sauce over the top of the enchiladas (I like to make half with red sauce and half with green sauce).
  • Cover with the remaining cheese.
  • Bake at 350 degrees for 20-25 minutes, uncovered.
