PAN FRIED POTATOES
This pan fried potatoes recipe will be an instant family favorite! It will remind you of your grandma's pan fried potatoes!

Steps:
- Heat the vegetable oil in a large skillet over medium heat. I used this cast iron skillet, but any skillet will do.
- Add the sliced potatoes to the skillet. Cover and cook for 10-15 until the potatoes are browned slightly around the edges and cooked halfway through.
- Season liberally with salt and pepper. Then gently stir in the onions. Cook uncovered for 8-10 minutes stirring frequently until the potatoes are tender and browned.
- Serve immediately and enjoy!

EASY FRIED POTATOES
This is my moms recipe that she uses, and now I make as well. It goes over well with the kids with ketchup, but I like them plain.

Steps:
- Put the butter in a pan (I use a stick free, the butter is for taste) and melt.
- Add potatoes, and turn over every few minutes until brown. Not all need to be brown, but make sure they are cooked through. Usually takes about 15 minutes.
- Add salt and pepper sometime during frying time, to taste.

SIMPLY FRIED POTATOES
An easy "fried like" potato recipe that's easy to assemble and doesn't soak up loads of cooking oil. Reminds me of old-style fried potatoes and onions. If you like cheddar cheese, shredded cheese may be added to the layering process. This will get a little crisp around the edges. If you don't care for crispy, cut back on cooking time checking with a fork to see if paotatoes are tender.

Steps:
- Wash potatoes & slice thin but do not peel.
- Peel onion &slice thin.
- Use 1/2 of the butter to grease a 3 quart casserole dish.
- Fill casserole with alternate layers of potatoes and onion and the optional cheese if desired.
- Sprinkle each layer with salt and pepper.
- The top layer should be potatoes.
- Dot remaining butter on top. Sprinkle with paprika.
- Cover and microwave on high 20 minutes.
