1 1/2 to 2 pounds potatoes (about 3 large potatoes), peeled and quartered
8 Tablespoons (1 stick) butter
1 medium onion, chopped (about 1 1/2 cups)
1-2 cups vegetables-diced carrots, corn, peas
1 1/2 lbs ground round beef
1/2 cup beef broth
1 teaspoon Worcestershire sauce
Salt, pepper, other seasonings of choice

Steps:

  • Boil the potatoes: Place the peeled and quartered potatoes in medium sized pot. Cover with at least an inch of cold water. Add a teaspoon of salt. Bring to a boil, reduce to a simmer, and cook until tender (about 20 minutes).
  • Preheat the oven: Preheat the oven to 400°F.

1 (8 ounce) package Simply Potatoes Traditional Mashed Potatoes
1 lb ground beef
32 ounces beef broth or 32 ounces stock
1 small yellow onion
1 carrot

Steps:

  • Peel and dice the carrot and onion into small pieces. When done, add to ground beef and cook on high until almost browned. Reduce to a simmer, and add beef broth/stock. Let simmer for an hour, until the liquid has reduced and thickened. Remove from heat, and let sit for 10 minutes. Preheat your oven to 350 degrees. Add Simply Potatoes Traditional Mashed Potatoes to the top of the beef mixture, and spread evenly. When fully covered, bake for approximately one half hour, until the potatoes have lightly browned.

2 lbs ground beef
1 (15 ounce) can peas and carrots
1 (15 ounce) can diced tomatoes with basil and oregano
1 (20 ounce) bag Simply Potatoes Traditional Mashed Potatoes
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 400 degrees.
  • In sauté pan brown ground beef until cooked through and no longer pink. Drain liquid off Peas and Carrots. Stir in Peas and Carrots and Tomatoes mix well. Pour into 2 qt baking dish. In microwavable dish pour mashed potatoes and microwave until slightly warm and pliable, about 3 minutes. Carefully spoon and smear mashed potatoes over beef mixture. Sprinkle with cheese. Bake in 400 degree oven for 20 minutes until potatoes are golden brown and cheese has melted.

1 lb lean ground beef (I use sirloin)
1/2 sweet onion (1/2 medium, diced about 1 cup)
10 3/4 ounces cream of onion soup (10 3/4oz can Undeliuted)
1 lb frozen white corn (white or yellow or a blend)
24 ounces Simply Potatoes Traditional Mashed Potatoes

Steps:

  • Preheat oven to 375.
  • Brown Ground Beef and Onion in a large pan until no longer pink, drain off any fat if necessary. Return to pan.
  • Add undeluited can of Cream of Onion Soup and mix well.
  • Pour the beef and onion mixture into a 2 - 2 1/2 quart casserole dish.
  • Add the 1 lb bag of frozen corn on top of the beef and onion mixture and level out.
  • Top with Mashed Potatoes and spread evenly over the corn (stir the potatoes first, they will be easier to spread).
  • Place in the preheated oven (uncovered) and bake for 40-50 minutes. The potatoes should be slightly browned. To make sure it is heated through, stick a knife in the center. The blade should be hot when you pull it out.

2 pounds ground beef
2 cans (12 ounces each) home-style beef gravy
2 cups frozen corn
2 cups frozen peas and carrots
2 teaspoons dried minced onion
ADDITIONAL INGREDIENTS (for each casserole):
2 to 3 cups mashed potatoes
2 tablespoons butter, melted
Paprika

Steps:

  • In a Dutch oven, cook beef over medium heat until no longer pink; drain. Add the gravy, vegetables and onion. Spoon half into a greased 2-qt. baking dish or four oven-safe 2-cup dishes. Top with mashed potatoes. Drizzle with butter and sprinkle with paprika. , Bake, uncovered, at 350° for 30-35 minutes or until heated through. Place the remaining beef mixture in a freezer container and freeze for up to 3 months. , To prepare frozen casserole: Thaw in the refrigerator; transfer to a greased 2-qt. baking dish. Top with the potatoes, butter and paprika; bake as directed.

This is no where near authentic, but as the title says, it is quick and easy. We all liked it, especially the kids, two of which, would hardly eat anything. This was great for one of those hurry-up meals. I got this from an old Betty Crocker cookbook. Prep time includes browning the meat.

2 tablespoons parsley flakes
2 cups cubed cooked lamb, beef or 2 cups veal
1/4 cup chopped onion
2 cups cooked vegetables (peas, carrots, or corn)
2 cups gravy (2 10 3/4 oz. cans of gravy can be used)

Steps:

  • Heat oven to 350 degrees.
  • Prepare instant mashed potatoes for 8 servings, as directed on package except-stir in parsley flakes; set aside.
  • In ungreased 3-quart casserole, stir together remaining ingredients.
  • Mound potatoes on meat mixture.
  • Bake uncovered 30 minutes or until potatoes brown slightly.

After my son came home telling me about his friends mom's Shepherd's Pie I set out to create a simple yet tasty alternative and this is what I came up with. We are a "meat & potatoes" kind of family and my kids love it!

1 (24 ounce) bag Simply Potatoes Traditional Mashed Potatoes
1 lb lean ground beef
2 cups mild cheddar cheese, grated
2 (8 ounce) cans beef consomme or 2 (8 ounce) cans beef broth
2 tablespoons self rising flour

Steps:

  • Brown ground beef over medium heat and season as desired. Drain, return to pan at medium high heat and add 2 tablespoons flour. Stir until you no longer see the flour. Add 2 cans beef consume and bring to a boil. Reduce heat to medium and simmer 5 minutes to thicken, stirring often.
  • Pour beef mixture into the bottom of a 9x13 pan and top with shredded cheese. Spread Simply Potatoes Mashed Potatoes over cheese and bake at 350 degrees for 25 minutes or until bubbly and heated through.
  • Option: Top with Pillsbury Cresent Rolls before baking for a more traditional Shepherd's Pie.

2 -3 lbs ground beef (85% lean preferred)
1 tablespoon Worcestershire sauce
16 ounces frozen mixed vegetables
24 ounces Simply Potatoes Traditional Mashed Potatoes
1 tablespoon butter

Steps:

  • Saute ground beef until fully cooked. Cook frozen mixed vegetables as directed. Mix together with butter and Worcestershire sauce. Place in pie plate (glass or foil) and top with Simply Potatoes Traditional Mashed potatoes.
  • Place in oven and cook at 375F for 20 - 25 minutes until heated through and potatoes are lightly browned.
  • Serve with a salad for a complete meal.

1 lb ground beef
1 (8 ounce) package cheese
1 (16 ounce) bag mixed vegetables
1 (11 ounce) can portabella mushrooms

Steps:

  • Preheat oven to 350 degrees.
  • Brown ground beef. Stir in mushrooms(leave liquid in mixture for later). Set aside.
  • Cook vegetables(leave liquid for later).
  • In a 2 quart casserole dish, layer vegetables first.
  • Next spread on uncooked potatoes.

  • Cook for 40 minutes.

One of my favs growing up and my mom made it so easy! * ! season the onions and carrots with salt pepper and a little ginger grated in, enough to enhance the flavor not overpower.

1 medium onion, finely sliced
4 small carrots, julienne style
1 1/8 cups beef gravy
1 (4 ounce) package Simply Potatoes Traditional Mashed Potatoes

  • Sautee oniion and carrot in a skillet with EVO until translucent, stir in ground beef to brown, salt, pepper to taste, once meat has started to brown add beef gravy, (I use the left over gravy from pot roast) but you can use any prepared gravy you like. Bring that to a simmer. While that is simmering prepare the Simply Potatoes, Tradition Mashed Potatoes. according to the package directions.
  • Now preheat oven to 350; cover bottom of baking dish with ground beef mixture, spoon mashed potatoes on top and bake for 30 mins or until mashed potatoes are browned on edges. ENJOY.
