SMOKY SPANISH MEATBALLS RECIPE
This beautiful dish comes together very quickly an in only one pot. Kids will love dipping their meatballs in the fragrant and smokey tomato sauce and then mopping up any leftovers with some fresh crusty bread.

Steps:
- Soak the breadcrumbs in milk for about 5 minutes and then squeeze out any excess liquid. Pop breadcrumbs into a bowl with the beef, garlic, egg yolk, and smoked paprika. Season with salt and pepper and use your hands to knead the mixture until it is smooth.
- Form the meat mixture into 12 balls and play on a tray. Cover with cling wrap and pop in the fridge for 10 minutes to rest.
- Heat the oil in a large frying pan over med heat. Cook the meatballs, turning, for 4 minutes or until browned. Use a slotted spoon to remove the meatballs and transfer to a plate. Reserve the oil in the pan for the tomato sauce.
- Return reserved pan with oil to medium heat. Add the little splash of extra oil, onion, garlic, and bay leaf and cook for about 4 mins, or until the onion is softened.
- Add in the paprika and cook for a further minute until fragrant.
- Stir in the tomatoes and return the meatballs to the pan. Reduce heat to low and cook, stirring occasionally, for 20 minutes or until the sauce has thickened and the meatballs are cooked through.
- Transfer to a bowl and serve immediately (see article for serving suggestions).

- Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1/2 cup cooking water, then drain.
- Meanwhile, mix the beef, 1/4 cup parmesan, the breadcrumbs, egg, 1/2 cup basil, the minced garlic and 1/2 teaspoon salt in a large bowl with your hands until just combined. Form into 3/4-inch meatballs (about 20). Grate the tomatoes into a medium bowl; discard the skins.
- Heat a large nonstick skillet over medium heat. Add the olive oil, then the meatballs. Cook, turning, until browned on all sides, 2 to 3 minutes. Add the sliced garlic and cook until just golden, about 1 minute. Gradually add the vodka, then the grated tomatoes and cream. Bring to a simmer and cook until the sauce thickens and the meatballs are cooked through, 8 to 10 minutes. Season with 1/2 teaspoon salt and a few grinds of pepper.
- Add the pasta and the remaining 1/4 cup basil to the skillet; toss, adding the reserved cooking water as needed to loosen. Remove from the heat and add the remaining 1/2 cup parmesan; toss.

- Cook the pasta according to pack instructions. Meanwhile, squeeze the sausages from their skins, then roughly break the meat into 12 pieces. Roll into balls.
- Heat the oil in a large frying pan, add the sausage balls, then cook over a medium heat until golden, about 5 mins. Pile the spinach on top of the sausage balls and cook, stirring frequently, for 2-3 mins until completely wilted. - Mix beef, panko, 1/4 cup parsley, egg white, salt, and black pepper in a large bowl until combined. Form mixture into 12 meatballs.
- Heat vegetable oil in a large skillet; pan-fry meatballs in hot oil until browned on all sides, about 7 to 10 minutes. Remove meatballs from heat.
- Heat olive oil in a 6-quart Dutch oven or a large skillet over medium heat. Cook and stir mushrooms in hot oil until tender, about 5 minutes. - In a large bowl add bread crumbs, milk and mix until well combined.
- Mix in eggs and 1/2 cup Romano cheese and mix well.
- Add turkey and gently combine, being careful not to overwork the meat.
- Season with salt and pepper.
- Shape into golf-size balls.
- In a large skillet heat the oil over medium heat.
- When almost smoking, add meatballs and without moving or turning the meat allow it to brown for about 3 minutes.
- Turn meatballs and brown other side.
- Continue to cook until all sides are golden brown.
- Add tomato sauce and bring to a boil.
- Lower heat and allow meatballs to simmer for 5 minutes.
- Turn off heat and keep warm on stove, be careful not to overhandle the meatballs since they are soft and fragile.
- In a large pot, bring 6 quarts of salted water to boil.
- Add pasta and cook until al dente, about 8 minutes.
- Drain pasta, do not rinse pasta with water.
