Steps:
- Rinse Swiss chard well. Trim tough ends; slice stalks about 3/4 inch thick. Slice leaves about 1 inch thick.
- In a Dutch oven over medium heat, warm olive oil. Cook garlic until fragrant, 1 to 2 minutes.
- Stir in stalks; cook, stirring, until slightly soft, 5 to 6 minutes. Add half the leaves; sprinkle with 1 teaspoon sugar. Cover; cook until wilted, about 4 minutes. Add remaining leaves; sprinkle with another teaspoon sugar. Cover; cook, tossing occasionally, until leaves are tender, 8 to 10 minutes.
- Uncover; cook until liquid has evaporated, about 2 minutes. Stir in red-wine vinegar; season with coarse salt and ground pepper.

SIMPLE SAUTE FOR CHARD

- Wash chard by gently submersing in cool water several times.
- Remove the stems from leaves and chop stems into 1 inch pieces. Set aside. Stack the washed leaves and roll them in to a long scroll. Using a sharp knife, cut the scroll in quarters.
- Heat a skillet or heavy dutch oven over medium-high heat, add the olive oil and chopped stems and saute for 5 minutes.
- Add the garlic and saute for an additional 15-20 seconds.
- Add the wet chard leaves, one handful at a time, stirring after each addition.
- After all the leaves have been added, immediately cover the pan with a tight fitting lid and continue cooking over high heat for about 2 or 3 minutes. Uncover and cook just until most of the liquid has evaporated (another 1 minute or so).
- Squeeze a couple of wedges of fresh lemon over prepared chard, season to taste with salt and pepper and serve immediately.

- Bring a very large pot of water to a boil and add 1 tablespoon of salt. If the stems of the chard are tough, remove them entirely from the leaves and discard. (If the stems are tender, simply cut the stems off at the base of the leaves and discard.) Wash the leaves thoroughly. Immerse the chard in the boiling water and cook for 3 minutes exactly from the moment you get all the leaves in the pot. Drain immediately but don¿t squeeze out the liquid.
- Warm 3 tablespoons of olive oil in a large (12-inch) saute pan. Add the sliced garlic and cook over medium heat for 30 seconds. Add the chard, sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper, and saute for 3 minutes, tossing frequently with tongs.
- Meanwhile, toast or grill 8 slices of bread. When they're nicely browned, rub one side of each slice of bread with a cut side of the halved garlic. Place 2 slices of toasted bread on each plate, garlic side up, and use tongs to distribute the chard onto the toasts. Sprinkle each serving with lemon zest, a squeeze of lemon juice, grated Parmesan cheese, and some fleur de sel. Drizzle the bruschetta with olive oil and serve warm. The liquid from the greens will be absorbed into the bread.

- Place a steamer over a pot of boiling water. Cut Swiss chard crosswise into 3/4-inch pieces, keeping greens and stems separate. Place stems in steamer, and steam for 5 minutes. Add greens, and steam for 3 minutes more. Drain well.

- Cut out the tough, triangular inner core of each leaf of swiss chard and cut into 1/4- to 1/2-inch slices.
- Rinse the leaves and stems separately and reserve.
- In a large nonstick skillet, heat 1 tablespoon olive oil over medium heat.
- Add the garlic and cook until it turns golden brown; don't let the garlic get too brown or it will be bitter.
- Remove the garlic and set aside.
- Reserve the oil in the skillet.
- Add the remaining 1 tablespoon olive oil to the skillet and the onions.
- Saute over medium heat until tender, about 5 minutes.
- Add the chopped stems from the swiss chard and continue to cook over medium heat, stirring frequently, until the stems are very tender, 15 to 20 minutes.
- Add the swiss chard leaves, season with salt and pepper and cover.
- Cook 10 minutes, stirring often; you may need to add 1/2 cup chicken stock or water to keep the leaves moist.
- Transfer to a serving bowl and top with the crispy garlic.
