CREAMY POTATO SOUP RECIPE

Creamy Potato Soup Recipe image

This Easy Potato Soup recipe is the real deal. Shared with me from the granddaughter of an Idaho potato farmer, this homemade soup is creamy, thick, and luxurious, even without the optional cheesy garnish. It is truly the best potato soup I've ever had. And it only takes about 30 minutes to make!

Provided by Karen

Categories     Main Course

Time 30m

Number Of Ingredients 15

4 cups diced Russet potatoes (2 large potatoes, about 2 pounds)
1 cup diced carrots (about 2 large )
1 clove garlic (mashed and diced)
3 cups water
1 tablespoon Better Than Bouillon Chicken Base (chicken or turkey flavor is great)
1/4 cup fresh chopped parsley (or 1 tablespoon dried parsley)
1 teaspoon kosher salt
1/2 cup butter (one stick)
1/2 cup all purpose flour
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
4 cups milk (whole milk is best)
cheddar cheese
chopped green onions
chopped parsley

Steps:

  • Boil the veggies. Peel the potatoes (2 large potatoes, about 2 lbs) and dice them. I like a fairly small dice, about 1/2 inch. Place in a stock pot or 3 quart pot. If you have not quite 4 cups of potatoes, or more like 5 cups, don't sweat it that's fine.
  • Peel the carrots and dice about the same size as the potatoes. Add to the pot.
  • Smash and mince 1 clove of garlic and add to the pot.
  • Add 3 cups of water to the potatoes and carrots. The water should be just barely covering the vegetables, so add a little more or less to make sure they are just barely covered. (We are not draining these potatoes, this water will be part of the soup.)
  • Add a heaping tablespoon of Better Than Bouillon Base. The Roasted Chicken flavor is great, but I also love the Turkey base, it has really rich flavor. If you don't have Better than Bouillon, you can use a couple teaspoons of bouillon granules or cubes. Those are much saltier than the paste so be careful.
  • Chop about 1/4 cup fresh parsley, or use 1 tablespoon dried parsley. Add it to the pot.
  • Add 1 teaspoon kosher salt. Bring the mixture to a boil over high heat. Once boiling, reduce the heat to medium to keep it at a steady simmer. Vent the lid (tilt it so that steam can escape.) Simmer for about 20 minutes, until the potatoes and carrots are very tender. You should be able to smash one with a fork easily. Remove from heat.
  • Use a potato masher and roughly mash the mixture to your desired texture. I like a velvety soup with some chunks. You can leave it very chunky by not mashing at all, or if you want an ultra smooth soup you can use an immersion blender.
  • Make the white sauce (bechamel). Meanwhile, in a 2 quart pot or larger, melt 1/2 cup butter over medium heat. Once it is melted, add 1/2 cup flour and use a whisk to stir it together into a paste. Add 1/2 teaspoon kosher salt and 1/2 teaspoon pepper. Cook this mixture for 1-3 minutes, stirring constantly.
  • Slowly add the 4 cups of milk, 1 cup at a time. Use the whisk to incorporate the milk into the roux (roux=butter/flour mixture) every time you add more. See photos. It should take a few minutes to add all the milk.* If you dump it in all at once, you will have flour chunks in your soup. Don't be like that.
  • Once all the milk is added, keep stirring often so the bottom doesn't scorch. Your heat should still be on medium. Wait until the mixture has come to a boil (consistent bubbles rising from the center) and then let boil for 1 minute, stirring. Remove from heat.
  • Pour the white sauce into the pot with the potatoes, using a spatula to scrape all that goodness in. Stir the mixture together.
  • Serve warm and garnish with extra chopped parsley, shredded cheddar cheese, and chopped green onions.
  • Store leftovers in the fridge for up to 5 days. Don't freeze this soup! The potatoes absorb tons of moisture, making the white sauce separate, and then it gets grainy on you. No thanks. Time to invite a friend over for soup and stories. I mean shouldn't that be a thing anyway?

SAUCY POTATOES

Saucy Potatoes image

Potatoes with a rich, flavoursome tomato-based sauce. Lots of nutrients and very tasty. This is my own recipe. The quantity below is enough to serve 2 as a main meal, or 4 as an accompaniment to steak, fish, a flat mushroom topped with cheese, or whatever you like.

Provided by elmsyrup

Categories     Potato

Time 25m

Yield 2-4 serving(s)

Number Of Ingredients 5

400 g chopped tomatoes
10 small new potatoes or 10 small baby potatoes
2 medium onions
250 g fresh spinach or 150 g frozen spinach
2 garlic cloves (minced) or 2 teaspoons garlic puree

Steps:

  • Wash the potatoes and put them into a saucepan with boiling water. Boil them until tender, about 20 minutes.
  • Meanwhile peel and finely chop the onions, and sautée them in a little oil on a medium heat until soft. This should take about 10 minutes.
  • Once the onions are soft add the chopped tomatoes and garlic to the pan, and the frozen spinach if using. Simmer these together, stirring frequently, until the spinach is thawed and heated through, and the sauce has thickened.
  • Once the potatoes are tender and the sauce has thickened, if you are using fresh spinach you should add it to the sauce now and quickly stir it in to wilt it.
  • Drain the potatoes and add them to the sauce, stirring to coat them evenly. Now serve.

  • Take the peeled potatoes and cut them to 1/4 inch thick rounds. Pay attention that all potatoes are cut on the same diagonal so the potatoes are all similar in shape. (Either cut them as coins or across more diagonally -- Both are pictured in the post just so all potatoes are cut the same.)
  • Place potatoes into a large stockpot. Then pour heavy cream until they are just covered. Add salt pepper and tarragon over the top. Use a large stock pot so they don't boil over, using too small of a pan will boil over and create a big mess on your stove.
  • Turn burner onto high and cook for 15 minutes. Turn off heat, remove pan from burner. The potatoes will not be all the way cooked at this point, they will continue to cook when they go into the oven.

  • Béchamel Sauce. Made from flour, butter, and milk, a simple béchamel sauce can carry you far as a home cook. In fact, it’s considered one of the five mother sauces, meaning you can create a number of other popular sauces by using béchamel as a base.
  • BBQ Sauce. If baseball is America’s favorite pastime, barbecue is its favorite foodie delight. Originally developed in the American South, barbecue sauce has become something of a cultural symbol, with various regions sporting their own signature recipes.
  • Rémoulade. At its most basic, a rémoulade is a mayonnaise or aioli-based sauce that’s often served for dipping with meat, fries, or seafood. This rémoulade is Louisiana’s answer to the classic recipe, adding cornichons, a hearty mustard, and hot sauce.
  • Chimichurri. The Argentines love their barbecue, so it’s only natural they created a sauce to accompany it. Chimichurri is a classic Argentinian sauce made with oregano, vinegar, and heaps of parsley.
  • Satay Sauce. Equally as delicious in desserts as they are in savory dishes, peanuts are a real gift. The Thai pair their classic peanut satay sauce with skewers of juicy meat and fresh, delicate spring rolls, alike.
  • Caramel Sauce. Caramel sauce is incredibly simple to make—after all, it's just a combination of sugar, flour, butter, and milk—but the way it transforms desserts makes it a culinary unicorn.
  • Bolognese Sauce. Created in Bologna, Italy (hence its name), Bolognese is a meat-based sauce with tomatoes simmered in. Traditionally, it’s layered overtop a flat pasta noodle, like tagliatelle, but it’s also tempting to eat it straight from a spoon.
  • Indian chutney. Chutney originated in India, where each region uses its own characteristic blend of fruits, vegetables, spices, and herbs to serve with a variety of dishes.
  • Chermoula. The word “chermoula” rolls off the tongue just as well as its flavor plays on it. This Moroccan creation centers around cilantro and saffron, and is traditionally used to marinate fish.
  • Mexican Chocolate Sauce. This Mexican chocolate sauce adds cinnamon and coffee liqueur to the classic recipe, making churros and chocolate cake even easier to enjoy (though, we’re pretty sure you could spread it on sandpaper and it would still taste good).

  • Magic Summer Sauce. Equal parts creamy and punchy, this bold-flavored sauce is for summer and beyond. It’s perfect for drizzling over everything from meat pulled from the grill and roasted vegetables, to grain bowls and just about anything else.
  • 3-Ingredient Roasted Lemon Sauce. Rich and sweet, with a faint bitter edge, this is the sauce you’ll want to drizzle over grilled chicken breast, pork, and salmon.
  • Super-Quick 3-Ingredient Pizza Sauce. Start with some good-quality tomatoes, add a splash of vinegar and some garlic, and you’ll instantly see why making your own pizza sauce totally beats the store-bought stuff.
  • 3-Ingredient Green Tahini Sauce. This is my absolute favorite sauce of all time! Use any herbs you have handy and the result is a bright, fresh sauce with nutty undertones that also doubles as a dip.
  • 3-Ingredient Roasted Tomatillo Sauce. I’m convinced this sauce has the power to make anyone fall in love with tomatillos. This sauce has a sweet smokiness that makes it a good match for just about everything you pull off the grill, from chicken and pork, to fish and vegetables.
  • Whatever-You-Have Pesto. This super-simple pesto starts with whatever green things you have in the fridge, be it wilted herbs or leftovers leafy greens, like spinach, arugula, or kale.
  • Brown Butter Vinaigrette Sauce. You just need three ingredients to pull off a bold, punchy sauce you’ll want to eat with everything. If you have some fresh parsley hanging out in the fridge, it’s a fun extra to toss in.
  • 3-Ingredient Honey-Lime Sauce. When you want a sauce that doubles as a marinade, this one really delivers. It’s just the right balance of sweet, salty, and sour, and also works well with stir-fries.
  • 3-Ingredient Buttery White Wine Pasta Sauce. Take three basic ingredients (you get pasta water and salt as freebies), plus some comfort-food inspiration, and you’ve got a grown-up version of buttered noodles that’s light with just a hint of indulgence.
  • 3-Ingredient Maple-Mustard Onion Sauce. The next time you’re ready to call cheese and bread (or a sleeve of crackers) dinner, this sweet and tangy sauce is the one thing you’ll want to have on hand.

SAUCY CURRY POTATOES AND CHICKPEAS - BETTERFOODGURU RECIPES
We start this Saucy Curry Potatoes and Chickpeas differently than most of my Indian inspired curry recipes. First we begin by frying the potatoes. We do this because potatoes can take some time to cook and we want them to brown a bit before cooking until fork tender in the liquid.
