1 cup uncooked elbow macaroni
1 stalk celery, chopped
1 (2.25 ounce) can chopped green olives
¼ cup mayonnaise
¼ cup sour cream
2 tablespoons milk
1 (10 ounce) can chicken chunks, drained
1 (1 ounce) package dry Ranch-style dressing mix
2 teaspoons paprika

Steps:

  • Bring a pot of water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Drain, and pat dry.
  • In a medium bowl, mix together the celery, olives, mayonnaise, sour cream, milk, chicken and Ranch dressing mix. Stir in macaroni until well blended. Refrigerate for 24 hours. Stir, and sprinkle paprika over the top before serving.

½ large red onion, chopped
1 cucumber - peeled, seeded, and diced
2 cloves garlic, minced
1 cup ranch dressing
1 pinch ground black pepper to taste

Steps:

  • Place chicken in a saucepan; add water to cover. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until chicken is tender and no longer pink in the center, about 15 minutes. Remove chicken, let cool, and shred or cut into bite size pieces.
  • Combine the chicken, red onion, cucumber, garlic, and ranch dressing in a large bowl. Season with pepper to taste.

It's too gorgeous out to spend much time in the kithen, but I was pretty impressed how a package of Kraft Classic Ranch with Bacon Pasta Salad can be doctored up to taste homemade. I threw in an extra tomato because it tastes fresher and some extra chives. You could probably top this with nuts or cheese or olives...whatever your heart desires. I think this would make an easy potluck dish or a whoops we have unexpected company and now what are we going to feed them last minute meal. Recipe from Kraft Make it Simple Recipe Collection.

A really good macaroni salad made with either cooked chicken, turkey, (or) smoked turkey, red bell peppers, celery, onions, peas, colby cheese, salad dressing, and Kraft's Creamy Cucumber Ranch Salad Dressing. Note: DO NOT SUBSTITUTE mayonnaise for the salad dressing in this recipe. The salad dressing gives this salad a bit of a kick, as my daughter would say. This salad is a favorite of my mother-in-law's, and I consider that to be a compliment!

2 -3 cups turkey or 2 -3 cups smoked turkey
2 cups macaroni, cooked
3/4 cup chopped red bell pepper
2/3 cup thinly sliced celery
2 -3 tablespoons finely chopped onions
8 ounces frozen peas, thawed
8 ounces colby cheese, cubed
1 cup salad dressing
1 1/2 cups Kraft creamy cucumber ranch salad dressing
season with salt and black pepper

Steps:

  • In a very large bowl, add all the ingredients.
  • Chill several hours before serving.
  • Note: When preparing this salad, I added 3 cups of chicken or turkey, since I like more meat in mine. You can also substitute a mild cheddar cheese for the colby. I think Kraft's Creamy Cucumber Salad Dressing, makes this macaroni salad taste best, but you can use a regular ranch salad dressing.

Now I do not like Ranch Salad dressing however I absolutely love the Hidden Valley Ranch seasoning packet. I have used it on potatoes, on chicken and many other ways. I decided why not add it to a light pasta salad. So my recipe was made, eaten and enjoyed. The best thing besides the taste of this Chicken Pasta Salad is how versatile you can make it. Do not like spinach, omit, substitute...no problem. Want to use beef or tofu...no problem. It is easy to make it your own. I know your family will love it too.

2 boneless skinless chicken breasts, cut into 1 inch cubes
2 tablespoons lemon zest
2 tablespoons lemon juice
4 teaspoons salt, divided
2 teaspoons black pepper, divided
1 teaspoon crushed red pepper flakes
1 (1 ounce) packet Hidden Valley® Original Ranch® Dressing and Seasoning Mix, divided
2 cups fresh spinach
2 cups cherry tomatoes, cut into halves
1/2 cup scallion, thinly sliced
1 cup mozzarella cheese cubes
1 1/2 cups whole wheat penne, uncooked
1/4 cup parmesan cheese, grated
2 tablespoons dried Italian seasoning
3/4 cup extra virgin olive oil, divided
1 tablespoon Dijon mustard
1/2 cup balsamic vinegar

Steps:

  • In quart size sandwich baggie add lemon zest , 2 tsp salt,1 tsp black pepper, crushed red pepper and ½ packet Hidden Valley seasoning mix.
  • Toss Chicken in 2 tablespoons lemon juice. Shake to drain lightly.
  • In 3 to 4 batches shake chicken breast cubes to coat all sides. Remove and place on a plate. After all chicken has been coated discard mixture and baggie.
  • Heat 2 tablespoons olive oil in large sauté pan. Sauté chicken until golden brown and thoroughly cooked.
  • While chicken cooks, prepare penne pasta according to package directions.
  • Remove chicken from pan and place in large mixing bowl.
  • Pour spinach over chicken and cover to allow spinach to wilt.
  • Drain pasta well and pour on top of chicken and spinach. Toss well. Allow to cool 5 minutes.
  • In small mixing bowl whisk remaining olive oil, Italian seasoning, remaining Hidden Valley Ranch seasoning mix, Dijon mustard and Balsamic Vinegar until well blended. Set aside.
  • To chicken mixture add cherry tomato halves, scallion slices and Mozzarella Cheese cubes. Toss well.
  • Pour dressing over pasta mixture.
  • Sprinkle with remaining salt and black pepper. Toss Well.
  • Sprinkle with grated Parmesan Cheese.
  • Serves well warm or cold.

3/4 cup steak sauce
1 (12 ounce) package fusilli
2 chicken bouillon cubes
1 vidalia onion, diced
2 avocados, peeled, pitted and diced
1 cup halved cherry tomatoes
1 cup ranch salad dressing (I used Hidden Valley Ranch)

Steps:

  • Preheat an outdoor grill for high heat. Place breasts into a glass dish and marinate in steak sauce for 30 minutes to 1 hour.
  • Grill chicken until no longer pink inside and the juices run clear. Remove from grill and chop into bite-size pieces.
  • To a large pot of boiling water, add bouillon cubes and pasta. Cook pasta until al dente. Drain, and rinse under cold water.
  • In a large bowl, combine chicken, pasta, onion, avocados and tomatoes.
  • Mix in salad dressing, cover and refrigerate until chilled.
