Steps:
- Set a large strainer or colander over a bowl and line it with a clean kitchen towel. Using a box grater, grate the potatoes and onion into the strainer. Using the towel, squeeze as much liquid from the potatoes and onion as possible. Transfer the mixture to another bowl and stir in the flour, eggs, chives, baking powder, salt and pepper.
- Coat the bottom of an 8-inch nonstick skillet with oil and add a couple of tablespoons of butter. Heat over medium heat until the butter foam subsides. Spoon about 1 3/4 cups of the potato mixture into the pan and press to fill the circumference. Fry over medium heat, flipping once, until the pancake is golden and crisp, 3 to 4 minutes per side. Drain the pancake on a paper towel-lined baking sheet. Repeat with the remaining batter.

Steps:
- If you've got potatoes not mash, cook them in boiling water until tender. Drain well and press through a potato ricer or mash. Weigh out 250g and cool.
- Sieve the flour and baking powder onto cooled mash. Whisk eggs and milk together and add to the potato mix with the chives. Whisk the batter until smooth.
- Heat a large non-stick frying pan over a medium heat. Add ½ tsp sunflower oil and a dot of butter. When the fat is hot, start to cook the pancakes. Add 1 tbsp of batter for each pancake and cook 4 at a time. Cook for about 1 min until the underside is golden brown and small bubbles appear.
- Flip the pancakes and cook until golden. Remove from the pan and keep warm while you cook the remaining pancakes in the same way, adding a tiny bit of oil and butter to the pan as and when needed. Serve the pancakes in stacks with creamy scrambled egg and crisp rashers of streaky bacon.

EASY POTATO PANCAKES
For some reason I could never make potato pancakes from leftover mashed potatoes. But when I tried this recipe in 2007 Taste of Home Cookbook, that was sent to them from Marlene Harguth of Maynard Minnesota I knew I had found a winner. This recipe was made as written, but I think it would be really good with some finely chopped onion and some ground black pepper. I recently made this again and added what was optional onion, now the onion isn't optional. It's much better with the onion. Submitted to "ZAAR" on February 9th, 2009.

This is a traditional potato pancake recipe, and is a wonderful comfort food. Serve with applesauce and sour cream for a light dinner, or with roast chicken for a hearty winter meal. You can use more flour if the mixture seems too wet.

POTATO PANCAKES
Potatis Platter This is my Aunt Eva's recipe. My kids love these with maple syrup and my Dad asked for them all the time. They are usually a little wet after mixing which makes it easy to "plop" them on a hot griddle and pat them out a bit. Filling and delicious! If you find you are having problems with soggy pancakes, you might want to put your grated taters in a cloth and squeeze as much of the water out of them as you can. You can also soak the grate in cold water, then wring them out. For OAMC: brown the patties well but don't cook them all the way through. Flash freeze individually and keep in a ziplock bag in the freezer. They will keep for quite a long time. To use: thaw desired number of patties and reheat them in a hot frying pan with a bit of oil or on a greased griddle.

Steps:
- Combine the grated onion and potato in a kitchen towel and wring out as much liquid as you can. Pour the mixture into a mixing bowl. Dust with the flour and mix to disperse it. Add the egg, lemon zest, chopped dill, salt and pepper and mix until well combined.
- Heat the olive oil and butter in a large nonstick saute pan over medium-high heat. Once the bubbles from the butter subside, spoon 3 heaping tablespoons of the potato mixture into the pan. Repeat, making 4 to 8 pancakes. Cook the pancakes about 4 minutes on each side, assuring that both sides are well browned and the potato is cooked through. Reduce the heat of the pan if the potato cakes are browning too quickly in order to make sure the inside is cooked completely.
- Remove the cakes to a paper-towel-lined plate as they finish and season with salt while hot.
- (You can cover them with foil and keep in a 200 degrees F-oven to stay warm until ready to serve.)
- To serve, transfer the potato pancakes to a platter and dollop each one with the creme fraiche. Top with a sprig of dill.

Make sure oil is hot by placing a tiny peice of potato in the pan. If it sizzles, it's ready to go. Toss the potato mixture together one more time to make sure all the ingredients are well combined and any egg that settled to the bottom in reincorporated. Spoon potato mixture evenly in the pan then press down with the back of a spatula. Turn heat down to medium and cook until the edges of the pancake look golden brown, about 5 to 8 minutes

- Peel your potatoes and fill a large bowl approximately 1/3 full with cold water. Grate the potatoes into the bowl with the water in it. When finished, strain the potatoes and rinse off the extra starch. Use your hand to apply slight pressure to the potatoes to press out the remaining water. This part is important!
- After rinsing your grating bowl and patting it dry, place the grated potatoes back in the bowl to be seasoned. Add your dry mix and incorporate well with your hands or a wooden spoon. Because the potatoes will oxidize quickly (read: turn brown), keep this bowl covered with a large plate or pot lid when you’re not using it.
- Add 1 Tbsp oil to your fry pan (we like to use our big cast iron for this) and turn to a medium high heat while spreading the oil around with your spatula. Grab about a ¼ cup of mix and form a light ball in your hand. Add about three of these (to fit) your hot frying pan and press down on them lightly with your spatula to flatten them slightly (adjust the sides by pushing any stray taters back into the pancake). After about 4 - 5 minutes, GENTLY pull your pancake from the pan by starting at the outer edges and loosening it with your spatula. Flip and cook for another 3½ - 5 minutes.
