FRESH TOMATO PASTA TOSS
My parents went on vacation last year just as their tomato crop - and mine - was ready to harvest. After freezing as many tomatoes as I could possibly want or use, I had to come up with new ideas for using tomatoes. My husband loved this creation! It really is a great way to use tomatoes.

- To remove peels from tomatoes, fill a large saucepan with water and bring to a boil. Place tomatoes, one at a time, in boiling water for 30 seconds. Immediately plunge in ice water. Peel skins with a sharp paring knife and discard. Chop pulp; set aside. , Cook pasta according to package directions. In a large skillet, cook garlic in oil over medium heat for 1 minute or until tender. Add the parsley, basil, oregano, salt, sugar, pepper and reserved tomato pulp. Bring to a boil; reduce heat. Add cream; heat through. , Drain pasta and transfer to a serving bowl. Pour tomato sauce over pasta; toss to coat. Sprinkle with cheese.

FIVE INGREDIENT PASTA TOSS
Pasta is tossed with white beans, roasted tomatoes, fresh basil, and a garlic infused olive oil. Serve with crusty bread to soak up the sauce and any leftover garlic olive oil. This isn't a hot pasta dish so it's perfect for summer.

- Combine the olive oil and garlic in a small bowl. Set aside.
- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the bow tie pasta and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 12 minutes. Drain well in a colander set in the sink.
- Place the pasta, beans, tomatoes, basil, and 2 tablespoons of the garlic olive oil in a large bowl; toss gently until combined. Serve the remaining olive oil at the table to drizzle over individual servings.

I make this to cut down on several steps for simple pasta dishes. I've done it with all kinds of meat and veggies tossed in. Use whatever you feel like.

- Cook pasta to desired doneness.While it's cooking mix all the ingredients, except the cheese, in a large mixing bowl.When pasta is done, drain and add to mixing bowl, toss to coat, add cheese and toss until mixed.While the pasta is cooking, I simply saute whatever I feel like topping the pasta with (chicken, shrimp, veggies, etc.) in a little chile oil. I use whatever seasonings I feel like, and always deglaze with white wine at the end.Serve pasta topped with whatever you made in it's own pan juices.

This recipe is easy and fast, with ingredients that we almost always have on hand. Canned tomatoes can be substituted for the fresh tomatoes. We serve this with warm bread and salad. It tastes great!

- Preheat an oven to 400ºF.
- Place a large pot of salted water over high heat to boil.
- Scatter the tomatoes onto a baking sheet and drizzle with about 2 tablespoons olive oil and some salt and pepper.
- Toss lightly to coat and roast them in the hot oven until they burst open and are tender, 12-15 minutes.
- Place the bacon on a broiler pan and transfer to the oven as well.
- Cook until crispy, about 15 minutes.
- While the tomatoes and bacon are in the oven, drop the pasta in the boiling water and cook to al dente according to package directions.
- When the pasta is ready, reserve a large mug of the starchy cooking water and then drain the pasta and return it to the pot it was cooked inches
- While the pasta is cooking, season chicken pieces with salt and ground black pepper.
- Heat a large skillet with one turn of the pan of olive oil, add the chicken and sauté until golden brown and cooked through, about 6 minutes.
- While the chicken is cooking, scoop the avocado flesh into a small bowl and squeeze the juice of the lemon over it, tossing to coat.
- When the chicken is finished cooking, add garlic to the pan, cook for 1 minute, then sprinkle in a few dashes of hot sauce and toss to coat.
- In a large serving bowl, mash cooked tomatoes together with scallions, add the pasta water and pasta.
- Top with chicken, crumble the cooked bacon over it, and toss with the avocado, blue cheese, basil and parsley.

- Meanwhile, chop onion and slice carrots.
- Lightly spray a stir-fry skillet with oil.
