2 russet potatoes, cut in 1/2 lengthwise, halves cut lengthwise into fourths to make 16 big, fat wedges
1/4 cup extra-virgin olive oil
Kosher salt
2 tablespoons chopped parsley leaves
1/4 cup freshly grated Parmigiano-Reggiano

Steps:

  • Preheat the oven to 425 degrees F.
  • Preheat a baking sheet in the hot oven for at least 5 minutes.
  • While the baking sheet is heating, toss the potatoes with the olive oil and 3/4 teaspoon salt in a large bowl. Then dump the potatoes out onto a baking sheet, spreading to a single layer. Roast for 30 to 35 minutes, shaking the pan every now and then, until the potatoes are cooked through, brown and crispy. Toss the fries in a big bowl with the parsley and cheese.

  • Preheat the oven to 450 degrees F and place 2 baking sheets in the oven to preheat.
  • Put the potatoes into a large bowl and add the oil, salt, garlic powder, paprika and nutmeg. Toss gently to coat and carefully transfer to preheated pans. Place in the oven for 20 minutes, remove and, using a spatula, flip the fries. Return to the oven for an additional 10 to 15 minutes, or until the fries are brown and crispy on both sides.   • Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
  • Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.

8 yukon gold potatoes
1 -2 tablespoon extra virgin olive oil (use a good quality - I use Mastero)
salt
Pam cooking spray

Steps:

  • Wash potatoes and cut them into semi-thin strips.
  • Place strips in a bowl and add cool water to cover the potatoes.
  • Wash out some of the"starch" and then drain the potatoes well.
  • Mix in the olive oil and sprinkle with salt.
  • Mix all of the potatoes well so that they all get coated evenly.
  • Spray a cookie sheet with PAM and then place the potatoes on top.
  • Cook at 350F for approximately 20-25 minutes (more if you want them crunchy and brown) Serve and enjoy!

1 (1 1/4 ounce) package onion soup mix
3 1/2 tablespoons soy sauce
3 tablespoons oil
1/2 red bell pepper, chopped
1/2 green bell pepper, chopped
1 green onion, chopped
0.5 (8 ounce) can mushrooms, chopped

Steps:

  • Preheat oven to 350°F.
  • While oven is heating, combine all ingredients in a medium-sized casserole dish.
  • Stir thoroughly to combine.
  • Place on middle rack in oven, and cook uncovered for 50 minutes to 1 hour, or until rice is cooked and all water is absorbed.

3 russet potatoes, peeled, each potato cut lengthwise into 10 to 12 evenly sized wedges (about 8 ounces each)
5 tablespoons vegetable oil (i use enoya)
salt and pepper

Steps:

  • Adjust oven rack to lowest position; heat oven to 475 degrees Fahrenheit.
  • Place potatoes in a large bowl and cover with hot tap water; soak 10 minutes.
  • Meanwhile, coat 18 by 12 inch heavy duty rimmed baking sheet with 4 tablespoons oil and sprinkle evenly with about 3/4 teaspoon salt and 1/4 teaspoon pepper (this acts as ball bearings to help prevent potatoes from sticking so much). Set aside.
  • Drain potatoes.
  • Spread potatoes out on a triple layer of paper towels and thoroughly pat dry with additional paper towels.
  • Rinse and wipe out now empty bowl; return potatoes to bowl and toss with remaining 1 tablespoon oil.
  • Arrange potatoes in a single layer on prepared baking sheet; cover tightly with foil and bake 5 minutes.
  • Remove foil and continue to bake until bottoms of potatoes are spotty golden brown, 15 to 20 minutes, rotating baking sheet after 10 minutes.
  • Using metal spatula and tongs, scrape to loosen potatoes from pan, then flip each wedge, keeping potatoes in a single layer.
  • Continue baking until fries are golden and crisp, 5 to 15 minutes longer, rotating pan as needed if fries are browning unevenly.
  • Transfer fries to a second baking sheet lined with paper towels to drain.
  • Season with additional salt and pepper to taste and serve.
