ORANGE-SOAKED BUNDT CAKE
This amazingly moist and delicious cake is adapted from a favorite family recipe of Bianca Henry, a New York pastry instructor. You'll need a thin skewer to poke holes in the cake. Serve the cake garnished with slices of peeled oranges macerated with a little sugar and rum. From Fine Cooking, issue #30.

- Heat the oven to 350°F Butter and flour a 10-inch tube pan or 12-cup bundt pan.
- To make the cake-- Sift the flour, sugar, baking powder, and soda into the large bowl of a stand mixer fitted with the paddle attachment. Add the butter and mix on low speed until fine crumbs form. Change to the whisk attachment. With the machine running on medium speed, whisk in the oil, lemon zest, vanilla extract, and orange juice. Whisk in the eggs one at a time and then increase the speed to high and whisk the batter until light, about 3 min., scraping the sides of the bowl if necessary. Pour the batter into the prepared pan and bake until a toothpick inserted in the cake comes out clean, 45 to 50 minute.
- To make the syrup and glaze-- While the cake bakes, whisk together in a small bowl the orange juice concentrate, butter, rum, and 1/2 cup of the confectioners' sugar.
- When the cake is done, set the pan on a rack to cool for 5 minute With a thin skewer, poke the cake all the way through to the bottom of the pan in about 100 places. Pour 1/3 cup of the syrup over the cake and let stand for 1/2 hour; repeat with another 1/3 cup of syrup and let stand another 1/2 hour before removing the cake from the pan. (At this point you can wrap the cake in plastic and hold for up to 3 days at room temperature; in fact, the flavor only improves.) Cover the remaining syrup with plastic and store at room temperature.
- When ready to serve, whisk the remaining 1/2 cup confectioners' sugar into the remaining syrup. Set the cake on a rack over a baking sheet and pour the glaze over the cake. Let stand for at least 10 minute before slicing and serving.

Steps:
- Preheat oven to 350°F.
- Spray bundt pan with pam.
- In mixing bowl, add flour, sugar, baking powder, baking soda, and nutmeg.
- Add shortening, cut until mix is full of crumbs. Add orange zest.
- Add orange juice to a 1-cup measuring cup and fill it with the rice milk, to make 1 cup.
- Add juice/milk mix to the flour mix and applesauce. Mix it well.
- Add egg replacer and vanilla and mix.
- Add banana slices and stir gently.
- Pout into pan.
- Bake for 40 to 50 minutes. Let it cool for 15 minutes before inverting.

LIGHT BANANA BUNDT CAKE
This banana cake is very light, fluffy and has a great tang to the icing. It's lower in calories and nice enough for company or simply breakfast. I use less sugar than is typical, if you prefer a noticeably sweet cake, add 1 full cup. I also find the cake takes a little more than one smashed banana, and you can use the rest of the second for the frosting

- Sift together flour and soda.
- Cream butter, sugar and vanilla.
- Add eggs 1 at a time, and bananas.
- Stir in sifted ingredients alternately with yogurt.
- Pour into greased and floured bundt pan.
- Cook at 350 degrees for 45 minutes.
- While cake is baking, mix 2 Tbs butter, 2 oz cream cheese, 3/4 cup powdered sugar, 1 tsp vanilla and 1/4 cup banana in a bowl until creamy.
- Remove cake from oven and allow to rest in pan on a rack for 10 minutes.
- Remove cake from pan and allow to cool completely.
- Frost when cool.

SIMPLE ORANGE BANANA BUNDT CAKE
I love cakes that are simple to make.Less than $2.00 to make a medium sized bundt cake. I did not buy any cake mix when the kids were small. That was a luxury I could not afford. I used to use tang (a dry drink mix) mixed with water to make the juice. There is a ready supply of fresh oranges at any grocery store.Amazing isn't it to have almost any vegetable or fruit at your fingertips when you walk into a large grocery chain.This century is wonderful! Of course I used to use a coal and wood stove when power was out and I still have it for emergencies!If you want to use this cake for Christmas I have included optional ingredients.I use a bundt pan because there are no arguments about which piece is larger.(I bet that sounds familiar.)

- Preheat oven 350*.
- Spray pam in a bundt pan.
- In large mixing bowl add flour, sugar, baking powder, and soda. (Mix nutmeg if you want to use now) Mix well.
- Add shortening. Cut in with a rocker or fork until it is mixed.
- Use a zest knife and get the rind off of one half of orange and add.
- Juice the orange. Add milk to make 1 cup.
- It is ok if the pulp gets used. In fact I use most of the pulp, pulse it in a blender until it is broken a little.
- Add to flour mixture.
- Use a mixer to blend on low speed.
- Add eggs and mix again.
- Add sliced banana and stir in with a spoon.
- Pour into bundt pan.
- If you use nuts and cherries, pour a little batter in the pan, then spread nuts and cherries, then the batter again.
- Bake. 45 to 50 minutes When the top springs back when touched and sides start to shrink away from the pan, it is done.
- Take out of oven and let set 15 minutes before inverting on plate. Serve plain or any glaze or frosting.
