Avocado And Mango Salad image

Provided by Food Network

Time 20m

Yield 4 servings

Number Of Ingredients 14

White Balsamic Vinaigrette (recipe follows)
salt to taste
1 Tbsp. sugar
1 Tbsp. olive oil
4 1/4 oz. mango, small dice
8 oz. extra virgin olive oil
3 oz. white balsamic vinegar
1/4 oz. shallot, minced
2 each large Fresh California Avocados, peeled, seeded and halved
4 oz. spring mixed greens
6 oz. barrel aged sheep and goat's milk feta cheese
8 1/2 oz. mango, small dice (2 mangos)
Mango Vinaigrette (recipe follows)
6 oz. White Balsamic Vinaigrette

Steps:

  • Place the shallots in a bowl. Add the white balsamic vinegar, set aside for 15 minutes. Add the extra virgin olive oil and whisk to emulsify. Season to taste with salt. Reserve 3/4 cup vinaigrette to dress the salad. Save the remaining 3/4 cup for the Mango Vinaigrette.
  • Place the mango and the tablespoon of olive oil and sugar to a blender. Blend on low speed for 30 seconds; slowly pour in the remaining 3/4 cup of the White Balsamic Vinaigrette. Continue to blend until smooth. Season with salt.
  • Crumble the feta cheese in a large bowl and add the diced mango and a pinch of salt. Add the mixed greens and toss with enough White Balsamic Vinaigrette to completely coat the greens, adding more vinaigrette or salt to taste.
  • Slice each avocado half vertically into approximately 1/4-inch slices, while still leaving the halves intact. Lightly salt the surface of each avocado and set aside for plating.
  • On each plate, drop 1 tablespoon of Mango Vinaigrette in one corner and spread across the plate with the back of a spoon to the opposite corner in a half-moon shape. Spread the slices of each avocado half with both hands to elongate into one strip. Curve each strip into a circle shape and place one avocado ring in the corner of each plate at the tip of the Mango Vinaigrette with the open part of the avocado facing the center of the plate. Place 1/4 of the salad in the center of each avocado ring. Garnish with 2-3 of each flower. Serve.

MANGO AND AVOCADO SALAD

Mango and Avocado Salad image

Looks delicious. Saw Sunny Anderson make this on Cooking for Real. She said it's a great side dish for hot dishes such as jerk chicken. UPDATE: I just made this recipe and WOW is it good! I left out the onions and it was fabulous. I used my expensive balsamic vinegar (which is thick and sweet), however if you want it to be pretty in the end, you may want to use white balsamic and add a pinch of sugar. Great meal starter.

MELON AND AVOCADO SALAD WITH FENNEL AND CHILE

Melon and Avocado Salad With Fennel and Chile image

This sweet-savory, crunchy-creamy dish nods to California summers, when a drive to the market can often end with avocados and melons buckled in the back seat. The recipe is simple, and instantly impressive: It involves little more than scooping out the fresh fruit and topping it with a spicy-sweet pinch of sugar and a drizzle of dressing. Rubbing toasted fennel seeds, red-pepper flakes and lemon zest into sugar and salt helps their floral kick travel far. The salad's balance depends on your melon and avocado, so rely on taste more than measurements here. Adjust the ingredients as needed, until the salad is rich, punchy and bright, bite after bite.

Provided by Ali Slagle

Categories     brunch, dinner, easy, lunch, weeknight, salads and dressings, appetizer, side dish

Time 15m

Yield 4 servings

Number Of Ingredients 8

2 teaspoons fennel seeds
1/2 teaspoon red-pepper flakes
1/2 teaspoon kosher salt, plus more as needed
1/2 teaspoon granulated sugar
1 lemon, for zesting and juicing
1/2 medium cantaloupe or honeydew melon (about 2 1/2 pounds), seeds removed
2 ripe avocados
2 teaspoons extra-virgin olive oil, plus more as needed

Steps:

  • In a small skillet over medium-low, toast the fennel seeds and red-pepper flakes, shaking the pan occasionally, until fragrant, 1 to 2 minutes. Transfer them to a cutting board, then smash with a heavy pan until the fennel seeds break apart. (You can also do this using a mortar and pestle.)
  • Transfer the mixture to a small bowl, then add the salt, sugar and 1 teaspoon freshly grated lemon zest. Rub the mixture with your fingers until you smell the lemon.
  • Using a soup spoon, scoop out small spoonfuls of the melon and place them directly on a serving platter. Halve the avocados and remove the pit. Using the soup spoon, scoop out small spoonfuls of avocado and place on top of the melon.
  • Drizzle the fruit with 2 teaspoons lemon juice, then sprinkle with some of the fennel-chile mixture. (Start with half of it, then add more to taste.) Drizzle with the olive oil, then taste and adjust acid (with lemon juice), richness (with oil), and salt and sweetness (with fennel mixture) until it tastes fresh and bright. Serve right away.

MELON MANGO SALAD

Melon Mango Salad image

Just what it sounds like. To make a scrumptious dressing for this, mix 3/4 cup plain yogurt with 1 tbsp of honey and 1 tsp grated gingerroot.

Provided by ladyroseofrohan

Categories     Mango

Time 20m

Yield 4 serving(s)

Number Of Ingredients 9

1 cantaloupe
1/2 cup red grapes, halved
1/2 cup green grape, halved
1 large mango
1 bunch watercress or 1 bunch arugula
4 cups salad greens (your choice)
2 tablespoons olive oil
1 tablespoon cider vinegar
1 passion fruit

Steps:

  • Make dressing by stirring together plain yogurt, a tablespoon of honey and a teaspoon of grated gingerroot.
  • Halve melon and scoop out seeds. Slice, peel, and cut into chunks. Mix with grapes.
  • Slice mango on each side of the pit. On each half, slash the flesh into a criss-cross pattern down to the skin. Push the skin from underneath to turn the mango halves inside out. Remove the flesh and add to melon mixture.
  • Arrange watercress and salad greens on 4 serving plates. Whisk olive oil and vinegar and season to taste with salt and pepper. Drizzle over the watercress and greens.
  • Divide the melon mix equally between the 4, then spoon the yogurt dressing on top. If desired, scoop the seed out of the passion fruit and sprinkle over the salad. Serve immediately.

MANGO-AVOCADO SALAD WITH LIME VINAIGRETTE

Mango-Avocado Salad With Lime Vinaigrette image

Inspired by Vietnamese green papaya salad, this salad stars ripe, juicy mangoes and dresses them in the classic punchy lime-fish sauce dressing. Tender torn greens, crunchy sweet snap peas and creamy avocado round out this dish with both crispy and creamy bites. The cooling salad is the perfect side to accompany grilled or roasted fish, chicken, or steak. If mangoes are unavailable, tomatoes or sweet stone fruit like peaches are tasty options.
