SIMPLE MOIST ONE PAN ROAST TURKEY AND POTATOES (DRY BRINED)
This super simple dry brined turkey is your solution to a dry turkey. It uses a technique that makes the turkey super most and delicious.! It is simple, mess free and MAKE AHEAD friendly. Plus it is a ONE PAN meal. Delicious potatoes cook in the same pan as the turkey with all the luscious garlic and pan drippings making for the most delicious and crispy potatoes EVER!

- Combine all the ingredients of the brine and combine well.
- Slather all over the turkey, including lifting up the skin to make sure that you can separate the skin from the breast to nestle that brine in there for maximum flavor.
- Place into the fridge in a large foil pan for 24-72 hours. Make sure to rotate the turkey every 24 hours so that it brines evenly. Since it is so cold now, I use my garage when I have a giant turkey that will not fit into my fridge.
- Preheat oven to 500 degrees F.
- On roasting day, remove the turkey out of the brine and rinse it inside and out with water.
- Tuck the wings underneath the bird and place in roasting pan (or foil pan) on top of a sheet pan or roasting pan. (I do this in the event that there is spillage. No one wants to clean ovens on Thanksgiving Day)
- Before placing it in the oven, take a piece of foil and measure it on the bird into a little triangle. You want it to just cover the breast. Place the triangle to the side, it will be used a bit later on.
- Place the turkey onto the lowest rack in the oven and let it roast for 30 minutes and 500 degrees. NO PEEKING! Because it is roasting on such a high temperature, all the juices that fall into your roasting pan may evaporate off and start to burn. During this time you want to add in your chicken stock just a bit at a time, so that your bits don't burn. This can be done throughout the entire cooking process to prevent the bits from burning and leaving perfect pan juices for the potatoes.
- After the first half hour, take out the turkey and cover the breast with your pre-measured foil.
- Insert a probe thermometer into thickest part of the breast and reduce the oven temperature to 350 degrees F.
- Set your probe thermometer alarm to 151 degrees F and walk away. (A 14 to 16 pound bird should require a total of 2 to 2 1/2 hours of roasting.)
- Once it's done, remove it from the pan and place it on a large cutting board and let it rest for about 15-20 minutes, covered with foil.
- At this point, while the turkey is roasting, increase the heat to 450-degrees and add the potatoes and garlic cloves to the pan. Roast until oven brown and fork tender, about 30-35 minutes.
- Carve and serve!
BRINED ROAST TURKEY AND PAN GRAVY
The original recipe for this turkey is from Celebrity Chef Wolfgang Puck. I stay very close to his recipe; however, my recipe incorporates Fresh Citrus Fruits to the Brine which I then stuff into the cavity of the bird with the fresh herbs while roasting. Everyone who has ever tried it says that It is the most flavorful and moist turkey they have ever eaten. This recipe is not for the faint of heart and is a very involved recipe, as well as being rather costly. its worth the effort but be prepared to be the designated turkey preparer from now on!

- In a large stockpot, bring the water, cloves, ginger, black peppercorn, bay leaves and salt to a boil. Lower to a simmer and stir in the honey and maple syrup until well blended. Turn off heat and allow cooling to room temperature.
- Rinse the turkey inside and out with cold tap water. Reserve the neck and specialty meats for pan gravy. Set the turkey in the brine, making sure that the turkey is fully immersed in the brine. Place a weight on top of the turkey to make sure it is always covered with brine. Marinate for at least 4 hours to overnight, depending on the weight of the turkey, in the refrigerator.
- Preheat oven to 325 degrees F.
- In a shallow roasting pan, place the carrots, celery and onions. Remove turkey from brine.
- Mix together the butter, garlic, chopped rosemary, and sage to make a compound butter. Using your hands, loosen to the skin from the breast by gently inserting your fingers between the skin and the flesh. Rub the compound butter underneath the skin. Insert the apples, onions, and whole rosemary and sage into the cavity of the turkey.
- Place the turkey over the vegetables, breast-side up, in the roasting pan. Tuck the wings back and under the turkey. Using kitchen twine, tie the legs together. This will make a compact shape and will create a great presentation. Drizzle the turkey with olive oil and rub it into the skin. Roast the turkey to at least 165 degrees F in the breast, about 2 1/2 hours. (Important Chefs Note:) The Cooking times given here are for a 10 lb fresh, not frozen turkey. If using a defrosted frozen turkey add approx, 5 mins per pound cooking time. (i.e. 20 mins per pound). If the skin gets too dark during roasting, tent with foil.
- Transfer turkey to a platter and allow cooling. Meanwhile, prepare the pan gravy.
- Tilt the pan and skim as much fat as possible off the juice with a spoon. Set the pan on 2 burners set on medium heat. Deglaze roasting pan with white wine and Madeira. Scrape the bottom of the pan to loosen any brown bits. Reduce until only a quarter remains. Add the turkey stock, thyme and parsley. Bring to a boil and strain into a saucepan. Bring back to a boil, skim and lower to a simmer. Whisk in the beurre manie until well incorporated and continue to cook until gravy has thickened. Season, to taste, with salt and pepper.
- Directions For the Turkey Stock.
- Heat a saucepan over high heat. When the pan is hot, add the olive oil and heat. Add the neck and giblets and cook until browned all over, about 7 minutes. Remove the pan from the heat and deglaze with the port. Return the pan to the heat and cook until the port is almost completely evaporated, about 10 minutes.
- Add the carrots, onions, celery, rosemary and peppercorns. Cover with cold water by 4-inches. Bring to a boil. Reduce heat to a simmer, and simmer for 2 hours, adding a little more water, if necessary. Skim any scum that rises to the surface of the stock and discard.
- Strain the stock. Use immediately, or cool and refrigerate for up to 4 days.

MOIST ROAST TURKEY WITH A PORT GRAVY
made 2 roast ducks, roast leg of lamb and a roast turkey for Christmas dinner. I have posted a recipe already for roast lamb so I thought I would post one for turkey and one for duck. I know you probably can't think of food now, but I thought I would post these for next year or other special occasions throughout the year. I only bought a 2.5kg turkey as I was doing other meats, so you will have to adjust cooking times if roasting a bigger bird. I stuffed mine with a fois gras fig stuffing, MMmmm, it was delicious but you can stuff yours with your favourite stuffing.

- Discard giblets if inserted, rinse turkey under cold water inside and out, pat dry. Spoon seasoning or stuffing into cavity and tie legs together with kitchen string.
- In an oven proof baking dish pour in chicken stock and half the port. Place turkey upside down in dish, cover dish tightly with foil, bake in a slow oven (130c) 4hrs.
- Remove foil place turkey right way up, combine remaining port with sugar, brush over turkey. Roast uncovered 180-190c for a further 45 Min's or until turkey is browned and cooked through.
- Remove turkey from dish cover with foil to keep warm. Strain juices into a pan, to remove any bits of meat and fat. Heat over a medium heat, mix a little water with cornflour, pour into sauce, stir until mixture boils and thickens.
- Serve turkey with port gravy.

BRINED AND ROASTED THANKSGIVING TURKEY WITH SIMPLE GRAVY
For succulent meat, brine the bird. Stop your turkey from being dry by brining it and not overcooking it. Also,when serving roasted chicken, you can brine it first to keep it moist. Brining means your not required to baste as much during the cooking process. Prep time does not include brining time.

- BRINING TURKEY: ONE DAY BEFORE baking turkey, prepare brine. Combine all the brine ingredients. Place the turkey in a bucket or very large pot and pour brine over turkey to submerge. Refrigerate for 12 to 24 hours. Remove turkey from brine; dry off turkey with paper towels. Discard brine.
- Preheat oven to 300 degrees Fahrenheit.
- Brine turkey as instructed above. Salt and pepper the brined turkey and cavity. Fill the cavity with carrots, celery, apple, orange, and garlic; bind the legs with kitchen twine.
- In a large roasting or braising pan (or disposable aluminum pan), spread onion, carrot, celery, garlic, sage, rosemary, thyme, parsley and bay leaves. Place the turkey on top of the bed of vegetables and herbs.
- Put butter on turkey, or between skin and breast meat.
- Place the turkey in the oven and roast 45 minutes. Pour half the chicken stock over the turkey; roast 45 minutes. Pour remaining stock over the turkey and roast 45 more minutes; it will start turning golden brown.
- Baste with pan juices, cover loosely with foil and roast an additional 45 minutes. When the turkey has reached and internal temperature of 165 to 175 degrees, remove from oven, keep covered, and let rest at least 10 minutes before carving. Transfer to platter.
- TO MAKE SIMPLE GRAVY: From the bottom of the roasting pan, discard herbs and measure out 1 cup of vegetables and 3 cups of pan juices; puree in blender. To thicken, add more vegetables; to thin add more pan juice. pour through a mesh strainer to make a smooth gravy. Makes 4 cups. TIP: For silken gravy, forget the flour. Avoid using flour, because that's usually what causes lumps. Instead, puree the vegetables you roast along with your turkey; they become your thickening agent. That, along with your pan juices, becomes your gravy. You can strain it through a mesh strainer, or use cream and reduce it.
DRY-BRINED ROASTED TURKEY
From Fine Cooking November '05. I tried this recipe last Thanksgiving and couldn't have been more pleased. It was gorgeous and tasted as good as it looked.

- THE NIGHT BEFORE:.
- Remove giblets from the turkey, cut off the tail, if attached,and resserve them for making the turkey broth.
- Rinse the turkey thoroughly.
- Sprinkle the salt all over it, starting on the back side, then the cavity, and finally the breast.
- Put the turkey on a wire rack setover a rimmed pan and refrigerate uncovered overnight.
- ONE HOUR BEFORE ROASTING:.
- Remove the turkey from the refrigerator and let stand at room temperature.
- Fifteen to 20 minutes before roasting, position a rack in the lowest part of the oven and heat the over to 400 degrees.
- Put half of the onions, carrots and celery in the turkey cavity.
- Tie the legs together with kitchen twine.
- Tuckthe wings behind the neck and under the turkey.
- Scatter the remaining onions, carrots and celery in a large flameproof heavy-duty roasting pan fitted with a large V-rack.
- Set the turkey, breast side down,on the V-rack.
- Roast for 30 minutes.
- Pour 1 cup of water into the roasting pan and roast for another 30 minutes.
- Remove the turkey from the oven and close the oven door.
- With two wads of paper towels, carefully turn the turkey over so that it's breast side up.
- Add another 1/2 cup water to the roasting pan.
- Return the turkey to the oven and continue to roast until an instant-read thermometer inserted in the thigh registers 170 degrees, about another 45 minutes for a 10-pounder, or another hour for a 12-pounder.
- Keep a close eye on the vegetables and pan drippings throughout the cooking process. They should be kept dry enough to brown and produce rich drippings, but moist enough to keep from burning, so add water as needed throughout.
- Transfer the turkey to a carving board, tent with foil, and let rest for at least 45 minutes and up to 1 hour before carving and serving.

- To Brine: Combine Kosher Salt and sugar in cool water in a large, clean stockpot until completely dissolved.
- Place the whole turkey in the brine until completely submerged.
- Cover and refrigerate for 4 to 5 hours.
- Remove the turkey from the brine, rinse inside and out under cool running water for several minutes to remove all traces of salt; pat dry with paper towel.
- To Roast: Mix the softened butter with the pepper.
- Place turkey on rack in roasting pan.
- Rub the seasoned butter under the skin.
- Brush the skin with the melted butter.
- Pour the 1 cup liquid (wine, broth or water) over the pan bottom to prevent drippings from burning.
- Roast turkey at 450° F.
