Carrots are my favorite vegetable, so I'm always searching for different ways to prepare them. This festive dish is quick to make and nicely complements the turkey.

12 medium carrots, julienned
2 tablespoons cornstarch
2/3 cup orange juice
5 tablespoons maple syrup
5 tablespoons butter, melted
1 tablespoon grated orange zest
3/4 teaspoon ground nutmeg
1/2 teaspoon salt

Steps:

  • In a large saucepan, bring 1 in. of water and carrots to a boil. Reduce heat; cover and simmer for 3-5 minutes or until crisp-tender. , Meanwhile, in another saucepan, combine the cornstarch and orange juice until smooth. Stir in the remaining ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened. Drain carrots; transfer to a serving bowl. Pour glaze over carrots; gently stir to coat.

1/2 cup water
1 tablespoon butter
2 tablespoons maple syrup

  • In a small saucepan, bring carrots and water to a boil. Reduce heat; cover and cook for 10 minutes or until tender. Drain. Stir in the butter, syrup and pecans until the butter is melted.

4 lbs carrots, peeled, cut on sharp diagonal into 1/4-inch-thick ovals (about 11 cups)
10 tablespoons unsalted butter (1 1/4 sticks)
3 tablespoons sugar
1 1/2 teaspoons coarse salt
6 tablespoons pure maple syrup
3 tablespoons dark brown sugar, packed
2 tablespoons fresh Italian parsley, chopped

Steps:

  • Combine 4 1/2 cups water, carrots, 4 tablespoons butter, sugar, and coarse salt in heavy large pot. Bring to boil. Reduce heat; cover and simmer until carrots are just tender when pierced with knife, about 10 minutes. Drain. (Can be prepared 3 hours ahead. Let stand at room temperature.)
  • Melt remaining 6 tablespoons butter in large nonstick skillet over medium-high heat. Add maple syrup and brown sugar and stir until sugar dissolves. Add carrots and cook until heated through, about 5 minutes. Season with salt and pepper.
  • Transfer carrots to large bowl. Sprinkle with parsley and serve.

1 -2 teaspoon lemon juice, to taste

Steps:

  • Boil lightly salted water.
  • Peel and slice the carrots into 1-inch pieces then blanch for 3 minutes.
  • If not using immediately, put into ice water to stop cooking.
  • When ready to use, drain well and add to a sauté pan into which all other ingredients have been added.

1/2 cup beef broth
1/4 cup maple syrup
2 tablespoons unsalted butter
salt and pepper
2 tablespoons balsamic vinegar

Steps:

  • In a skillet add the carrots, broth, maple syrup, butter, salt and pepper.
  • Over medium-high heat, bring the mixture to a boil.
  • Cover and cook 3 minutes; cook for 5 minutes if you want a soft, candied-style carrot.
  • Increase the heat to high; uncover the skillet and cook 5-6 minutes, stirring frequently, or until the carrots are just tender and the liquid has been reduced to 2 tablespoons.

  • Drain the carrots, then submerge under ice water or very cold water.

1 rounded tbsp wholegrain mustard

Steps:

  • Peel and cut the carrots into batons. (You can do this up to 24 hours ahead and keep them in a polythene bag in the fridge.) Tip them into a pan, pour in enough boiling water just to cover, bring back to the boil, then put a lid on the pan and cook for 4-5 minutes until the carrots are just tender.

6 tablespoons butter, melted
1/3 cup brown sugar, packed
1/3 cup maple syrup
3/4 teaspoon chili pepper flakes (optional)

  • Preheat oven to 400 degrees, Line rimmed baking sheet with foil. Cut carrots if desired, or leave whole. (I leave mine long. If using baby carrots, reduce cooking time.).
