SIMPLE GREEN SALAD WITH LEMON VINAIGRETTE
When a meal needs something extra, consider this your go-to side. Fresh greens and vegetables dressed in a simple lemon vinaigrette pair with just about any meal. Ready in just 10 minutes.

Steps:
- First prepare dressing by adding all ingredients to a mixing bowl (or small blender) and whisking (or blending) to fully combine. Taste and adjust flavor as needed, adding more maple syrup for sweetness, lemon for acidity, or salt or pepper to taste. Set aside.
- Prepare salad by adding greens to a serving bowl or platter and topping with baby tomatoes, shallot or onion, carrots, pomegranate arils or dried fruit (optional), a pinch of salt and pepper, and toasted pepitas or sunflower seeds.
- Add dressing to the salad and toss to coat, or serve on the side. Best when fresh. Store salad separate from dressing if keeping for later use. Will keep in the refrigerator up to 2-3 days. Store dressing in the refrigerator 3-4 days. The oil can harden when cold, so let set out for a few minutes to warm and shake well to reincorporate before serving leftovers.

SAUTEED GREEN BEANS WITH CREAMY LEMON DRESSING
Steps:
- Heat the olive oil in a large skillet over medium heat. Add the shallots and cook, stirring, until softened, about 1 minute. Add the green beans and salt and pepper to taste. Saute, stirring occasionally, until crisp tender, about 5 minutes. Transfer to a serving dish and set aside.
- Return the skillet to medium-high heat and add the cream, thyme, lemon juice and zest, and chicken broth. Bring to a simmer and let reduce by half, until thick enough to coat the back of a spoon, about 5 minutes. Remove from the heat and stir in the sour cream. Add salt and pepper to taste.
- Pour the dressing over the green beans to serve.
GREEN BEAN AND ASPARAGUS SALAD WITH CRISPY PROSCIUTTO AND WARM LEMON DRESSING

- For the crispy prosciutto:
- Heat a nonstick saute pan over medium-high heat. Put the prosciutto pieces in the pan and cook until crisp. Remove the prosciutto from the heat and reserve for the green bean and asparagus salad.
- For the warm lemon dressing:
- Put 1 tablespoon olive oil in a pan over medium- high heat. Add the shallots and season with salt. Saute the shallots until tender. Add the almonds, raisins, and olives, and mix to incorporate. Add the lemon juice and honey, stir to combine. Add the remaining olive oil, season with salt and pepper and remove from the heat.
- For the green bean and asparagus salad:
- Cut the green beans and asparagus into 1-inch pieces and put in a bowl. Pour the warm lemon dressing over the green beans and asparagus. Toss to combine and garnish with the crispy prosciutto.
GREEN BEAN, HAZELNUT, AND MINT SALAD WITH LEMON DRESSING
This is a recipe I found in a Sunset Magazine. With its pesto-like flavorings and bright lemon dressing this is a great way to serve green beans. ***Note*** Make this about 3 hours ahead to allow the flavors blend.

- Preheat oven to 375 degrees. Spread nuts out on a baking pan and bake until golden under skins (break one to test), 10 to 15 minutes. When nuts are cool enough to handle, rub in a kitchen towel to remove as many skins as possible. Chop coarsely and set aside.
- In a 6 quart pot over high heat, bring 3 quarts water to a boil. Add green beans and cook until just crisp-tender, 4 to 7 minutes. Drain in a colander and plunge beans into a bowl of ice water to cool. Drain again and set aside.
- In a small bowl, stir together the mint leaves, lemon zest, lemon juice, and salt to make the dressing. Drizzle in the hazelnut oil, whisking constantly.
- In a large bowl, gently toss the beans with dressing and hazelnuts. Serve at room temperature.

- Make the dressing: In a bowl, whisk the olive oil, freshly squeezed lemon juice, honey, salt. Season with salt and pepper to taste. Adjust ingredients to taste, if needed. Set aside.
- Toast the almonds: On a skillet over medium high heat, toast the sliced almonds for 3 minutes until fragrant. Toss occasionally to make sure all sides get toasted. Set aside.
- Cook the green beans: In a pot large enough to fit the green beans, bring water to a boil (enough to cover the green beans). Add the green beans and cook on a low boil for 4 to 6 minutes, or until tender but crisp. Test a few until they cooked to your liking. Drain over a large colander and quickly run cold water over it, tossing. This will quickly stop the cooking process and keep them bright green.
- Pat dry the beans and transfer to a serving bowl. Toss with the prepared lemon dressing. Top with the toasted almonds and some lemon zest to taste. Serve immediately. Enjoy!
