EASY HOMEMADE GRANOLA BARS (6 WAYS)
We like to have these granola bars as a snack or toddler breakfast with milk or a smoothie-and they're an excellent lunch box component too. You can make them plain or choose a flavor to add!

Steps:
- Preheat the oven to 325 degrees F and line a baking sheet with parchment paper or a Silpat. Warm the honey and peanut butter for about 15 seconds if not stored at room temperature.
- Place the oats and coconut into the bowl of a food processor and blitz to grind into a coarse texture (similar to quick oats).
- Add the remaining ingredients, including the peanut butter and honey, and blend well.
- (You can also grind the oats or use instant oats, then mix everything together in a bowl.)
- Add ¼ cup water and blend until batter comes together like thick cookie dough. You should be able to press the batter together between your fingers and have it stick together. If it doesn't, add a bit more water.
- Place batter onto the center of the prepared baking sheet and use your hands to press thin, about ¼-½-inch thick and about 8x8-inches big. I measure roughly using an 8x8-inch baking pan. (You can also roll out the dough-just cover it with a piece of parchment paper first to make sure it's easy to do.) Use a knife to lightly score lines for squares in whatever size you like.
- Bake for 18-20 minutes, remove from oven, and let cool completely on the pan.
- Break into squares and serve.
- Store in an airtight container for up to 2 weeks in the fridge or a week at room temperature. To freeze, place cooled bars in a sealed zip top freezer bag for up to 3 months. Thaw overnight in the fridge before serving.

BASIC GRANOLA RECIPE
This basic granola recipe is pretty perfect as is, but feel free to swap out ingredients to customize it to your taste (see Cook's Notes below for sample substitutions).

- Preheat the oven to 300 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, light brown sugar, cinnamon and salt. Stir the honey, oil and vanilla extract into the dry ingredients. Use your hands if necessary to make sure it's well combined.
- Spread the mixture in an even layer on the prepared baking sheet. Bake for 20 minutes and then remove from the oven and stir; add the chopped almonds. Return to the oven and bake until everything is toasted and evenly browned, an additional 10 minutes.
- Allow the granola to cool on the baking sheet, then add the dried cranberries and toss to distribute. Store in an airtight container at room temperature for up to 2 weeks.

- Preheat oven to 325 degrees F (165 degrees C). Grease a 9-inch square baking dish.
- Spread the oats and coconut evenly across a baking sheet.
- Toast oats and coconut in preheated oven until browned, about 10 minutes; transfer to a large mixing bowl.
- Mix honey, peanut butter, vanilla extract, and salt in a saucepan over medium-low heat. Cook and stir until smooth. Pour the honey mixture over the oats and coconut; stir to coat. Spread the mixture evenly into the prepared baking dish.
- Bake in preheated oven until beginning to dry, about 15 minutes for crunchy granola bars, less if you like them chewy. Cool completely before cutting.

EASY GRANOLA BARS
Leave out the preservative and give your little one something simply good for them. I like to sneak in the grated carrot just to get another vegie into the mix but it's not necessary

Steps:
- Butter a 9" square pan.
- In a 3 qt saucepan boil corn syrup for 1 minute only, stirring constantly.
- Remove from heat.
- Stir in peanut butter.
- Stir in granola and grated carrot if using.
- Work fast as it hardens quickly.
- Transfer to pan.
- Spread and pat in place with a spoon or dampened spatula.
- Cool for an hour before cutting into bars.

This is my compilation to suit our tastes and busy schedule. I can have it ready to eat in 15 min. They are great for those mornings when we are running to school and someone yells, "I haven't had breakfast!" Also awesome in lunch boxes.

Steps:
- Spray a large cookie sheet with cooking spray and set aside.
- In a large bowl, combine oats, cereal, raisins and coconut. Stir.
- In a separate, microwave safe bowl, combine the peanut butter, sugar and corn syrup.
- Microwave on high 2 minute and stir. Microwave another 1-2 minute until mixture boils and sugar dissolves. Stir in vanilla.
- Pour the sauce over the dry ingredients and mix well. Allow it to cool long enough to not melt the chocolate chips, then stir them in also.
- Turn out onto the cookie sheet. Wet your hands under cold water and press into the pan.
- Cut into bars. They can be eaten immediately, but they will set up more as they cool. Store in an airtight container.
- Variations: Can use 2 cups each of Cheerios, Rice Krispies, and Corn Flakes instead of 6 cups crisp rice cereal. This is a nice taste variation but it is more crumbly.

- Mix all ingredients except chocolate chips with fork until moistened (mixture wil be crumbly). Stir in chocolate chips.
