1 cup vegetable oil for frying
½ cup all-purpose flour
½ teaspoon seasoning salt, or to taste
salt and pepper to taste
4 (3/4 inch) thick pork chops

Steps:

  • Heat oil in a large skillet over medium-high heat. Combine flour, seasoning salt, salt and pepper in a paper or plastic bag. Place pork chops into the bag, and shake to coat.
  • When the oil is nice and hot, shake off excess flour from pork chops, and fry in the hot oil. Cook on each side for about 4 to 5 minutes, or until golden on the outside, and juices run clear.

My fried pork chop recipe :) I came up with this after trying many recipes & not really finding the flavor I wanted for my pork chops. I will sometimes skip soaking as I don't always have time. Choose soak time wisely, as the longer they soak the harder it is to keep the breading from falling off due to excess moisture absorbed in the soaking process. I suggest boneless tho as they are easier to tenderize & will require less soak time to keep juicy. Bone in will take longer, but still work with this recipe. Parsley is optional, some people find that it burns too easily so you can omit & the flavor will not change much at all. I personally love this recipe with a side of Louisiana hot sauce for dipping, I find it compliments the flavor perfectly.

2 cups milk
2 teaspoons salt
2 cups flour
4 tablespoons onion powder
4 tablespoons garlic powder
2 teaspoons cayenne
2 teaspoons salt

1 teaspoon parsley (optional)
4 -6 boneless pork chops
1/2-1 cup vegetable oil, for frying

Steps:

  • Mix milk with first amount of salt (2 teaspoons) and allow pork chops to soak in this mixture for as long as you'd like, about an hour to maybe four works well. Overnight soaking will result in too much moisture & your breading will fall off.
  • Remove pork chops from brine, and set aside. Brine should be discarded.
  • Mix all spices in with flour.
  • Heat oil in pan.
  • Coat each side of the pork chops, applying pressure to make the batter stay on during cooking. One coat is good for a thin layer of batter. For a thicker coating, dip them in a separate bowl of a little milk with an egg mixed well, and again in the flour.
  • Make sure oil is hot. You can check by dropping a pinch of flour in, and it will sizzle if it is. Oil temperature should be around 375 degrees F, if you have an oil thermometer.
  • Cook on each side 4-6 minutes on each side, or until meat is no longer pink inside. Chops with bones will take a bit longer, and we cook them on one side until blood starts to come out of the bone before flipping. If you have a meat thermometer, the inner temperature should be at least 160 degrees F.

1 1/4 teaspoons salt

Steps:

  • Heat oil in a deep skillet to 350 degrees F.
  • Arrange the pork chops in a large shallow dish. Season each pork chop, on both sides, with salt, black pepper, garlic powder, cayenne pepper and celery seeds. Pour the buttermilk over the chops and turn to coat.
  • Place flour into a large shallow dish. Dip each pork chop into the flour mixture and coat well, shaking off the excess.
  • Using tongs, gently lower the chops into the deep skillet in batches if necessary. Fry for 8 to 10 minutes or until golden brown, turning once. Transfer chops to a paper towel-lined pate to drain. Serve hot.

4 bone-in pork chops, about 1/2-inch thick and patted dry (about 11/2 pounds total)
Extra-virgin olive oil, for shallow frying

Steps:

  • Put the flour in a shallow dish. Break the eggs into another shallow bowl and whisk with 1 teaspoon salt and a few grinds of pepper. Mix the breadcrumbs with the oregano and thyme in a third shallow bowl.
  • Dredge a pork chop in the flour, shaking off the excess, dip it into the eggs and then coat evenly with the breadcrumbs. Set aside on a piece of wax paper or baking sheet. Repeat with the remaining pork chops.

2 tablespoons fresh lemon juice
1/4 cup canola oil
1 tablespoon Dijon mustard
1 tablespoon brown sugar

6 boneless center cut pork chops
2 eggs, well beaten with
2 tablespoons water
2 cups pancake mix
1/2 teaspoon paprika

2 cups chicken broth
1/2 teaspoon beef bouillon granules
1/4 teaspoon marjoram
1/4 teaspoon sage

Steps:

  • In a blender combine the marinade ingredients. Blend until smooth.
  • Place pork chops in a resealable bag and add marinade. Squeeze out as much air as you can and seal the bag. Refrigerate for 4 to 8 hours.
  • Preheat oven to 425°.
  • Remove chops from bag and discard marinade. Blot chops with paper towel to remove excess moisture.
  • Place well-beaten eggs in a pie plate. Combine pancake mix, paprika, and salt in another pie plate.
  • Dip each chop in pancake mix, shake off excess. Dip in egg, coating both sides. Dip in pancake mix again, coating well. Move to wire rack to set for 5 minutes.
  • Meanwhile, spray a 9 x 13-inch glass baking dish with non-stick spray. Put the butter in the baking dish and place in the preheated oven to melt.
  • Place chops in one layer in melted butter in baking dish. Bake for 10 minutes. Turn chops over carefully and bake for 10 minutes more. Remove to wire rack placed over paper towels to drain.
  • In a saucepan over medium high heat combine 2 tablespoons drippings from baking pan with flour. Stir to make a smooth paste. Add chicken broth, beef granules, marjoram and sage. Bring to a boil, turn heat down, simmer and whisk until thickened and smooth, about 5 minutes.

pork chops
dash(es) seasoning salt (to your taste)
dash(es) black pepper (to your taste)

2 c oil for frying
1/2 c flour (for dust coating)

  • 1. Season chops with salt,pepper, and garlic powder
  • 2. Heat oil for frying 160 F (see picture)
  • 3. Put flour in bag, add chops in bags ((((shake)))) THE BAG ! NOT YOU !
  • 4. Use TIP of chop to test oil (see picture). Isn't that better than using your finger ?
  • 5. SLOWLY add chop to HOT OIL. " Zizzle Zizzle Zizzle" , just a little while longer!
  • 6. WHAT !!!! YES, you may see "the red stuff" "GET OVER IT" this happens with most meat you fry. YES IT DOES !
  • 7. Fry until gloden brown, aprox. 5 minutes then carefully turn over and cook about 4 minutes. This is for a 1/2 inch thick cut. Add more time to each side if thicker.
  • 8. Sit down,fix your dinner plate; with a good glass of sweet tea. ENJOY !
