SIMPLE FRIED RICE
This is my grandma's recipe. It's so quick and easy to make. It goes just perfect with any Chinese dish you may be making.

Steps:
- In a wok or frying pan heat oil and butter until very hot.
- Add peppers and chives and cook for about 2 to 3 minutes.
- Add eggs and cook like scrambled eggs.
- Add rice and soy sauce and cook, moving rice around constantly until done (About 2 minutes).
- You can also add some black pepper if you like.
- Serve right away or keep warm until serving.

- In a large saute pan or wok over medium-high heat, add the oil. Add jalapenos, onions and garlic, and saute until fragrant, about 1 to 2 minutes. Add the eggs and scramble until firm, about 2 minutes Add the rice and combine until well coated with the oil and vegetables, about 2 to 3 minutes. Stir in Worcestershire sauce, bouillon, salt, pepper and parsley. Sprinkle with the lime juice and combine well. Transfer to a serving bowl and serve.

- Heat oil in a large nonstick skillet over medium heat; add ginger and garlic. Cook 10 minutes or until browned and crisp, stirring constantly. Remove from pan; set aside.
- Add sliced onion to pan; reduce heat to medium-low. Cover and cook 10 minutes or until soft; stir occasionally. Sprinkle salt over onion; increase heat to medium-high.
- Add rice; cook 4 minutes or until heated, stirring frequently.
- Make a well in center of rice; add eggs, stirring to scramble. Gradually incorporate eggs into rice; stir in ginger mixture, green onions, soy sauce, and sesame oil. Garnish with cilantro, if desired.

EASY FRIED RICE
Very easy. The rice, preferably, should be one day old (so that it is less sticky) but I have done it all once several times with good results. I also want to try adding in bean sprouts, but I keep forgetting to pick some up at the store.

Steps:
- Lightly beat the eggs with the salt and pepper.
- Heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Set aside.
- Add 2 tablespoons oil back to the pan. Add the rice. Stir-fry for a few minutes, using a wooden spoon to break it apart.
- Stir in the soy sauce and stir fry sauce.
- When the rice is heated through, add the scrambled egg back into the pan. Mix throughly.
- Stir in the green onion. Serve hot.

SIMPLE FAVORITE FRIED RICE
This is a combination of several different recipes. My absolute favorite fried rice! Great for Lenten Fridays if you use the salad shrimp. Cook time includes cooking the rice, but leftover rice works just as well. Enjoy!

Steps:
- Cook rice according to package directions.
- Meanwhile, scramble eggs in 1 tablespoon of margarine until cooked through, breaking into small pieces with spatula.
- Remove eggs from pan.
- Add remaining margarine to skillet, along with onions, green pepper, celery, cabbage (if adding),and garlic.
- Saute until just softened (about 4 minutes).
- Add egg back to skillet.
- Stir in thawed shrimp and mixed vegetables.
- Heat through.
- Add cooked rice, garlic powder, pepper, salt, and soy sauce.
- Stir until rice is evenly colored and seasonings are evenly distributed.
- Serve with additional soy sauce, if desired.
