Steps:
- Line a tin with parchment paper - I use a 7x10″ brownie tin as it makes a nice depth of fudge!
- Put the chopped Chocolate into a heavy-based pan, along with all of the Condensed Milk and Vanilla Extract - melt on a low heat, stiring often so that the chocolate doesn't catch on the bottom and burn and so that all the ingredients mix together well.
- Alternatively, add the Chocolate to a large bowl, and melt.
- Add the Condensed Milk and Vanilla and mix in.
- Once melted, tip in the sifted Icing Sugar and combine well, it might take a bit of beating, but it's worth it!
- Once cooled, pour in two thirds of the chopped Crunchies and quickly stir through pour into the tin and smooth over the mixture.
- Sprinkle on the rest of the chopped bits of Crunchie, and even all the little tiny bits and press into the top of the fudge and store in the fridge for at least 3-4 hours to set!
- Once set, chop your fudge up into pieces and enjoy!

CHOCOLATE HONEYCOMB
Treat yourself and loved ones to homemade honeycomb. Dip in chocolate for added indulgence

Yield Makes a 20cm sheet of honeycomb
Number Of Ingredients 5
Steps:
- Butter a 20cm square tin. Mix the sugar and golden syrup in a deep saucepan over a gentle heat until the sugar has melted. Try not to let the mixture bubble until the sugar has completely dissolved.
- Turn up the heat a little and simmer until you have an amber coloured caramel (this won't take long). To test if it's ready, turn off the heat and drop a little into a glass of very cold water. If it forms a hard ball, it's ready. If not, turn the heat back on and cook a little more. Then, as quickly as you can, turn off the heat, tip in the bicarb and beat with a wooden spoon until it's disappeared and the mixture is foaming. Scrape into the tin immediately - be careful, the mixture will be very hot.
- Leave the honeycomb in the tin for 1 hr-1 hr 30 mins until hard (it will continue to bubble).
- Line a baking sheet with parchment paper. Melt the chocolate in a small heatproof bowl over a pan of just simmering water.
- Snap the honeycomb into chunks and dip half of each piece into the chocolate. Drizzle with any remaining chocolate and a pinch of sea salt, if you like. Leave to set in the fridge for 1 hr.

CHOCOLATE-DIPPED HONEYCOMB
Steps:
- Gather the ingredients.
- Prepare a baking pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray . 8x8 pan or a 13x9 pan.
- Combine the sugar, corn syrup, honey, and water in a large saucepan. Stir the ingredients together until the sugar is completely moistened. Using a wet pastry brush, wipe the sides of the saucepan to remove any stray sugar crystals.

- As soon as the baking soda is incorporated, quickly and carefully pour the candy into the prepared baking pan.
- Allow it to cool and harden completely, then break it into small pieces.
- Combine the chocolate and shortening in a microwave-safe bowl. Microwave in 30 seconds spans, stirring in between, until the chocolate is completely melted.
- Using two forks, dip the individual pieces in the melted chocolate so that they are completely covered and place them back on the baking sheet.
- Repeat with the remaining honeycomb and refrigerate until the chocolate is set.
- Enjoy!

- Peppermint Fudge from Sweet Phi. Why We Love It: As a major peppermint fan, I’d likely cry happy tears of gratitude if someone gifted me a bag of this fudge.
- Chocolate Dipped Honeycomb from My Kitchen Love. Why We Love It: Before making this recipe, it had sadly been years since I’d munched on honeycomb. It’s light and airy while still giving a satisfying crunch, and this honeycomb is made extra special with a little dip in chocolate ganache.
- Sugared Cranberries from Wild Wild Whisk. Why We Love It: I’m going to say it: Drop. Dead. Gorgeous. Because they only show up in the store for a month or two, fresh cranberries are a treasure to behold.
- Turtle Fudge from The Beach House Kitchen. Why We Love It: This Turtle Fudge is the epitome of deliciousness. Bold words, I know, but this recipe lives up to the hype.
- Christmas Snack Mix from Chelsea’s Messy Apron. Why We Love It: There’s nothing better than a good old snack mix. It’s got everything I’ve ever wanted to receive in an edible present.
- Peanut Brittle from House of Nash Eats. Why We Love It: This is not the peanut brittle of your childhood that was capable of breaking a tooth. While it retains the old-fashioned version’s crisp and crunchy texture, you’re in no danger of having to pay the dentist a visit.
- Peppermint Hot Chocolate Shortbread Cookies. Why We Love It: These cookies are as Christmas-y as it gets. Chocolate shortbread plus chocolate ganache plus a peppermint candy coating.
- Skillet Cheddar and Jalapeño Cornbread from Foodie Crush. Why We Love It: While your first inclination might be to bake up sweet holiday treats for friends and family, nothing’s stopping you from surprising them with a savory delight.
- Cranberry White Chocolate Mini Bundt Cakes from Tutti Dolci. Why We Love It: Bundt cakes are great, but mini bundt cakes? That’s a whole ‘nother story. They’re similar to cupcakes—you get the dessert you want, all to yourself.
- Holiday Fruit & Nut Brittle from The Kitchn. Why We Love It: While some brittles are wonderfully specific with their ingredients (see the recipe for Peanut Brittle above), others lean into the fact that you can mix just about any fruit or nut into your sugar syrup and get a result that’ll be devoured in minutes.

- Place the pot on the heat with the sugar and golden syrup(or honey) and let the mixture first melt, then turn to goo. Turn up the heat to medium and let it simmer until the color of maple syrup — THIS TAKES 3 MINUTES, SET A TIMER!!! Take care not to overcook.
- Note: This is a recipe used widely around the world for many years and with many names such a Cinder Toffee in Wales, Hokey Pokey in the UK, Sea Foam, Fairy Candy, Molasses Puffs, and no doubt other names I am not familiar with.

- Melt the sugar and honey (you can add a tablespoon of water if you want, but it isn’t necessary) in a medium to large pot. Don’t use a small pot or pan because the “candy” will more or less quadruple in size later on.
- Keep on boiling the mixture until it turns golden amber or it reaches 150℃ on your sugar thermometer. I prefer to do the “drop test” – dip a spoon into the mixture and place a drop of sugar liquid into cold water. That drop of liquid needs to be hard a few seconds after it touches the cold water. If it’s still soft, keep boiling on low heat.
- When your sugar syrup is at the correct stage, take it off the heat and quickly add the baking soda and stir or whisk. The mixture will puff up immediately so be sure to have your prepared tray or tin close by (you can line the tray with lightly greased baking sheet or use a silicone mat, which is much easier).
