KILLER KALE PASTA

Killer Kale Pasta image

"I'm a huge kale fan. The texture and body it adds to this dish is spot-on."

Provided by Guy Fieri

Time 1h

Yield 6 to 8 servings

Number Of Ingredients 15

2 red bell peppers
2 tablespoons extra-virgin olive oil,
plus more for drizzling
2 medium shallots, diced
2 cloves garlic, minced
Kosher salt and freshly ground pepper
1 to 2 teaspoons red pepper flakes, plus more for topping
1/2 cup dry white wine
1 28-ounce can diced fire-roasted tomatoes
1 14-ounce can diced fire-roasted tomatoes
2 large bunches kale (2 1/4 to 3 pounds)
4 cups coarsely shredded rotisserie chicken (skin removed)
1 cup chicken stock (optional)
1 pound rigatoni
1 cup grated parmesan cheese (about 2 ounces)

Steps:

  • Place the bell peppers over the flame of a gas burner to char, turning, 3 to 4 minutes per side (or char the peppers under the broiler, turning, 5 minutes). Place in a bowl, cover with plastic wrap and allow the peppers to steam about 10 minutes. Once cool to the touch, remove the peppers from the bowl and pull off the charred skin and stems and remove the seeds. Slice and set aside until ready to use.
  • Set a large Dutch oven over medium-high heat. Add the olive oil, then the shallots and garlic; season with salt and pepper and cook until the garlic is fragrant and the shallots are translucent, 3 to 4 minutes. Add the red pepper flakes and wine and cook until most of the wine has evaporated, 3 to 5 minutes. Add both cans of tomatoes and the roasted red peppers. Mix well and bring to a steady boil, then reduce the heat so the sauce simmers.
  • Meanwhile, prepare the kale by removing and discarding the stems; tear the leaves into bite-size pieces. Fold the kale into the tomato sauce along with the chicken and toss to combine. Cover and cook until the kale has wilted, about 5 minutes. If the sauce seems dry, add the chicken stock 1/2 cup at a time. Continue cooking, covered, until the kale is tender, all the flavors have come together and the sauce is thick, 15 to 20 minutes. Taste and season with salt and pepper.
  • Meanwhile, bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions, 8 to 10 minutes. Reserve about 1 cup cooking water, then drain the pasta and add it directly to the Dutch oven with the finished sauce. Drizzle in some olive oil. Cook over low heat, tossing to coat everything, 2 to 3 minutes. (This allows the last cooking of the pasta to be done in the sauce.) Add a little of the reserved pasta water if needed. Serve the pasta in large bowls and top with spoonfuls of parmesan, more red pepper flakes and another drizzle of olive oil.

Categories     High Protein

Time 25m

Yield 4-6 serving(s)

Number Of Ingredients 6

1 lb angel hair pasta (but spaghetti, fettucine or tagliatelle work as well)
2 cups grated parmesan cheese (fresh is better)
5 large eggs
1/2 lb lean bacon or 1/3 lb pancetta
1 dash salt
1 pinch pepper

Steps:

  • Put large pot on to boil for pasta and cook pasta as directed.
  • Cut the bacon into 2" pieces and add to saute pan on medium.
  • Grate cheese.
  • Break eggs into large bowl and beat until smooth.
  • Add grated cheese to eggs and mix until a paste.
  • When pasta is "al dente", remove and drain.
  • Immediately add pasta to egg/cheese mixture and use tongs to rapidly toss, coating the pasta. (Don't worry about the raw egg, the hot pasta will cook it).
  • Add the bacon with about 1 teaspoon of drippings and continue to toss pasta until a creamy sauce evenly coats the pasta.
  • Serve and garnish with a sprinkle of cheese, fresh ground salt and pepper.
  • Watch your friends and family scrap the bowl!
  • Nice served with a salad and a crisp white wine!

SKILLET SPAGHETTI ALLA CARBONARA WITH KALE RECIPE

Skillet Spaghetti alla Carbonara with Kale Recipe image

We cook our pasta directly in the skillet (no big pot required!) and flavor it with bacon, black pepper, parmesan cheese, and kale, all in a creamy, egg-based sauce.

Provided by Yasmin Fahr

Categories     Dinner     Entree     Mains     Pasta

Time 30m

Yield 5

Number Of Ingredients 8

8 ounces bacon, pancetta, or guanciale, cut into 1/2-inch pieces
1 shallot, thinly sliced (about 1/4 cup)
3 cups chopped curly kale, stems discarded, leaves cut into 2-inch ribbons
Kosher salt and freshly ground black pepper
3 ½ cups homemade chicken stock or store-bought low-sodium chicken broth
1 pound spaghetti
4 eggs
1 cup freshly grated Parmigiano-Reggiano, plus more for finishing

Steps:

  • Heat bacon in a 12-inch skillet over medium heat and cook, stirring occasionally, until most of the fat is rendered and begins to crisp, about 5 minutes. Add the shallot and cook until fragrant and lightly softened, about 1 minute. Add the kale and cook, stirring, until the kale cooks down and begins to crisp, 3 to 4 minutes. Season to taste with salt and pepper. Transfer kale, bacon, and shallots to a bowl and set aside.
  • In the same pot, add the broth and pasta, adjust the heat to maintain a vigorous boil, and cook according to the package directions until al dente, stirring occasionally to ensure nothing sticks. While the pasta is almost done cooking, add the raw eggs, cheese and black pepper to the kale and bacon mixture. When the pasta is finished, remove from the heat, add the kale mixture to the pan, and vigorously stir with a wooden spoon until thickened and creamy. Season strongly with black pepper and serve immediately with more cheese and black pepper on the side. This Recipe Appears In One-Pot Wonders: Spaghetti alla Carbonara with Kale

PASTA CARBONARA INSPIRED BY THE PIONEER WOMAN

Pasta Carbonara Inspired by the Pioneer Woman image

Inspired by the amazing Pioneer Woman's recipe. I'm posting so I can make this again and again. I made it with spaghetti tonight but I think I'll try the mini lasagna- like noodles next time. Or something flat and long and wide. In the original recipe she uses heavy cream, less peas, regular onion, less bacon. This is the way I like it.

Provided by lolablitz

Categories     One Dish Meal

Time 25m

Yield 6 serving(s)

Number Of Ingredients 9

12 ounces pasta, Any Variety
10 pieces bacon (diced Small)
1 small vidalia onion, Diced Small
2 garlic cloves, Minced
3 whole eggs
3/4 cup grated parmesan cheese
3/4 cup half-and-half
salt & plenty black pepper
1 cup frozen peas

Steps:

  • Cook pasta according to package directions, adding the frozen peas in 2 minutes before the pasta is done cooking.
  • While the pasta is cooking, fry the bacon until just barely crisp. Remove from the pan and drain on paper towels. Pour off most of the bacon grease, leaving a tablespoon to cook the onions inches
  • Return the pan to the stove over medium-low heat and throw in the onions and cook until very soft. Then add the garlic. Cook for 3 minutes then set aside.
  • In a bowl, mix together eggs, Parmesan, half and half, and salt and pepper until smooth.
  • When the pasta and peas are done, reserve a cup or two of the pasta water. Drain the pasta and peas but do not rinse, then place them back into the pan you cooked it inches
  • While the pasta is still really hot, slowly drizzle in the egg mixture, stirring the pasta the whole time. The sauce will become thick and should coat the pasta. Splash in a little hot pasta water if needed for consistency.
  • Add the peas, bacon, and sauteed onion/garlic.
  • Add more pasta water to loosen the sauce if necessary, and salt and pepper to taste.
  • Serve immediately with extra Parmesan.
