Steps:
- In a small bowl, combine brown sugar, water, vanilla, and kosher salt, stirring to combine (don't worry that the sugar and salt won't all be dissolved). Set this at-the-ready, next to your stove, as this recipe goes really quickly.
- In a medium-large saucepan over medium heat, toast pecans for 2-3 minutes, stirring occasionally to prevent burning. When you begin to smell a lovely, nutty aroma, they're done.
- Quickly drizzle the sugar mixture into the pan, on top of the pecans, stirring the nuts as you drizzle. Stir constantly for about 15 seconds, until the pecans are thoroughly coated in the sugar mixture. Immediately remove from heat so they don't burn.
- Spread the pecans on a piece of parchment to cool. Once cooled, you can break the nuts apart, if needed.
- Enjoy immediately or store in an airtight container. The pecans will be slightly sticky at first, but the coating hardens further within a few hours.

- Place pecans in a shallow baking pan in a 250° oven for 10 minutes or until warmed. Grease a 15x10x1-in. baking pan with 1 tablespoon butter; set aside. , Grease the sides of a large heavy saucepan with remaining butter; add sugar, water, salt and cinnamon. Bring to a boil, stirring constantly to dissolve sugar. Cover; cook 2 minutes to dissolve any sugar crystals that may form on the sides of pan., Cook, without stirring, until a candy thermometer reads 236° (soft-ball stage). Remove from the heat; add vanilla. Stir in warm pecans until evenly coated. , Spread onto prepared baking pan. Bake at 250° for 30 minutes, stirring every 10 minutes. Spread on a waxed paper-lined baking sheet to cool.

Great candied pecans to put out during the holidays. Got this recipe from my mom. Not sure where it came from originally. I really like that this recipe doesn't call for any margarine or butter. It's bad enough that I'll sit down and eat handfuls of these...the least I could do is skip the butter too. :)

- Preheat oven to 300°F.
- Mix egg white and water together.
- whisk until fluffy (not stiff).
- Put pecans in large bowl, pour egg water mixture over them
- Stir to cover.
- Combine sugar, cinnamon and salt together.
- Pour over pecans, stir to cover.
- Spread pecans on a pan (use a silpat for easier cleanup!).
- Bake for 30-40 minutes stirring every 10 minutes.

- Toast pecans @ 225º for 15 minutes.
- Combine salt & sugar and spice into egg whites which have been stiffly beaten.
- Fold in pecans & coat well.
- Melt butter in 9 by 13 pan & spread in pecans.
- Mix pecans in butter until coated.
- Bake @ 325º for 30 minutes.
- Turn pecans in butter every 10 minutes until butter is gone.

PERFECTLY CANDIED PECANS
This is EXACTLY what I had been looking for. I have made a ton of candied nut recipes and nothing quite works for me. . .this one makes the cut! Feel free to use walnuts instead of pecans. They are heavenly as a snack, ask a housewarming gift or simply on top of a salad. This is a twist on a couple different recipes already here on Zaar.

- Preheat oven to 375 degrees.
- Mix sugar, salt, cinnamon and nutmeg in a small bowl and set aside.
- Saute butter and maple syrup in a large pan, and bring to a boil.
- Remove from heat. Add nuts and toss to coat.
- Transfer nuts to a rimmed baking sheet lined with aluminum foil.
- Sprinkle with sugar mixture over top of the nuts and toss gently to coat; DO NOT MIX too much because the sugar will dissolve and won't stick to the top of your nuts.
- Spread out the nuts so that they are not touching one another.
- Toast in oven for 5 minutes.

Fancy Schmancy BUT Easy Peasy... hehehe Use to dress up a cake, add to a filling between cake layers, top a sweet potato casserole or eat them as they are. These are beautiful and delicious.
