TASTY COLLARD GREENS

Tasty Collard Greens image

A classic recipe for collard greens that uses smoked turkey to add some flavor. Greens are simmered in chicken stock, then spiced with a dash of red chile flakes.

Provided by ANADRI

Categories     Side Dish     Vegetables     Greens

Time 2h30m

Yield 10

Number Of Ingredients 7

¼ cup olive oil
2 tablespoons minced garlic
5 cups chicken stock
1 smoked turkey drumstick
5 bunches collard greens - rinsed, trimmed and chopped
salt and black pepper to taste
1 tablespoon crushed red pepper flakes

Steps:

  • Heat olive oil in a large pot over medium heat. Add garlic, and gently saute until light brown. Pour in the chicken stock, and add the turkey leg. Cover the pot, and simmer for 30 minutes.
  • Add the collard greens to the cooking pot, and turn the heat up to medium-high. Let the greens cook down for about 45 minutes, stirring occasionally.
  • Reduce heat to medium, and season with salt and pepper to taste. Continue to cook until the greens are tender and dark green, 45 to 60 minutes. Drain greens, reserving liquid. Mix in red pepper flakes if desired. Use liquid to reheat leftovers.

SIMPLE AND FRESH COLLARD GREENS

Simple and Fresh Collard Greens image

A lot of people are averse to trying dark leafy greens, believe me, I was too, as they were always described as "bitter". Now that I have had them though I love them, and only eat them like this (not fully cooked to sogginess or in soups). You get a lot of the flavor of the greens themselves and they make a great side dish to a "meat and potatoes" meal. You can substitute any mix of braising/dark leafy greens for the collards.

Provided by The Easy Vegan

Categories     Collard Greens

Time 13m

Yield 1-3 serving(s)

Number Of Ingredients 4

1 cup collard greens, chopped
1/2 garlic clove, minced (optional)
nonstick cooking spray or 1 teaspoon oil
salt and pepper

Steps:

  • Chop your greens into 1 inch strips that are no longer than 4 or 5 inches long (or you'll be getting a mouthful of stringy greens!). (I like to cut down the middle of the leaf and then put one half on top of the other and chop into strips).
  • Rinse your greens (This is an important step! The water that stays on helps these cook to perfection).
  • Heat your skillet to medium and spray or add oil, and garlic if wanted. Then just add your greens (these will shrink down a lot so you can do it in a small pan) and stir just until all greens have just turned bright green, usually not more than 3~ minutes.
  • Turn up to medium-hot and fry for 30 more seconds or until greens are just tender.
  • Toss with salt and pepper to taste (for this amount I usually use about 1/4 teaspoon salt and 1/8 teaspoon pepper). Serve with your favorite entree :)!

SIMPLE BUT YUMMY COLLARD GREENS

Simple but yummy collard greens image

I wanted to expand my meal plans..and I knew my hubby loves collard greens but I had never cooked or tasted them ever before..si got some and decided to surprise hubby..a friend of mine came over..and helped me w/this the first time I made them( good thing she did..) I have variated it a bit since then..I even fried some up...

Provided by Cindy Rice

Categories     Vegetables

Time 1h30m

Number Of Ingredients 5

A bunch collard greens
1/2 onions, vidalia, peeled and cut in half again
1/4 lb thick sliced& diced bacon
water
salt

Steps:

  • 1. Dice up your bacon..put in fry pan..but do not turn on stove yet...reserve about a quarter of the dices up raw bacon and set aside..( or just leave it in the pan till you need it)..
  • 2. Next...get out your collard greens and wash them w/cold water...
  • 3. Lay your collard greens flat...( 1 at a time).. Take a knife..and run it down each side of the vein,( rib ), to cut rib out..put washed, de-ribbed collards in a pan..( any sz will do depending on how much collards you are preparing.. I usually do 1 bunch),
  • 4. Fill w/water..to just about a 1/2 inch to an inch over the collards..
  • 5. Peel your onion..cut in half..cut into quarters...place 2 quarters of the onion in the pan w/the collards..sprinkle a little salt in the pan.
  • 6. Turn on burner to high and bring to boil..once boiling , continue to boil till bright green..
  • 7. Place your reserved quarter of raw bacon in w/the collards..continue to boil..
  • 8. Continue till dark green..( at this point you may drain or not drain being careful not to lose onion and chunk or bacon...) If ya do drain..add more water again..and continue to boil..
  • 9. Turn on your fry pan w/bacon in it..fry till done, but not crisp...
  • 10. Once bacon is done...carefully pour all diced up bacon and bacon grease..( all of it) ..into the pan w/the boiling collard greens..turn burner down making sure that it will stay simmering..put cover on pan and simmer for another 1/2 hr or so..the longer you simmer..the more tender it will be..
  • 11. When you feel they are done....turn burner off and drain ...put in bowl with butter salt and pepper if desired..
  • 12. With a knife and fork..slice through collards so they are not just a huge chunk...serve with butter, salt and pepper( or however you like it ), serve and enjoy...
  • 13. NOTE: after this preperation, you may use it any way you like..if you wish to stir fry it up w/some seasonings or stir it into a sauce you now may do so..:)
