3 garlic cloves, crushed
2 tbsp olive oil
3 tbsp cider vinegar
1 tbsp paprika
1 tbsp Worcestershire sauce
2 tsp celery salt
4 tbsp pepper sauce (we used Frank's hot sauce)
3 tbsp honey
1 ½kg chicken wings, halved at the joint

Steps:

  • In a large bowl, mix together the garlic, olive oil, cider vinegar, paprika, Worcestershire sauce, celery salt, hot sauce, honey and a couple of cracks of black pepper. Add the chicken wings and toss around to make sure they're fully covered in the marinade. If you have time, leave the wings to marinate for a couple of hrs in the fridge or ideally overnight.
  • Heat oven to 180C/160C fan/gas 4. Drain and reserve the marinade, then spread the wings out on a very large baking tray. Bake for 30 mins, then pour off the excess oil, add the reserved marinade and toss well. Increase oven to 200C/180C fan/ gas 6. Return to the oven and cook for a further 30 mins, tossing a few times to coat in the glaze as they cook. They should be sticky and glazed with most of the marinade evaporated. Serve on a large platter alongside other party snacks.

1 cup unbleached all-purpose flour
2 teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Make the blue cheese dip: In a small bowl, stir together blue cheese, mayonnaise, sour cream and lemon juice. Thin with milk until spoonable. Season with salt and pepper and set aside. (Dip keeps for up to 4 days in the refrigerator; thin as needed with more milk.)
  • Place an oven rack 4 to 6 inches from the broiler. Heat the broiler.
  • Prepare the chicken: Pat the wings dry. If the wings are not yet broken down into three pieces, cut each wing at the two joints. To do so, flip the wing over and wiggle each part to find the joint. Cut at the joint hinge to separate the meaty drumette from the wingette (also known as the flat) and the wingette from the smaller wing tip.

  • Transfer the wings to the hot sauce-mixture and toss to coat. Using a slotted spoon, return the wings to the baking sheet, leaving extra sauce behind.   • If you plan ahead, lay the wings on a rack on a rimmed baking tray and let them dry uncovered in the fridge overnight. Alternatively, pat them dry with paper towels.
  • Preheat the oven to 250°F/120°C (all oven types). Put one oven shelf in the lower quarter of the oven and one in the top quarter.
  • Line the tray with foil. Spray the rack on the baking tray with oil.
  • Place the wings in a large bowl. Sprinkle over baking powder and salt. Use hands to toss well (or shake in ziplock bag) to coat wings evenly.
  • Place the wings skin side up on the rack (ok if snug, they shrink). Bake on the lower shelf in the oven for 30 minutes.

3/4 c sour cream
2 Tbsp milk

Vegetable Oil for frying
1 stick butter - 1/2 cup or 8 tablespoons
½ cup Louisiana style hot sauce - Franks is very popular though I use Valentina HOT
2 tablespoons apple cider vinegar or white vinegar
1 teaspoon Worcestershire sauce
For Serving. Blue cheese dressing or ranch dressing (celery sticks)

Steps:

  • Stir together the flour, seasonings and salt and pepper in a large bowl.
  • In a separate bowl, beat together the egg and buttermilk until combined.
  • Dip each chicken piece into the egg mixture, then into the seasoned flour mixture. Repeat, then set onto a plate to rest for 10 minutes.
  • Heat several inches of frying oil heated to 350 degrees F in a large pot or Dutch oven. Do not boil.
  • Fry the boneless wings for 5-6 minutes, or until golden brown and cooked through. They should register 165 degrees F internally when measured with a meat thermometer.
  • Remove and set onto a paper towel lined plate to drain excess oil.
  • Heat the butter, hot sauce, vinegar and Worcestershire sauce in a sauce pan until the butter melts. Whisk vigorously until the sauce thickens up.
  • Slather the boneless wings with homemade Buffalo sauce and serve with blue cheese dressing or ranch dressing and celery sticks on the side.

2 bay leaves
1 tablespoon granulated garlic
1 tablespoon dried oregano
1 tablespoon dried thyme
1 head cauliflower, cut into wing-sized pieces
3 tablespoons ground flax meal
1/2 cup hot water
1 1/2 cups gluten-free flour blend (or regular flour if you prefer)
1 teaspoon granulated garlic
1 teaspoon dried oregano
1 teaspoon ground black pepper
1 teaspoon salt
1 teaspoon dried thyme
1 cup oat milk
Oil, preferably canola, for frying
Hot sauce, ranch dressing, carrots and celery, for serving

Steps:

  • For the cauliflower: Fill a large pot with water. Add the bay leaves, granulated garlic, oregano and thyme to the water and bring to a boil. Add the cauliflower pieces and boil until tender but not mushy, about 10 minutes. Drain the cauliflower and set aside.
  • Meanwhile, make the batter: Add the flax meal to the hot water in a small bowl and let sit for about 5 minutes.
  • In a separate bowl, mix the flour, granulated garlic, oregano, pepper, salt and thyme. Add the oat milk and flax meal mix and whisk until well combined.
  • When the cauliflower is cool enough to handle, toss it into the batter.
  • Heat a pan for frying over medium-high heat and fill with about an inch of frying oil. Bring to 350 to 375 degrees F.
  • Add the battered cauliflower and cook until golden brown. Strain the cauliflower and toss in your favorite hot sauce. Serve with ranch dressing, carrots and celery.
  • Enjoy hot!

12 whole chicken wings
3 ounces unsalted butter
1 small clove garlic, minced
1/4 cup hot sauce
1/2 teaspoon kosher salt

Steps:

  • Place a 6-quart saucepan with a steamer basket and 1-inch of water in the bottom, over high heat, cover and bring to a boil.
  • Remove the tips of the wings and discard or save for making stock. Using kitchen shears, or a knife, separate the wings at the joint. Place the wings into the steamer basket, cover, reduce the heat to medium and steam for 10 minutes. Remove the wings from the basket and carefully pat dry. Lay the wings out on a cooling rack set in a half sheet pan lined with paper towels and place in the refrigerator for 1 hour.
  • Preheat the oven to 425 degrees F.
  • Replace the paper towels with parchment paper. Roast on the middle rack of the oven for 20 minutes. Turn the wings over and cook another 20 minutes or until meat is cooked through and the skin is golden brown.
  • While the chicken is roasting, melt the butter in a small bowl along with the garlic. Pour this along with hot sauce and salt into a bowl large enough to hold all of the chicken and stir to combine.
  • Remove the wings from the oven and transfer to the bowl and toss with the sauce. Serve warm.

  • Preheat oven to 350 degrees.
  • Season chicken to taste.
  • Heat oil in large skillet until hot.
  • Fry each piece for about 4 minutes on each side or until done and set on paper towel to drain excess oil.
  • Meanwhile, mix hot sauce and melted butter together.
  • Coat each piece of chicken in sauce and place on a cookie sheet.
  • Drizzle remaining hot sauce mixture over the chicken and bake for 10 minutes.
