2 semi-ripe avocados
2 tablespoons torn fresh flat-leaf parsley leaves
1 mini cucumber, sliced
1/2 small red onion, thinly sliced
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 tablespoon honey
1/4 teaspoon ground cumin
1 lime, juiced (about 2 tablespoons)

Steps:

  • For the salad: Peel the avocados, cut into 1-inch chunks and put all but 2 chunks into a large mixing bowl for the salad. Put the remaining 2 chunks into a small mixing bowl and set aside for the dressing.
  • Add the parsley, cucumber and onion to the avocado chunks in the large mixing bowl. Sprinkle generously with salt and pepper.
  • For the dressing: Mash the reserved 2 chunks of avocado with a fork until smooth. Add the oil, honey, cumin and lime juice and whisk until smooth.
  • Pour the dressing over the avocado salad and gently toss with your hands to combine. Serve immediately.

1/2 avocado (I use Hass)
2 ounces chunk solid white tuna packed in water
1 -3 tablespoon flax seed (more seeds increases crunch and fiber factor)
1/2 medium cucumber, peeled and chopped
salt and pepper
1 teaspoon fresh lemon juice (optional)
2 teaspoons extra virgin olive oil (optional)

Steps:

  • Cut avocado in half. Scoop out the flesh of one half into a bowl or onto a plate.
  • Mash the avocado up with a fork until it takes on a creamy, spreadable texture.
  • Peel cucumber and then chop as finely or coarsely as you wish(the bigger the chunks, the harder it will be to mix).
  • Dump tuna, cucumber, avocado, flax seeds, and spices into medium-sized mixing bowl, and mix until well combined.
  • Then you can either eat the salad right away, or chill for later! I usually pack it in a lunchbox with a few ice packs and have it for a snack when I'm out running errands.
  • Feel free to experiment with the types of veggies, spices, or cold meat you use. It's the avocado that makes the dish!
  • If you are planning on making the dish ahead of time, adding in the optional olive oil and lemon juice will help preserve the avocado and also add some nice flavors.

3 to 4 oz halloumi cheese, optional, cut into small cubes
10-15 basil leaves, gathered together and thinly sliced (chiffonade)
Early Harvest Greek extra virgin olive oil (only if using halloumi)
1 lemon, zested and juiced
1/4 cup Early Harvest Greek extra virgin olive oil
1 garlic clove, minced
1 1/2 tsp za'atar spice, more to sprinkle

Steps:

  • Prepare the vinaigrette. Place vinaigrette ingredients in a mason jar, cover tightly and shake until well-combined. Set aside for now (you'll want to give the vinaigrette another shake before using).
  • In a salad bowl, add all the salad ingredients except the halloumi cheese and basil. Pour the vinaigrette and give the salad a gentle toss. Taste and adjust seasoning, add a sprinkle more of za'tar spice. Add the basil, and give one very quick and gentle toss.
  • If adding halloumi cheese. Combine cheese cubes and about 1 to 2 tbsp or so extra virgin olive oil in a small bowl. Toss to coat the cheese with the EVOO. Heat an indoor griddle over medium heat. Add cheese cubes and grill for 2-3 minutes, turning over on all sides, until lightly browned and nice char marks appear (it should be crisp on the outside and nice and melty on the inside).
  • Add the grilled Halloumi to the salad and serve immediately.

Steps:

  • To cut avocados, cut each fruit in half and remove the pit. I abruptly stick sharp end of the knife into the pit and twist it.
  • Then cut each half into 2-3 strips (depends how wide), peel and slice. This way avocado slices do not turn into a mush.

  • Roast the beets. Note: I like to do this step up to a few days in advance so that the beets can chill before layering into the salad. Place each beet on a piece of foil and drizzle generously with olive oil and pinches of sea salt and freshly ground black pepper. Wrap the beets in the foil and roast on a baking sheet for 35 to 60 minutes, or until soft and fork-tender. The time will depend on the size and freshness of the beets.   • Assemble the salad with the watercress, roasted beets, and roasted carrots. Drizzle with half the dressing, and top with the avocado, pepitas, and microgreens. Drizzle with more dressing and serve extra dressing on the side. Season to taste with salt and pepper, if desired.
