Steps:
- For the salad: Peel the avocados, cut into 1-inch chunks and put all but 2 chunks into a large mixing bowl for the salad. Put the remaining 2 chunks into a small mixing bowl and set aside for the dressing.
- Add the parsley, cucumber and onion to the avocado chunks in the large mixing bowl. Sprinkle generously with salt and pepper.
- For the dressing: Mash the reserved 2 chunks of avocado with a fork until smooth. Add the oil, honey, cumin and lime juice and whisk until smooth.
- Pour the dressing over the avocado salad and gently toss with your hands to combine. Serve immediately.

- Cut avocado in half. Scoop out the flesh of one half into a bowl or onto a plate.
- Mash the avocado up with a fork until it takes on a creamy, spreadable texture.
- Peel cucumber and then chop as finely or coarsely as you wish(the bigger the chunks, the harder it will be to mix).
- Dump tuna, cucumber, avocado, flax seeds, and spices into medium-sized mixing bowl, and mix until well combined.
- Then you can either eat the salad right away, or chill for later! I usually pack it in a lunchbox with a few ice packs and have it for a snack when I'm out running errands.
- Feel free to experiment with the types of veggies, spices, or cold meat you use. It's the avocado that makes the dish!
- If you are planning on making the dish ahead of time, adding in the optional olive oil and lemon juice will help preserve the avocado and also add some nice flavors.

- Prepare the vinaigrette. Place vinaigrette ingredients in a mason jar, cover tightly and shake until well-combined. Set aside for now (you'll want to give the vinaigrette another shake before using).
- In a salad bowl, add all the salad ingredients except the halloumi cheese and basil. Pour the vinaigrette and give the salad a gentle toss. Taste and adjust seasoning, add a sprinkle more of za'tar spice. Add the basil, and give one very quick and gentle toss.

- To cut avocados, cut each fruit in half and remove the pit. I abruptly stick sharp end of the knife into the pit and twist it.
- Then cut each half into 2-3 strips (depends how wide), peel and slice. This way avocado slices do not turn into a mush.

- Roast the beets. Note: I like to do this step up to a few days in advance so that the beets can chill before layering into the salad. Place each beet on a piece of foil and drizzle generously with olive oil and pinches of sea salt and freshly ground black pepper. Wrap the beets in the foil and roast on a baking sheet for 35 to 60 minutes, or until soft and fork-tender. The time will depend on the size and freshness of the beets. Remove the beets from the oven, remove the foil, and set aside to cool. When they are cool to the touch, peel the skins. I like to hold them under running water and slide the skins off with my hands. Chill until ready to use, then slice into halves or quarters.
- Roast the carrots. Raise the oven temperature to 450°F and line a baking sheet with parchment paper. Roast the carrots for 15 to 20 minutes, or until tender. Remove from the oven and slice them in half.
- Assemble the salad with the watercress, roasted beets, and roasted carrots. Drizzle with half the dressing, and top with the avocado, pepitas, and microgreens. Drizzle with more dressing and serve extra dressing on the side. Season to taste with salt and pepper, if desired.
