This recipe appeared in the Chicago Tribune on 4/17/02. The dish has turned out to be extremely popular but be advised that it's very spicy when the recipe proportions are adhered to. Unless you want a super-hot dish, I recommend cutting back on the ground red pepper in the marinade. It may also be a good idea to remove the seeds and veins from the jalapeño chile in the sauce.

1 1/2 lbs boneless skinless chicken, cut in 1 inch cubes
1 cup plain yogurt
2 tablespoons lemon juice
2 teaspoons ground cumin
2 teaspoons ground red pepper
2 teaspoons black pepper
1 teaspoon cinnamon
1 teaspoon salt
1 piece minced ginger (1-inch long)
6 bamboo skewers (6-inch)
1 tablespoon unsalted butter
2 garlic cloves, minced
1 jalapeno chile, minced
2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon garam masala (buy in Indian market)
1/2 teaspoon salt
1 (8 ounce) can tomato sauce
1 cup whipping cream
1/4 cup chopped fresh cilantro

Steps:

  • Soak bamboo skewers in water.
  • Thread chicken on skewers, and marinate (in the refrigerator) for an hour or so.
  • Discard marinade.
  • For sauce, melt butter on medium heat.
  • Add garlic & jalapeno; cook 1 minute.
  • Stir in coriander, cumin, paprika, garam masala & salt.
  • Stir in tomato sauce.
  • Simmer 15 minutes.
  • Stir in cream; simmer to thicken- about 5 minutes.
  • Grill or broil chicken, turning occasionally, to cook through- about 8 minutes.
  • Remove chicken from skewers; add to sauce.
  • Simmer 5 minutes.
  • Garnish with cilantro Serve with basmati rice, naan or pita bread.
  • Note: You can make your own garam masala. McCormick also makes garam masala; it's available in super markets.

1 whole chicken (3 to 4 pounds), cut into 10 pieces
Kosher salt and freshly cracked black pepper
1 cup plain yogurt
2 tablespoons smoked paprika
1 tablespoon ground coriander
1 tablespoon ground cumin
2 teaspoons cayenne pepper
1 teaspoon lemon zest
1/2 teaspoon ground cinnamon
3 cloves garlic, minced
One 1-inch piece ginger, peeled and grated
2 tablespoons vegetable oil
2 tablespoons unsalted butter
2 cloves garlic, minced
1 large onion, sliced
1 tablespoon tomato paste
1 tablespoon smoked paprika
2 teaspoons garam masala
One 14.5-ounce can fire-roasted diced tomatoes, such as Muir Glen
1 tablespoon red wine vinegar
1/2 cup heavy cream
1/4 cup chopped fresh cilantro

Steps:

  • For the chicken and marinade: Sprinkle the chicken pieces with salt and pepper. Combine the yogurt with the paprika, coriander, cumin, cayenne, lemon zest, cinnamon, garlic and ginger in a mixing bowl. Mix together well then pour into a resealable plastic bag. Add chicken pieces and shake around to coat all the pieces evenly. Place in the refrigerator and marinate for 1 hour.
  • Heat a grill to high. Wipe down the grates with an oil-blotted paper towel to create a nonstick surface. Remove the chicken from the marinade and wipe off any excess. Grill the chicken pieces until well-marked, 3 to 4 minutes per side. Remove to a plate and set aside.
  • For the sauce: Set a Dutch oven over medium heat. (Alternatively, you can cook in a pressure cooker. Simply cut the cooking time in half and cook over medium heat with medium pressure.) Coat with the oil and add the butter. Add the garlic and onions. Cook until translucent and fragrant, 3 to 4 minutes. Add the tomato paste, paprika and garam masala. Cook for 2 to 3 minutes to toast the spices and cook the tomato paste. Add the crushed tomatoes, vinegar and grilled chicken pieces. Stir well and simmer until the chicken is tender, 25 to 30 minutes. Finish the sauce with the heavy cream. Season with salt and pepper. Garnish with the cilantro.
  • Wine paring for meal: dry Riesling or sparkling wine

Chicken Tikka Masala is thought to have been created by a Bangladeshi chef in Glasgow in the 1960s. It's a spicy, tomato-based dish seasoned with garlic, ginger, fenugreek and garam masala. In this recipe we used fenugreek leaves for their nutty and slightly minty flavor. If you can't find them, substitute dried mint leaves and a pinch of ground fenugreek. Garam masala is a popular Indian spice blend that usually includes black and white pepper, cloves, cinnamon, mace, cardamom, bay, cumin and coriander. It's pretty easy to find in your local grocery store and most national spice companies.

1 tablespoon finely grated ginger
4 teaspoons kosher salt

Steps:

  • For the chicken marinade: Whisk together the yogurt, ginger, salt, chili powder, garam masala, pepper, turmeric and garlic in a large bowl until combined. Toss the chicken in the spiced yogurt marinade until evenly coated. Wrap tightly with plastic wrap and refrigerate at least 3 hours and up to 24. (Overnight works best.)
  • For the sauce: Melt the ghee in a large Dutch oven or wide heavy pot over medium heat. Add the onions and serrano, season with 1 teaspoon salt and cook, stirring occasionally, until the onions are golden and beginning to caramelize, 8 to 10 minutes. Add the ginger and garlic and cook, stirring, until very fragrant and the ginger starts to turn golden and sticks to the bottom of the pot, 2 to 3 minutes. Add the fenugreek leaves, garam masala, chili powder and paprika and cook, stirring occasionally, until very fragrant, about 1 minute. Add the tomatoes, breaking them up into pieces with a spoon, and bring to a boil. Reduce the heat and simmer uncovered, stirring occasionally, until the sauce has reduced by half and the tomatoes are very tender, about 30 minutes.
  • Let the hot sauce cool for about 5 minutes or so, then transfer it to a blender filling no more than halfway. (If your blender is small, you may need to work in batches.) Remove the center cap from the lid and place it on the blender. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Add 1/4 cup heavy cream and puree until creamy. Pour into a clean pot and bring to a simmer. Season with salt.
  • Meanwhile, position a rack directly under the broiler and preheat to high. Line a rimmed baking sheet with foil and set a wire rack inside.
  • Arrange the chicken in a single layer on the rack. Broil until the chicken starts to brown in spots, 3 to 6 minutes per side (it will not be cooked through). Remove from the broiler. When cool enough to handle, cut the chicken into 1-inch pieces. Add the chicken to the simmering sauce, cover and cook until the chicken is cooked through, 8 to 10 minutes.
  • Top the chicken and sauce with cilantro. Serve with rice and naan.

Steps:

  • For the chicken marinade: Slice the chicken into bite-sized chunks. Combine the cubed chicken with the yogurt, lemon juice, ginger, garam masala, salt, paprika, turmeric and garlic and stir until well-coated. Cover and refrigerate for at least 1 hour, or up to overnight.
  • Preheat a tandoor (clay) oven or grill.
  • Place the marinated chicken pieces on skewers, then place them in the tandoor oven. Cook until cooked well, about 15 minutes.
  • For the sauce: Heat the oil in a large pot over medium heat, then add coriander and cumin, followed by the garlic, onions, ginger and salt to taste. Cook, stirring occasionally, until golden brown, then add the garam masala, paprika and turmeric and stir constantly until the spices are fragrant, about 30 seconds. Stir in the tomato puree and 1 1/4 cups of water, then bring to a boil and cook for about 15 minutes.
  • Pour in the cream. Remove the chicken from the skewers and add to the sauce, cooking for another 5 minutes, then finish with the fenugreek leaves. Garnish with cilantro and serve over rice or alongside naan bread. Enjoy!

  • For the marinade and chicken: In a bowl, blend the yogurt, lemon juice, cayenne, cumin, gingers, cinnamon, salt as needed and pepper. Once well mixed, add the chicken and allow the meat to marinate for at least 30 minutes. Do not over marinate.
  • For the sauce: Melt the butter in a large heavy skillet over medium heat. Saute the garlic and jalapeno for 1 minute. Season with cumin, salt and paprika. Stir in the tomato puree, heavy cream and sour cream. Simmer on low heat until the sauce thickens, about 20 minutes.
  • Prepare a grill to medium-high heat.
  • Thread the chicken on the skewers. Grill the chicken on the first side for 3 to 4 minutes, then flip and repeat cooking on the second side. Once cooked on the second side, brush both sides with the prepared sauce. Allow the sauce to warm and then serve, garnishing with greens of choice.

4 tbsp vegetable oil
25g butter
4 onions, roughly chopped
6 tbsp chicken tikka masala paste (use shop-bought or make your own - see recipe, below)
2 red peppers, deseeded and cut into chunks
8 boneless, skinless chicken breasts, cut into 2.5cm cubes
2 x 400g cans chopped tomatoes
4 tbsp tomato purée
2-3 tbsp mango chutney
150ml double cream
150ml natural yogurt
chopped coriander leaves, to serve

Steps:

  • Heat the vegetable oil and butter in a large, lidded casserole on the hob, then add the onions and a pinch of salt. Cook for 15-20 mins until soft and golden.
  • Add the tikka masala paste and peppers, then cook for 5 mins more to cook out the rawness of the spices.
  • Add the chicken breasts and stir well to coat in the paste. Cook for 2 mins, then tip in the chopped tomatoes, tomato purée and 200ml water. Cover with a lid and gently simmer for 15 mins, stirring occasionally, until the chicken is cooked through.
  • Remove the lid, stir through the mango chutney, double cream and natural yogurt, then gently warm through. Season, then set aside whatever you want to freeze. I probably get more requests for Indian food than any other ethnic cuisine, so I was very excited to be posting this recipe for chicken tikka masala; until I found out it's actually a British recipe. This is usually done with heavy cream, but I like to use coconut milk instead; the subtle sweetness it provides works beautifully with the spices in the dish. Serve with steamed rice.

1 tablespoon vegetable oil
2 teaspoons kosher salt

Steps:

  • Place chicken in a bowl and drizzle vegetable oil over chicken; toss to coat.
  • Whisk kosher salt, garam masala, ground cumin, ground coriander, smoked paprika, ground turmeric, black pepper, cayenne pepper, and cardamom together in a small bowl. Season chicken with spice mixture and turn to coat evenly.
  • Melt clarified butter in a large, heavy skillet over high heat. Cook chicken thighs in hot butter until browned on all sides, 5 to 10 minutes. Transfer chicken to a plate. When cool enough to handle, cut chicken into bite-size pieces.
  • Reduce heat under the skillet to medium-high. Stir onion into skillet; saute until onion softens and turns translucent, 5 to 6 minutes. Add tomato paste and stir. Saute until paste caramelizes, about 5 minutes. Stir garlic and ginger into tomato-onion mixture and cook until fragrant, about 1 minute.
  • Pour the crushed tomatoes into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Pour in coconut milk and chicken broth; bring to a simmer, reduce heat to medium low, and cook, stirring occasionally, until flavors blend and sauce is slightly reduced, about 15 minutes.
  • Stir chicken, any accumulated juices from the chicken, cilantro, and red pepper flakes into tomato mixture; bring to a simmer, reduce heat to medium-low, and cook until chicken is cooked through and tender, 10 to 15 minutes. Season with salt and black pepper.

2 teaspoons garam masala
2 teaspoons paprika

1 pound skinless, boneless chicken breast - cut into 1-inch strips
3 tablespoons vegetable oil
1 teaspoon cumin seeds
1 large onion, chopped
3 cloves garlic, minced
1 tablespoon grated fresh ginger
2 green chile peppers, minced
2 Roma tomatoes, diced
½ cup tomato paste
¼ cup water
1 teaspoon garam masala
½ teaspoon ground coriander
½ teaspoon ground turmeric
½ cup heavy whipping cream
½ teaspoon salt, or to taste
½ bunch cilantro for garnish

Steps:

  • Combine yogurt, 2 teaspoons garam masala, paprika, black pepper, 1/2 teaspoon salt, cayenne pepper, and 1/2 teaspoon coriander in a large bowl. Add chicken strips and toss to coat. Cover and marinate in the refrigerator for 2 hours.
  • Preheat oven to 450 degrees F (230 degrees C). Grease a baking sheet.
  • Place chicken strips on the prepared baking sheet, leaving space between each piece, and bake in the preheated oven until browned and no longer pink inside, about 10 minutes. Remove and set aside.
  • Heat vegetable oil in a large skillet over medium heat. Cook and stir cumin seeds until lightly toasted and aromatic, about 3 minutes. Add onion; cook and stir until onion begins to soften, 4 to 5 minutes. Stir in garlic, ginger, and green chiles and continue to cook until onion is browned, 15 to 20 minutes. Cook and stir tomatoes, tomato paste, and water into onion mixture until tomatoes begin to break down and incorporate into the onion mixture, about 10 minutes.
  • Cook and stir 1 teaspoon garam masala, 1/2 teaspoon coriander, and turmeric into the tomato mixture. Mix in the cooked chicken, add cream, and stir to coat. Cover and let simmer for 10 minutes. Season with 1/2 teaspoon salt and garnish with cilantro.

3 tablespoons Ginger-Garlic Paste, recipe follows (or 1 tablespoon grated fresh ginger and 3 cloves garlic put through a garlic press or finely minced)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1 pound boneless, skinless chicken thighs, poked with a fork, and cut into large bite-sized chunks
2 teaspoons olive oil
3 tablespoons butter
1/3 cup Ginger-Garlic Paste, recipe follows (or 6 cloves garlic and 2-inch thumb ginger minced)
2 serrano peppers, minced (seeds removed if you don't want it spicy)
2 tablespoons tomato paste
1 teaspoon garam masala
2 teaspoons paprika
8 Roma tomatoes, diced
1 1/2 teaspoons kosher salt
1 to 2 cups water
Oil, for grilling
1 tablespoon dried fenugreek leaves (optional)
1/2 cup heavy cream
Minced fresh cilantro, for garnish
Cooked rice, naan, or crusty piece of bread, for serving
1/2 cup cloves garlic, whole
1/2 cup fresh ginger, peeled, cut into 1/2-inch slices
1/4 cup canola oil

Steps:

  • For the marinade: In a large bowl, mix together the marinade ingredients. Add the chicken and toss to coat. Marinate at least 30 minutes, or in the refrigerator up to overnight.
  • For the sauce: When you're ready to make the curry, place a large skillet over medium heat and add the olive oil and butter. When the butter has melted, add the Ginger-Garlic Paste and serrano peppers. Saute until lightly browned around the edges. Add the tomato paste and cook until the tomato has darkened in color, about 3 minutes. Add the garam masala and the paprika and saute for about 1 minute to draw out their flavors.
  • Add the tomatoes, salt, and 1 cup water. Bring to a boil, turn down to a simmer, and cook until thickened, about 20 minutes. You may need more water depending on how much liquid the tomatoes give off.
  • Meanwhile, fire up your grill. When it is nice and hot, lightly brush it with oil. Place the chicken on the grill, shaking off some of the excess marinade. Cook until it's charred, about 2 minutes on each side. (Don't worry that the chicken will still be a little uncooked, it finishes cooking in the sauce).
  • Pour the sauce into a blender or food processor, or use an immersion blender, and process until smooth. Pour back into the skillet and bring back up to a boil. Add the chicken and fenugreek leaves, if using. Take the heat down to a simmer and cook for about 10 minutes. Add the cream and stir through. Garnish with minced fresh cilantro, and serve over rice, with naan, or a crusty piece of bread!
  • Throw the garlic, ginger, and canola oil in a mini-food processor and let it go until it forms a semi-smooth paste. There will still be tiny little pieces in there, but overall, it should resemble a paste.
  • Save what you don't use in a small glass jar. It should last in the fridge for 2 to 3 weeks. It's a delicious addition to marinades, pasta sauces, stir fry sauces, slow-cooker recipes, gravy etc. We always had a jar of this stuff in our fridge growing up.

1 small onion (minced)
1 tbsp fresh ginger (grated)
3 cloves garlic (crushed)
1 1/2 cups crushed tomatoes
4 oz fat free yogurt (I used Chobani)
1/2 cup 1% milk
1 tbsp cumin
1 tbsp garam masala
1 tsp turmeric (optional)
1/2 tbsp chili powder
salt to taste
16 oz 2 boneless chicken breasts, cut into bite sized pieces
4 tbsp fresh cilantro (or to taste)

Steps:

  • Heat oil in a large heavy skillet over medium heat. Add the onions and cook until golden.
  • Add the crushed ginger, stir for a few minutes then add the garlic and cook another minute. Add cumin, garam masala, turmeric, chili powder, and salt; mix well until fragrant, about 2 minutes.
  • Stir in tomatoes, yogurt and milk. Simmer on low heat until sauce thickens, about 10 minutes.
  • Add chicken and simmer for 10 - 15 minutes or until cooked through.
  • Add a generous amount of chopped cilantro and serve with Bamati Rice or Naan.

4 tablespoons full fat natural yoghurt
2 tablespoons tandoori curry paste
50 g butter
2 onions, sliced
3 garlic cloves, crushed

1/2 teaspoon turmeric
1 teaspoon garam masala

  • Place the chicken in a bowl with the yoghurt & tandoori paste and stir. Marinate for at least 15 minutes, or covered in the overnight in the fridge.
  • Preheat the grill to high. Take the chicken out of the marinade(reserving the liquid for later) and spread over a baking sheet. grill for 6 minutes each side until lightly charred.
  • Melt the butter in a casserole dish or large frying pan over a low heat and soften the onions for 10 minutes , stirring occasionally until just golden.
  • Stir in the garlic, ginger, bay leaves, salt and all the spices.Cook for 1-2 minutes until the spices release their aroma. Stir in the passata, reserved yoghurt marinade and the water.Simmer very gently fro 5 minutes until the sauce thickens until sauce thickens, adding extra water should it get to thick.Stir in the cooked chicken.
  • Serve with basmati rice or naan bread.

Steps:

  • This dish is best when prepared with whole-milk yogurt, but low-fat yogurt can be substituted. For a spicier dish, do not remove the ribs and seeds from the chile. If you prefer, substitute 2 teaspoons ground coriander, 1/4 teaspoon ground cardamom, 1/4 teaspoon ground cinnamon, and 1/2 teaspoon ground black pepper for the garam masala. Add garlic, ginger, chile, tomato paste, and garam masala; cook, stirring frequently, until fragrant, about 3 minutes. Add crushed tomatoes, sugar, and salt; bring to boil. Reduce heat to medium-low, cover, and simmer for 15 minutes, stirring occasionally. Stir in cream and return to simmer. Remove pan from heat and cover to keep warm.
  • While sauce simmers, adjust oven rack to upper-middle position (about 6 inches from heating element) and heat broiler. Using tongs, dip chicken into yogurt mixture (chicken should be coated with thick layer of yogurt) and arrange on wire rack set in foil-lined rimmed baking sheet or broiler pan. Discard excess yogurt mixture. Broil chicken until thickest parts register 160 degrees on instant-read thermometer and exterior is lightly charred in spots, 10 to 18 minutes, flipping chicken halfway through cooking.
  • Let chicken rest 5 minutes, then cut into 1-inch chunks and stir into warm sauce (do not simmer chicken in sauce). Stir in cilantro, adjust seasoning with salt, and serve.

1 small onion, minced
4 garlic cloves, minced
4 tablespoons curry powder
1 teaspoon olive oil
2 tablespoons white wine vinegar

25 peppercorns

1 1/2 teaspoons coriander seeds
1/4 teaspoon lime zest
3 chicken breasts
5 tablespoons plain yogurt
1 1/2 teaspoons minced ginger
2 garlic cloves, minced

1/2 large onion, chopped
2 tomatoes (nice sized, seeded and chopped, save as much of the juice as possible! amount of tomato plus juice s)
75 ml heavy cream
4 tablespoons curry paste (see recipe above)

2 cups uncooked basmati rice

Steps:

  • Prepare all ingredients for curry paste.
  • Heat fry pan and add all ingredients and heat for 4-5 minutes.
  • scrape ingredients into blender and blend until a smooth paste.
  • Scrape out of blender and put into a small (preferably glass) bowl (glass to prevent staining!).
  • Clean out your blender.
  • Curry powder will stain.
  • Assemble your blender again, as you will be using it again in a few minutes!
  • Clean chicken and cut into small pieces, approximately 1 inch pieces.
  • In your blender add garlic, ginger, tomato and yogurt and blend until all is nice and smooth.
  • Keep lid on blender and set aside for later.
  • Measure oil into a nice sized pan (one which has a lid) and heat on medium heat.
  • Add onion and fry for 2-3 minutes (will begin to turn clear).
  • Add the yogurt-tomato mixture from your blender and stir constantly for one minute.
  • Add the curry paste and stir constantly for another minute or so.
  • Then add cubed chicken to the pan and completely mix.
  • Add heavy cream at this time and stir constantly until mixture starts to bubble.
  • Add salt and pepper (more or less; whatever you desire), and cover.
  • reduce heat to low-med heat and simmer for 20 minutes.
  • It would be a good idea to start cooking your rice (according to package directions, so it is done at the same time as your chicken tikka!) After 20 mins, check to see if chicken is completely cooked!
  • Serve over rice!
  • Be sure to use the gravy as well!
  • (warning. if you use too much gravy, you can really kill the flavor of this dish. use just enough to coat the rice).

1 2-inch piece of ginger
4 cloves garlic
1/4 cup plain yogurt
1/4 teaspoon cayenne pepper

2 pounds boneless, skinless chicken breasts, cut crosswise into thirds
2 medium red onions
1 2.5-inch piece of ginger
4 cloves garlic
1/3 cup canola oil
1 cinnamon stick
1/2 teaspoon turmeric
1 tablespoon coriander
1 teaspoon cumin
1/4 teaspoon cayenne
1 1/2 lbs s tomatoes, puréed in a food processor, may substitute plain canned tomato purée
Salt to taste
1/2 cup heavy cream
2 tablespoons cilantro stems, optional

Steps:

  • Peel and chop onion, garlic, and ginger. Place in a food processor along with the yogurt, cayenne and garam masala. Process until smooth. Combine the marinade with the chicken and refrigerate at least 1 hour and up to overnight.
  • Preheat oven to 350 degrees F. Once chicken has marinated, place in a single layer on a drip tray set over rimmed baking sheet (or a foil-lined baking sheet). Bake 15-20 minutes. Meanwhile, make the sauce: Peel and cut the onion into large chunks, peel and chop the ginger, and smash the garlic with a knife to remove the skin. Place the onion, ginger, and garlic in a food processor and puree, then set aside. In a medium saucepan over medium heat, add oil, followed by the cinnamon stick. Add onion mixture and stir. Add a teaspoon of salt and continue stirring.
  • Continue cooking for 20 minutes until the mixture turns a light golden brown. Keep a cup of water beside the stove while the onion cooks. When the onion begins to stick, add water, about 1 teaspoon at a time, and scrape the bottom of the pan to pull up the brown bits and keep the onion from burning. Add turmeric, coriander, cumin, and cayenne; mix and cook for a minute or two. Add a bit more water and continue stirring. Stir in tomato puree and season to taste with salt. Stir in the cream, turn off the heat and set aside.
  • Place cooked chicken into the sauce and gently mix in the pan over low heat. Mince cilantro stems, sprinkle on top, and serve.

1/4 cup coarsely chopped fresh ginger (from a 3-inch piece)
1 cup coarsely chopped onion
3 tablespoons coarsely chopped garlic (from 5 to 6 cloves)
1/2 cup plain yogurt (not Greek), plus more for serving
1 1/2 pounds boneless, skinless chicken thighs
Kosher salt and freshly ground pepper
1 tablespoon tandoori spice mix, such as Frontier
3 tablespoons safflower oil
1 cup pureed canned tomatoes (from a 14 1/2-ounce can)
Warmed naan or flour tortillas, cucumber spears, and fresh herbs, such as cilantro and mint, for serving

Steps:

  • In a food processor, puree ginger, onion, and garlic to a paste. Add 1/4 cup of mixture to yogurt in a large bowl, reserving remainder. Season chicken with salt, pepper, and 1 teaspoon tandoori spice. Add to yogurt mixture; toss to combine. Let stand 30 minutes; meanwhile, preheat broiler.

Entered for safe-keeping, by J. Kenji Lopez-Alt of Serious Eats, touted as "The Best Chicken Tikka Masala". Adapted somewhat. He gives 2 ways to finish cooking: on the grill or under the broiler. He recommends pulsing the peeled ginger and garlic in a food processor instead of box-grating them. Can't wait to try this! He recommends bone-in chicken because the meat (especially breasts) is less likely to overcook. For best taste, toast whole seeds and then grind in a spice-dedicated coffee grinder. Preparation time includes 4 hours for marination.

5 lbs bone-in chicken pieces, skin removed (breasts, legs or a mix)
3 tablespoons toasted ground cumin (whole seed toasted, then ground to yield 3 Tbsp.)
3 tablespoons toasted paprika
2 tablespoons toasted ground coriander (whole seed toasted, then ground to yield 2 Tbsp.)
2 teaspoons ground turmeric
1 teaspoon cayenne pepper or 1 teaspoon indian red chili powder
8 garlic cloves, grated on the medium holes of a box grater
2 tablespoons fresh ginger, grated on the medium holes of a box grater (about 2 inches of gingerroot)
2 cups yogurt
1/2 cup fresh lemon juice (3-4 lemons)
1/4 cup kosher salt
4 tablespoons ghee or 4 tablespoons unsalted butter
1 large onion, thinly sliced
4 tablespoons garlic, grated (or crushed)
2 tablespoons fresh ginger, grated (about 2 inches fresh gingerroot, peeled and grated)
28 ounces whole canned tomatoes, roughly mashed
1/4 cup cilantro leaf, and tender stems roughly chopped
1 cup heavy cream
1/4 cup lemon juice (1-2 lemons)
1/4 cup fresh cilantro leaves, roughly chopped
3 cups cooked rice (or as desired) (optional)
6 pieces grilled naan bread (optional)

Steps:

  • Place the chicken pieces on a cutting board with flesh-side up. Score deeply at 1-inch intervals with a sharp knife. Pat dry and place in a large rimmed non-reactive baking dish.
  • MARINADE:.
  • Combine cumin, paprika, coriander, turmeric and cayenne in a small bowl and mix well. Set aside 3 tablespoons of spice mixture (for Step 10).
  • Combine remaining 6 tablespoons of spice mixture, 8 cloves garlic, 2 tablespoons ginger, yogurt, 1/2 cup lemon juice and 1/4 cup salt in a large bowl and whisk to combine (or process all in food processor).
  • Pour marinade all over chicken pieces, using hands to coat every surface. Cover loosely and refrigerate. Refrigerate and allow to marinate for at least 4 hours and up to 8 hours, turning occasionally.
  • SAUCE:.
  • Meanwhile, heat ghee or butter in a large Dutch oven over medium-high heat until melted and foaming subsides.
  • In clean food processor, pulse garlic to yield 4 tablespoons (or crush in a garlic press). Remove excess of garlic from food processor and add about 2 inches fresh gingerroot cut in small chunks, and pulse until finely grated.
  • Add onions and garlic-ginger mix to the Dutch oven. Cook, stirring frequently, until dark and beginning to char in spots, about 10 minutes.
  • Add reserved spice mixture from Step 3. Cook, stirring frequently, until fragrant, about 30 seconds.
  • Add tomatoes and 1/4 cup chopped cilantro, scraping up any browned bits from bottom of pan with a spoon.
  • Simmer sauce for 15 minutes, then puree using a hand blender or by transferring to a tabletop blender in batches. (If you use a VitaMix, you will not need to allow the sauce to cool off first.)
  • Stir in cream and remaining 1/4 cup lemon juice. Season to taste with salt, then set aside until chicken is cooked.
  • TO COOK ON THE GRILL:.
  • Light 1 chimney full of charcoal. When all of the charcoal is lit and covered with gray ash, pour out and spread the coals evenly over half of a coal grate.
  • Set cooking grate in place, cover grill and allow to preheat for 5 minutes.
  • Clean and oil the grilling grate. (I recommend a GrillGrate.).
  • Wipe excess marinade off chicken and place over hot side of grill, flesh-side down.
  • Grill without moving until well charred, 5-7 minutes.
  • Flip chicken and cook until second side is charred, 4-5 minutes. (Chicken will not be completely cooked through, which is okay). Transfer to a cutting board and allow to rest 10 minutes.
  • TO COOK UNDER THE BROILER:.
  • Line a broiler pan with heavy duty aluminum foil and preheat the broiler to high with the rack set 6 inches below broiler element.
  • Wipe excess marinade off chicken and place on foil-lined pan, flesh side up. Broil until charred an blackened on surface, about 8 minutes (but if you have a professional oven broiler, it may take much less time). (Chicken will not be completely cooked through, which is okay.) Transfer to a cutting board and allow to rest 10 minutes.
  • FINALE:.
  • Remove chicken from bone using a sharp knife and cut into rough bite-sized chunks.
  • Transfer chicken chunks to pot of sauce.
  • Bring to a simmer over medium heat and cook, stirring frequently, until chicken is just cooked through, about 10 minutes.
  • Sprinkle with 1/4 cup chopped cilantro leaves.
  • Serve immediately with rice or grilled naan.
