SWORDFISH A LA SICILIANA
Sweet raisins, sour olives and piquant capers conspire to make this a memorable main dish.

Steps:
- Soak raisins in lukewarm water for 30 minutes. Drain and set aside. Preheat oven to 400 degrees F (200 degrees C).
- Heat olive oil in a large saucepan or skillet over high heat. Saute onion and garlic until soft. Stir in raisins, tomatoes, olives, pine nuts and capers. Cover pan, reduce heat to medium and cook for 15 minutes.
- Season the steaks with salt and pepper. Place in a lightly oiled baking dish and cover with the cooked sauce. Bake in preheated oven for 15 to 20 minutes, until steaks are firm.

Steps:
- For Pepper Sauce: Heat large saute pan to med high. Add oil. Add all peppers, onion, and garlic. Saute until translucent. Add prosciutto, tomato paste, tomato sauce, salt and pepper. Simmer for 30 minutes to 1 hour. Stir in sugar and vinegar, adjust salt and pepper to taste.
- Heat oven to 400 degrees and heat oil in saute pan on high. Season fish on both sides with salt and pepper. Sear fish on one side only when is golden brown place saute pan in oven for 5-8 minutes until fish flakes, but still moist.
- Serve fish with sauce over it and enjoy with a glass of pinot grigio.

Steps:
- heat oil in a frying pan and saute fish for approximately 2 minutes each side
- Remove fish from pan and place in oven proof dish with lemon juice in preheated oven (180C) for 5 minutes
- In frying pan saute the garlic, tomatoes and all other ingredients for approx 5 minutes
- Add the cooked tomato mixture to the fish and bake in oven for a further 10 minutes
- Serve with mixed greens like spinach, rocket or pea shoots

SICILIAN TUNA STEAKS IN ONION SAUCE
I found this recipe somewhere on the 'net, and it is reported to be a classic dish of the islands off the western coast of Sicily. The onions have a decidedly sweet/sour taste which we love, and that would be super as well on a swordfish steak.

- SAUCE:.
- Saute the onions in olive oil and butter over medium heat in a large skillet.
- Add salt and cook, stirring until they are limp.
- Stir in vinegar and sugar, and cook over a slightly lower heat until the vinegar has evaporated.
- I caution you, the escaping steam will take your breath away so stay well away from the skillet when possible, but do perservere!
- When vinegar has evaporated, add cayenne or tabasco, mix well and remove from heat.
- The sauce should still retain the texture of the onions and yet retain enough moisture to be spoonable.
- Cover and keep warm.
- TUNA:.
- Over medium heat, add olive oil and bay leaves to a skillet large enough to hold tuna steaks in one layer.
- When the oil is warm, not hot, add tuna and salt and pepper to taste.
- Saute 2-3 minutes per side, but this will depend on thickness of steaks and your doneness preference-- we like ours on the rare side.
- Raise heat, add wine, and cover pan a second or two, just until the wine has stopped steaming.
- Uncover skillet, cook 30 seconds longer, then transfer tuna to plates.
- Spoon the onions and sauce over the top of each, and serve.

- In a deep pot, heat oil over medium-high heat.
- Add onions, eggplant and red pepper.
- Cook until eggplant is soft.
- Add garlic, tomatoes, sugar, wine and pepper flake.

- Heat oil and crushed pepper in sauce pan,add onion and garlic. Saute until translucent. Deglaze with wine, add tomatoes cushed and paste. Bring to simmer, continue to simmer for 45 minutes up to 4 hours. Add herbs, sugar, and season if needed.
- Toss with favorite pasta. Serve with grated parmesan romano and a glass of wine.
- Can also add meat/ sausage/ ribs before deglazing with wine. Or mix in a cup of ricotta and grated mozzerella and bake in 400 degree oven until bubbling and golden.
FISH WITH SICILIAN SAUCE
This recipe makes 2 servings, but is easy to scale up for more. Very quick for a weeknight, and a savory and different way to serve fish. Use firm white fish, such as halibut, cod, or mahi-mahi. if you don't have fresh tomatoes on hand, use an equal amount of canned diced tomatoes, drained. I sometimes substitute slivered almonds for the pine nuts.

- Combine flour, salt & pepper. Dredge the fish fillets and shake off excess flour; set aside.
- Heat dry sauté pan over medium heat. Toast pine nuts in dry pan, set aside to cool.
- Heat about 1 TB oil in pan. Saute fish on both sides until lightly browned. Remove to plate. .
- In the same sauté pan, heat 2 TB oil over medium heat. Add the onion and celery, sauté until soft and pale, about 10 minutes.
- Add the tomatoes, simmer 3 minutes to thicken slightly.
- Add the olives, pine nuts, drained raisins, capers, garlic and wine, and bring to simmer.
- Add fish fillets on top of sauce, simmer for 8 to 10 minutes to complete cooking. Add a little water or wine if sauce gets too dry.
- Serve hot or at room temperature.
- If cooking for a larger group, sauté fish fillets and place into an oiled baking dish. Prepare sauce in sauté pan, pour over fish, and bake about 10 minutes at 400 degrees F, until done.
