- Heat oil in a saucepan over low heat. Add onion and garlic. Cook and stir until soft and translucent, about 5 minutes. Add passata, basil, and salt. Cover and simmer over medium heat, stirring occasionally, until tomato sauce has thickened, about 20 minutes. Remove garlic halves before serving.

Steps:
- Heat oil and crushed pepper in sauce pan,add onion and garlic. Saute until translucent. Deglaze with wine, add tomatoes cushed and paste. Bring to simmer, continue to simmer for 45 minutes up to 4 hours. Add herbs, sugar, and season if needed.
- Toss with favorite pasta. Serve with grated parmesan romano and a glass of wine.
- Can also add meat/ sausage/ ribs before deglazing with wine. Or mix in a cup of ricotta and grated mozzerella and bake in 400 degree oven until bubbling and golden.

Steps:
- Drop the garlic into a clean 2-cup bottle.
- Add the chili pepper and pour in the vinegar.
- Add half the mint, cover the bottle, shake well and leave about 24 hours.
- In the beginning, the flavouring will float on the surface of the vinegar, but after a day they will sink to the bottom of the bottle.
- After the flavourings have sunk to the bottom, add the olive oil and the remaining mint.
- Shake well and let stand 3-4 days, shaking once or twice a day, before using.
- This sauce will keep for 2-3 months in a cool, dark place.
- Shake well before using.

- Cut fish into 1" pieces.
- Saute garlic in olive oil over medium heat until golden.
- Add sardines and continue to saute and stir until almost a paste (approximately 7 minutes).
- Add tomato paste and 3 to 5 tomato paste cans of water to the fish and bring to boil.
- Add herbs (leaves only)and raisins.
- Reduce heat, add salt and pepper; simmer until thick.
- Place cold water into large pot and start to the boil.
- Boil pasta until al dente, drain and toss with sauce.
- Serve with grated cheese on the side.

- In a Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Brown pork ribs in batches; transfer to a 6-qt. slow cooker., Add remaining oil to Dutch oven; saute onion for 2 minutes. Add garlic; cook 1 minute more. Add next 11 ingredients. Pour in broth and red wine; bring to a light boil. Transfer to slow cooker. Cook, covered, until pork is tender, about 6 hours., Discard bay leaves. Remove meat from slow cooker; shred or pull apart, discarding bones. Return meat to sauce. Serve over pasta; if desired, sprinkle with Parmesan cheese.
