8 oz. block of cream cheese (softened)
8 oz. mushrooms (sliced)
2 cloves of garlic (minced)
3 tablespoons of butter
1 sprig of fresh thyme (about 1/2 teaspoon)
Kosher and white pepper to taste

Steps:

  • Heat butter over a medium heat. Sauté mushrooms in butter until soft, about 10 minutes.
  • Add garlic and thyme and cook another minute or two.
  • Cool a few minutes and then blend mushrooms and cream cheese together in food processor.
  • Season with kosher salt and pepper. Chill...or not.
  • Serve with water crackers

2 tablespoons butter
1/2 pound sliced fresh mushrooms, chopped
1 shallot, finely chopped
1 garlic clove, minced
1 package (8 ounces) cream cheese, softened
4 teaspoons minced fresh oregano or 1 teaspoon dried oregano
2 teaspoons Worcestershire sauce
1-1/2 teaspoons lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper
French bread baguette slices, toasted if desired

Steps:

  • In a large skillet, heat butter over medium-high heat. Add mushrooms and shallot; cook and stir 3-4 minutes or until tender. Add garlic; cook 1 minute longer., Reduce heat to low; stir in cream cheese, oregano, Worcestershire sauce, lemon juice, salt and pepper until blended and heated through. Serve with baguette slices.

salt and pepper

Steps:

  • Melt butter in skillet. Add mushrooms, shallots and garlic and saute about 6 minutes on med-high heat.
  • Add wine and cook 2 minutes longer.
  • Cool mixture.
  • Remove to serving bowl and stir in sour cream and nuts.
  • Season to taste with salt and pepper.
  • Serve with baguettes or crackers.

1 ounce dried porcini or other wild mushroom
1 tablespoon extra-virgin olive oil
8 ounces white button mushrooms, cleaned, trimmed, and sliced
2 large cloves garlic, finely chopped
Salt and freshly ground black pepper to taste
2 tablespoons marsala, port, sherry, or Madeira
2 tablespoons finely chopped fresh parsley
16 to 20 (1/2-inch thick) baguette rounds, lightly toasted

Steps:

  • Soak the porcini mushrooms in 1 cup hot water for 15 minutes; drain, and reserve the soaking liquid. Strain the soaking liquid through a coffee filter or paper towel-lined strainer. Reserve 1/2 cup and set aside. (Save the remaining strained liquid for soups or stocks, if desired.) Rinse the mushrooms thoroughly; chop coarsely and set aside.
  • In a large nonstick skillet, heat the oil over medium heat. Add the porcini mushrooms, button mushrooms, garlic, salt, and pepper. Cook, stirring often, until the mushrooms have started to give off their liquid, 3 to 5 minutes.
  • Add the marsala and reserved soaking liquid to the skillet; bring to a boil over high heat. Cook, stirring constantly, until the liquids are greatly reduced and syrupy. Remove from the heat and add the parsley, stirring well to combne. Taste and season with additional salt and pepper if needed.
  • Serve warm with baguette rounds.

I am not a walnut lover, but I love this. The original recipe called for 1.5 teaspoons of salt, but that was too much, so I'm going to use 1 teaspoon next time I make it. Also, the original called for 1/2 teaspoon of tarragon, but I'm going to use 1 teaspoon next time I make it... and I may use fresh instead of dried. If so, I'll use 1 Tablespoon of fresh tarragon. It is suggested that you use this on pita chips, but I think I'm going to stuff celery with it and dip vegetables into it. Maybe I'll try it on sandwiches, too. It seems really versatile. I think cayenne pepper would be good in this, but I haven't tried that yet. Please let me know how it is if you try it! We decided that 2 Tablespoons are enough for 1 serving, so that's how I've entered it here, but I'll probably eat 1/4 cup at a time. I must say that the recipe takes more effort and time to make than I would like, so I may triple the recipe next time I make it and try freezing it. As written, it makes 3 cups in total.

16 ounces portabella mushrooms, the baby type, coarsely chopped
1 onion, coarsley chopped
5 garlic cloves, chopped
1 teaspoon coarse salt
1 teaspoon tarragon
black pepper
3 tablespoons Chardonnay wine or 3 tablespoons pinot grigio wine
1 1/2 cups walnuts, chopped and toasted
1 1/2 cups cilantro, stems removed and lightly packed
1/2 lemon, juiced

Steps:

  • Heat olive oil in a large skillet over medium heat. Add mushrooms and onions and cook for three minutes.
  • Stir in garlic, salt, tarragon, and pepper to taste. Cook for about 5-7 minutes, then raise heat slightly and cook for about 5-7 minutes more, until fond (I had to look up this word on the internet, but I don't know how else to state it here) starts to develop on the bottom of skillet and mushrooms and onions start to brown.
  • Remove from heat; pour in wine and stir to release fond.
  • Place walnuts in a food processor. Pulse until finely chopped.
  • Add cilantro and pulse to combine with walnuts.
  • Add mushroom mixture and lemon juice. Pulse until ingredients are blended together; it won't be completely smooth.
  • Taste for seasonings and adjust accordingly.
  • Serve with pita chips or whatever you like.

Number Of Ingredients 12

1 cup walnuts
6 tablespoons unsalted butter
2 1/2 pounds assorted mushrooms, such as cremini, shiitake, portobello, and white button, cleaned and chopped into medium pieces, plus 14 to 16 small button mushrooms, halved, for garnish
6 scallions, white and pale-green parts, cut across in 1/4-inch piece or 3 medium shallots, finely chopped
1 1/2 tablespoon fresh thyme leaves, plus more for garnish
1 1/2 teaspoons coarse salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/3 cup dry sherry, or Madeira
1 cup finely chopped flat-leaf parsley
Juice of 1 lemon
Dash Tabasco sauce
1 (8 ounce) package cream cheese, room temperature

Steps:

  • Heat oven to 350 degrees. Spread walnuts on a baking pan. Bake until fragrant, about 7 minutes. Transfer walnuts to a bowl; set aside to cool. Finely chop, and reserve.
  • In a large heavy skillet over medium heat, melt 4 tablespoons butter. Add mushrooms, scallions, and thyme, and cook, stirring occasionally, until liquid has been released and skillet becomes almost dry, 5 to 8 minutes. Stir in salt, pepper, and sherry. Cook until skillet is almost dry, about 10 minutes more. Remove from heat, and let cool.
  • In a large bowl, combine mushroom mixture with reserved walnuts, parsley, lemon juice, Tabasco, and cream cheese. Season with salt and pepper to taste.
  • Line a 3-cup mold with plastic wrap, allowing for a 4-inch overhang on all sides. Spoon the mushroom mixture into the pan. Cover with overhanging plastic, and firmly press down all over terrine with hands; spread mixture as evenly as possible. Refrigerate for at least 8 hours, or overnight.
  • Just before serving, melt remaining 2 tablespoons butter in a medium skillet, and cook halved mushrooms just until tender, about 5 minutes. Season with salt and pepper. Unwrap chilled terrine, and invert it onto a small serving platter. Surround with cooked mushroom halves, and thyme leaves. Serve with toast points, water biscuits, or any plain cracker.
