SHRIMP & ZUCCHINI COCONUT CURRY WITH BASMATI RICE

Shrimp & Zucchini Coconut Curry with Basmati Rice image

Provided by Mealime

Categories     Dinner

Time 40m

Yield 4 servings

Number Of Ingredients 14

1 cup basmati rice
1 small bunch cilantro
1 (13.5 fl oz) can coconut milk
2 cloves garlic
2 (1 inch) pieces ginger root
1 ½ lb raw peeled shrimp, fresh or frozen
1 medium yellow onion
4 medium zucchini squash
black pepper
curry powder
fish sauce
salt
turmeric, ground
virgin coconut oil

Steps:

  • Using a strainer or colander, rinse the rice under cold, running water, then drain and transfer to a small saucepan. Season the rice with salt and add water; bring the mixture to a boil over high heat.
  • If using frozen shrimp, place them in a colander and run under cold water until there are no more ice chunks. Then, lay them out on a clean towel or paper towels and pat dry. If using fresh shrimp, skip the first step.
  • Wash and dry the fresh produce.
  • Once the liquid comes to a boil, stir the mixture, cover the saucepan, and reduce the heat to low. Cook the rice until the liquid is fully absorbed, 15 to 18 minutes. Once done, remove the rice from the heat and let it stand, still covered, for 5 minutes.
  • Preheat a sauté pan over medium-high heat.
  • While the pan heats up, trim off and discard the ends of the onion and remove the outer layer; small dice the onion (cut into ¼-inch pieces).
  • Once the pan is hot, add coconut oil and swirl to coat the bottom.
  • Add the onion to the pan; cook, stirring frequently, until slightly softened, 3 to 4 minutes.
  • While the onion cooks, trim off and discard the ends of the zucchini; quarter the zucchini lengthwise, then slice crosswise into ¼-inch-thick pieces.
  • Add the zucchini to the pan; cook, stirring occasionally, until slightly softened, 2 to 3 minutes.
  • While the zucchini cooks, trim off and discard the root ends of the garlic; peel and mince or press the garlic. Transfer to a small bowl.
  • Peel and grate or mince the ginger. Add to the bowl with the garlic.
  • Add the garlic, ginger, curry powder, turmeric, salt, and pepper to the pan; cook, stirring, until fragrant, 15 to 30 seconds.
  • Add the coconut milk, and fish sauce to the pan; bring to a boil, then reduce the heat to medium-low and cook for 2 to 3 minutes.
  • Using a knife, shave the cilantro leaves off the stems at a downward angle, working away from your body; discard the stems and finely chop the leaves.
  • Add the shrimp and ¾ of the cilantro (save the rest for garnishing) to the pan; cook until the shrimp are opaque and pink, 3 to 4 minutes, then remove from the heat.
  • Uncover the rice and fluff with a fork.
  • To serve, divide the rice between bowls, top with the shrimp and zucchini curry, and garnish with the remaining cilantro. Enjoy!

VEGETABLE AND FRUIT CURRY OVER BASMATI RICE

Vegetable and Fruit Curry over Basmati Rice image

This is a delightful, rather sweet curry that everyone seems to really love. It is vegan-friendly, but adding leftover shrimp works nicely, too. I've even used leftover turkey after Thanksgiving, and topped it with cranberry chutney! For a hotter curry, use cayenne instead of black pepper.

COCONUT RICE WITH SHRIMP AND CORN

Coconut Rice With Shrimp and Corn image

This summery, one-pot dish has everything you need: fresh shrimp nestled in creamy coconut rice, with pops of summer corn and basil. Lime cuts through the richness and adds some bright tartness. To easily shave corn kernels off the cob, lay your cob flat on your cutting board. With a chef's knife, lob off one side. Rotate the cob so that the flat side is on the cutting board and repeat, running around all four sides. Frozen wild shrimp is an excellent weeknight staple, as it thaws and cooks quickly. You can always keep it on hand and thaw just as much as you need, which ensures optimal freshness.

Categories     dinner, seafood

Time 45m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons coconut oil
1 small yellow onion, finely chopped
2 tablespoons peeled and finely chopped fresh ginger
1 small jalapeño, seeded and finely chopped
3/4 teaspoon kosher salt, plus more to taste
1 1/2 cups jasmine rice
1 (14-ounce) can full-fat coconut milk
1 pound peeled and deveined large shrimp
1 1/2 cups corn kernels, fresh (from 2 cobs) or frozen
1 lime, zested, then sliced into wedges
1 cup fresh basil leaves, torn, plus more for serving

Steps:

  • In a large, heavy pot, heat coconut oil over medium. Add the onion, ginger and jalapeño and season with the 3/4 teaspoon salt. Cook, stirring, until the onion is soft and translucent, about 6 minutes.
  • Add the rice and sauté for another minute. Then stir in the coconut milk and 1 1/4 cups water. Bring to a simmer, reduce the heat to medium-low, cover, and cook for 10 minutes, adjusting the heat as needed to maintain a gentle simmer but avoid scorching.
  • Stir in the shrimp and corn, cover again, and cook, stirring occasionally, until the shrimp is cooked through and the rice is tender, 10 to 15 minutes. (Add more water by 1/2 cups throughout cooking as needed if the water has been absorbed, but the rice is still too firm.)
  • Remove from the heat and stir in the lime zest and basil; season to taste with salt. Serve immediately with lime wedges and topped with more basil.
