ZUCCHINI AND SHRIMP COCONUT CURRY
Always a weeknight favorite, this quick and easy curry is loaded with chunks of zucchini and simmered in a flavorful coconut curry. Replace the shrimp with chicken or add extra zucchini and other vegetables for a hearty curry. Customize this curry to your personal taste. Serve with zucchini noodles instead of rice, bread or pasta for a healthier variation.Each brand of curry will have a different spice level and flavor profile. Adjust the cayenne and curry to your preference.

Steps:
- Heat large saucepan on medium-high heat. Add oil, then onions, garlic, and ginger. Cook until translucent.
- Add curry powder, cayenne powder, chicken stock, fish sauce, and coconut milk. Combine to break up all lumps of spices. Bring to a boil, then immediately reduce heat to low. Simmer coconut curry sauce for about 5 minutes.
- Add zucchini, bell peppers and shrimp. Cook for additional 5 minutes, or until shrimp I cooked through and zucchini is tender. Taste for flavor and add salt and pepper, if desired.
- Garnish with basil and/or cilantro and enjoy warm over rice, blanched zucchini noodles, pasta or with bread.

SHRIMP & ZUCCHINI COCONUT CURRY WITH BASMATI RICE
Steps:
- Using a strainer or colander, rinse the rice under cold, running water, then drain and transfer to a small saucepan. Season the rice with salt and add water; bring the mixture to a boil over high heat.
- If using frozen shrimp, place them in a colander and run under cold water until there are no more ice chunks. Then, lay them out on a clean towel or paper towels and pat dry. If using fresh shrimp, skip the first step.
- Wash and dry the fresh produce.
- Once the liquid comes to a boil, stir the mixture, cover the saucepan, and reduce the heat to low. Cook the rice until the liquid is fully absorbed, 15 to 18 minutes. Once done, remove the rice from the heat and let it stand, still covered, for 5 minutes.
- Preheat a sauté pan over medium-high heat.
- While the pan heats up, trim off and discard the ends of the onion and remove the outer layer; small dice the onion (cut into ¼-inch pieces).
- Once the pan is hot, add coconut oil and swirl to coat the bottom.
- Add the onion to the pan; cook, stirring frequently, until slightly softened, 3 to 4 minutes.
- While the onion cooks, trim off and discard the ends of the zucchini; quarter the zucchini lengthwise, then slice crosswise into ¼-inch-thick pieces.
- Add the zucchini to the pan; cook, stirring occasionally, until slightly softened, 2 to 3 minutes.
- While the zucchini cooks, trim off and discard the root ends of the garlic; peel and mince or press the garlic. Transfer to a small bowl.
- Peel and grate or mince the ginger. Add to the bowl with the garlic.
- Add the garlic, ginger, curry powder, turmeric, salt, and pepper to the pan; cook, stirring, until fragrant, 15 to 30 seconds.
- Add the coconut milk, and fish sauce to the pan; bring to a boil, then reduce the heat to medium-low and cook for 2 to 3 minutes.
- Using a knife, shave the cilantro leaves off the stems at a downward angle, working away from your body; discard the stems and finely chop the leaves.
- Add the shrimp and ¾ of the cilantro (save the rest for garnishing) to the pan; cook until the shrimp are opaque and pink, 3 to 4 minutes, then remove from the heat.
- Uncover the rice and fluff with a fork.
- To serve, divide the rice between bowls, top with the shrimp and zucchini curry, and garnish with the remaining cilantro. Enjoy!

- Heat oil in large, nonstick saucepan over medium heat. Saute onion, red pepper, and garlic until vegetables begin to soften, about 3 minutes.
- Season with cumin, coriander, and curry powder. Cook for 1 more minute. Stir in coconut milk, sugar, and crushed red pepper flakes. Bring to a boil. Reduce heat, and simmer, uncovered for 2 minutes.
- Stir in shrimp, and increase heat to medium-high. Cook and stir until shrimp is cooked through, about 4 minutes.
- In a small bowl, combine cornstarch with 1 tablespoon water. Stir into shrimp mixture, and cook until sauce has thickened, about 1 minute. Stir in cilantro, and remove from heat.

COCONUT CURRY SHRIMP WITH BASMATI RICE
This curry is a little bit of work but well worth it. Kick up the heat by adding more pepper flakes if you wish.

Steps:
- Bring the 3 cups water to a boil and add the rice.
- Stir, return to a boil and cover, reducing heat to medium low-you want it simmering.
- In a food processor or blender puree the onion, red pepper, ginger, garlic, lime zest, and pepper flakes.
- Pulse a few times, scrape down and add the ground almonds, coriander, paprika and tumeric.
- Blend into a paste.
- In a large skillet toast the mustard seeds over medium high heat.
- Skake the pan to prevent burning.
- Remove from pan and pour into a bowl to cool, set aside.
- Reduce heat to medium and add the oil.
- Swirl a few times and add the paste, cooking for 10-12 minutes.
- You want it a deep orange color and clumping together.
- Add the mustard seeds, 1 cup of water and the salt.
- Bring to a boil.
- Reduce heat and simmer for 5 minutes.
- Strain through a fine sieve into a bowl, pressing with a spatula to extract the liquid.
- Rinse and dry skillet and return liquid to it.
- Gently whisk in the coconut milk and lime juice until well blended.
- Bring to a boil, reduce heat to a simmer and add the shrimp, stirring gently until shrimp turn pink, about 3-4 minutes.
- Pour over cooked rice.
SHRIMP IN COCONUT CURRY
Basmati rice makes an excellent complement to this spicy curry dish. You can flavor the rice by adding a bay leaf, a cinnamon stick, and cardamom pods to the pot.

- While water heats, rinse the rice well.
- When water boils, stir in the rice and all of the remaining ingredients.
- Return to a boil.

- Heat oil in a large deep skillet. Saute' first six ingredients until tender.
- Add peas, broth, and coconut milk, reserving a bit of the broth to mix with the cornstarch; add to low-simmering vegetables and stir until medium-thick.

- Melt 1 oz of butter in a medium sized pan and fry the rice and cumin seeds till the rice is translucent.

COCONUT RICE WITH SHRIMP AND CORN
This summery, one-pot dish has everything you need: fresh shrimp nestled in creamy coconut rice, with pops of summer corn and basil. Lime cuts through the richness and adds some bright tartness. To easily shave corn kernels off the cob, lay your cob flat on your cutting board. With a chef's knife, lob off one side. Rotate the cob so that the flat side is on the cutting board and repeat, running around all four sides. Frozen wild shrimp is an excellent weeknight staple, as it thaws and cooks quickly. - In a large, heavy pot, heat coconut oil over medium. Add the onion, ginger and jalapeño and season with the 3/4 teaspoon salt. Cook, stirring, until the onion is soft and translucent, about 6 minutes.

- Start cooking the rice:.
- Add rice and water to a pot (or rice cooker).
- In a separate pot:.
- Add shrimp leeks and butter, stir at high heat for 3 minutes.
- Turn stove to low heat.
- Add curry powder, coriander and garlic salt; stir well.
- Allow to simmer COVERED for 5 minute.
- Add mayo; stir well. The mixture should be a pale yellow color.
- At this point the rice should be about half done and there should be a fair amount of water in the pot.
- Add rice and it's water to the shrimp mixture; stir well.
- Cover and allow the rice to cook for a further 6 minutes or until the water has been absorbed but before the rice burns at the base of the pan.
