- For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta.
- Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

- Combine the olive oil and the lemon zest in a small bowl and reserve.
- For the pasta:

- Bring a large pot of well-salted water to a boil. Add pasta and cook according to package instructions until it is just short of al dente. Reserve 1 cup of the pasta cooking water, then drain pasta.
- While the pasta cooks, season the shrimp well with salt and pepper. Melt half the butter in a deep 12-inch skillet over medium heat. Add the shrimp and sauté until just cooked through, 1 to 2 minutes per side. Remove and set aside.

- In a large skillet, saute the mushrooms, red pepper, green onion and garlic in butter until the vegetables are crisp-tender., Stir in the flour, salt, tarragon and pepper until blended. Gradually add cream. Bring to a boil; cook and stir for 1 minute or until thickened. Add the shrimp; simmer, uncovered, for 5 minutes or until shrimp turn pink. - Boil a pot of water for the pasta.
- Add the pasta and cook according to package.
- While the pasta is cooking, add butter and the extra virgin olive oil in a sauce pan.
- Add the shallots and garlic and sauté for about 3-4 minutes.
- Season the shrimp with salt, pepper and red pepper flakes. Add the shrimp to the sauce pan and cook them for about 2-3 minutes or until pink.
- Add the wine and bring to a boil.
- Add the tomato puree and lower the heat to medium to low heat for about about 10 minutes. If the sauce gets too thin, add 1-2 Tablespoons of flour to thicken it up.
- place the pasta on a plate, pour the sauce on top of the pasta and sprinkle the chopped parsley. Serve immediately.
