MILD-STYLE SHRIMP BOIL WITH CORN AND RED POTATOES
Steps:
- Combine boiling water and bouillon cubes in a large pot and stir until dissolved. Add 8 additional cups of water, onion, garlic, bay leaves, cloves, butter, salt, coriander seeds, dill seeds, mustard seeds, celery seeds, allspice, and peppercorns and bring to a boil, about 5 minutes. Reduce heat to medium and simmer for 20 minutes.
- Squeeze lemon juice into the pot and add lemon to the pot as well. Add potatoes and cook for 14 minutes. Add corn and cook 6 minutes more. Add shrimp and cook until opaque, about 3 minutes. Remove pot from heat.
- Add ice cubes to the pot with the shrimp boil and let sit for 5 minutes.
- For a traditional shrimp boil, place several layers of newspaper on the dining table. Use a slotted spoon to transfer shrimp, potatoes, and corn onto the center of the table for everyone to reach, grab, and enjoy. For a tidier take, place several layers of newspaper on a baking sheet. Place shrimp, potatoes, and corn on top of the sheet and place the sheet on the dining table for everyone to serve themselves. If you are a neat freak, place shrimp, potatoes, and corn in a serving dish to pass at the table.

Steps:
- Combine the dill seeds, dried dill, mustard seeds, chili powder, paprika, coriander seeds, peppercorns, celery seeds, red pepper flakes and bay leaves in a small bowl. Transfer to a blender or spice grinder in batches and pulse until coarsely ground.
- Fill a large deep pot with 8 quarts water. Add the spice mixture, thyme, parsley, garlic, celery and 1/4 cup salt. Cover and bring to a boil over high heat. Uncover, reduce the heat and simmer, 30 minutes.
- Meanwhile, put the crabs in a large colander in the sink. Holding each crab with tongs, run under cold water to wash away sand. Transfer to a large container of ice water and soak 15 minutes. (This relaxes the crabs and helps remove the grit.) Remove the crabs and discard the water. If the crabs are still sandy, repeat.
- Bring the spiced broth to a boil over high heat. Wrap the potatoes in cheesecloth and tie closed. Add the crabs to the broth, then the potatoes; cover and cook, stirring once or twice, until the crab shells are bright red, 15 to 20 minutes. Remove the potatoes after 15 minutes.
- Transfer the crabs to a platter or newspaper with tongs, letting the excess liquid drain into the pot. Let sit at least 5 minutes before eating.
- Meanwhile, add the shrimp to the pot, stir once and cook until the shells are pink, 5 to 6 minutes. Remove with a slotted spoon. Season the crabs, shrimp and potatoes with salt. Serve with melted butter and the broth, for dipping.
SWEET POTATO AND CORIANDER MASH
This makes a lovely change from everyday mash and can be served in exactly the same way. I like to throw the coriander into the pan of boiling sweet potatoes for just a few seconds before I drain them. It somehow softens the flavour a little while fixing the colour at a lovely bright green.

- Serve warm.
INDIAN POTATOES WITH MUSTARD SEEDS (SOOKHI BHAJI)
A great side dish, can be a vegetarian main dish also. Has been served at tea time in India as a snack, too! Oil-free, more low-fat cooking with high flavor! :)

Steps:
- For the hash, blanch the potatoes in separate pots until nearly tender. Drain and set aside. Heat 2 teaspoons of oil in a large nonstick skillet over medium heat. Add the onion and saute until translucent. Add the white potato and 2 teaspoons of oil and saute until potato begins to brown. Add the sweet potato and cook until potatoes are tender. Season with salt and pepper and stir in the orange peel and parsley. Keep warm.
- For the shrimp, heat the oil in a large skillet over medium-high heat. Season the shrimp with the 1/2 teaspoon of salt and pepper. Add to the skillet in a single layer, sauteing 1 minute. Turn and cook 1 minute more. Pour off most of the oil and toss the garlic with the shrimp. Stir in the clam juice. Remove the shrimp with a slotted spoon and keep them warm.
- Add the seeds and butter and simmer over high heat until slightly thickened and emulsified, about 3 minutes. Remove from heat and stir in the lime juice, cilantro, cayenne and salt and pepper to taste.
