1/2 lb large shrimp (shelled, deveined and washed)
1 1/2 teaspoons garlic oil (or sesame oil)
1 teaspoon garlic, minced
1 tablespoon fermented black beans, washed and drained
1 teaspoon shaoxing wine (or sherry wine)
1 tablespoon fresh coriander, minced
2 teaspoons oyster sauce
1 teaspoon soy sauce
3/4 teaspoon sugar
salt, to taste
pepper, to taste
1 1/2 teaspoons cornstarch
1/4 cup seafood stock

Steps:

  • Combine sauce ingredients and set aside.
  • Heat wok over high heat for 30 seconds.
  • Add garlic oil and coat the wok.
  • When a wisp of white smoke appears, add garlic and black beans.
  • Stir for 30 seconds and add shrimp. Mix together, then spread shrimp in a thin layer. Cook for 30 seconds.
  • Add wine by drizzling around the edges of the wok; mix well.
  • When the shrimp begin to curl and turn pink, make a well in the center of the mixture.
  • Stir sauce and pour in the well.
  • Mix to combine all ingredients, about 1 1/2 minutes, until sauce begins to thicken and bubble.
  • Turn off heat, remove to a heated dish, sprinkle with minced coriander and serve.

For the most part, the shrimp will tell you when they're done. Certainly they're ready once they're pink, though very large shrimp may need an extra minute to cook through. To check, slice one in half; if it's opaque, or even nearly so, season to taste and start eating.

2 tablespoons vegetable oil
3 sliced garlic cloves
1 1/2 pounds peeled shrimp
2 teaspoons minced ginger
3 tablespoons fermented black beans
2 tablespoons mirin
2 tablespoons soy sauce
Scallions, for garnish

Steps:

  • Put 2 tablespoons vegetable oil in a large skillet over medium-low heat.
  • Add 3 sliced garlic cloves, and cook until golden.
  • Stir in 1 1/2 pounds peeled shrimp, 2 teaspoons minced ginger and 3 tablespoons fermented black beans soaked in 2 tablespoons mirin.
  • Cook, turning the shrimp once or twice, until they are pink, 5 to 10 minutes.
  • Stir in 2 tablespoons soy sauce, and serve. Garnish with scallions.

3/4 cup homemade chicken broth (reserved from winter melon soup ) or store-bought chicken broth (reduced-sodium if canned)
3 tablespoons Chinese rice wine (preferably Shaoxing) or medium-dry Sherry
3 teaspoons light soy sauce (preferably Pearl River Bridge brand)
2 teaspoons cornstarch
1 teaspoon sugar
1/4 teaspoon salt
1 1/2 lb gai lan (Chinese broccoli)
1 1/2 lb large shrimp in shell (21 to 25 per lb), peeled and deveined
1 tablespoon peanut or vegetable oil
1 (1-inch) piece fresh ginger, peeled and cut into very thin matchsticks
2 tablespoons fermented black beans, rinsed and chopped
2 garlic cloves, minced
1/2 fresh jalapeño chile (including seeds), or to taste, cut crosswise into 1/8-inch-thick slices
1 teaspoon Asian sesame oil
Special Equipment
a well-seasoned 14-inch flat-bottomed wok

Steps:

  • Stir together broth, rice wine, soy sauce, cornstarch, sugar, and salt in a small bowl until cornstarch is dissolved.
  • Remove any bruised or withered outer leaves from gai lan, then trim and peel stalks, halving thick ones lengthwise. Cut crosswise into 2 1/2-inch pieces, separating leafy parts from thick stems.
  • Cook stems in a 6- to 8-quart pot of boiling salted water, uncovered, until crisp-tender, about 3 minutes. Add leafy parts and cook until all of gai lan is just tender, 3 to 5 minutes. Drain well, then transfer to a clean kitchen towel and pat dry. Transfer to a large dish and keep warm, loosely covered with foil.
  • Pat shrimp dry. Heat wok over high heat until a drop of water vaporizes instantly. Pour peanut oil around side of wok, then tilt wok to swirl oil, coating side. When oil just begins to smoke, add ginger and stir-fry 5 seconds. Add black beans, garlic, and jalapeño and stir-fry 1 minute. Working quickly, add shrimp, spreading in 1 layer on bottom and side of wok. Cook, undisturbed, 3 minutes, then stir-fry until shrimp are just pink on both sides, about 1 minute more. Stir broth mixture, then add to shrimp and bring to a boil. Boil, stirring, 2 minutes. Remove from heat and drizzle with sesame oil, then stir to combine.
  • Pour shrimp and sauce over gai lan.

1/2 tablespoon white wine
1/2 teaspoon ginger juice (see note)
3/4 tablespoon oyster-flavored sauce
1 teaspoon light soy sauce
1/2 teaspoon sesame oil
1/3 teaspoon salt
1/2 teaspoon sugar
1 1/2 teaspoons cornstarch
Pinch of white pepper
3/4 pound large shrimps (about 24), shelled, deveined, washed and dried
2 tablespoons fermented black beans
3 garlic cloves
2 tablespoons peanut oil
1/4 cup cold water
Coriander sprigs for garnish

Steps:

  • In a cup, mix together the white wine and the ginger juice. Then, in a bowl, combine this with the oyster sauce, soy sauce, sesame oil, salt, sugar, cornstarch and white pepper. Stir in the shrimps and let stand for 30 minutes to an hour.
  • Meanwhile, wash the beans three times and drain well. In a bowl, mash together the black beans and the garlic to make a paste. Reserve.
  • Heat the wok over high heat for 30 seconds. Add the peanut oil and heat until a wisp of white smoke appears. Add the bean and garlic paste, breaking it up with a spatula and cooking until the garlic turns brown. Drain the shrimps, reserving the marinade, and place the shrimps in the wok, separating them into a single layer. Tip the wok from side to side to assure even cooking, then after about 10 or 15 seconds turn the shrimps over and stir together with the paste.
  • As the shrimps cook, add the marinade to the wok and continue to stir-fry. There should be enough moisture to cook properly. If not, add a little water. When the shrimps turn pink and curl up, after about one minute, they are ready. Turn off the heat, remove the shrimps and beans from the wok and serve immediately with cooked rice. Garnish with sprigs of coriander.

3 tablespoons unsalted butter
5 cloves garlic, finely chopped
1 tablespoon grated fresh ginger
2 large red bell peppers, stemmed, seeded, and diced
1 cup white wine
1/2 cup chicken stock, mixed with 1 teaspoon cornstarch
1 1/2 tablespoons soy sauce
1/2 teaspoon freshly ground black pepper
1 cup cooked black beans
2 1/2 pounds large raw shrimp, peeled and deveined
10 green onions, trimmed and sliced thinly on the diagonal
1/2 small bunch cilantro, coarse stems removed

Steps:

  • In a medium heavy saucepan, melt the butter over medium heat. Add the garlic, ginger, and red pepper and saute, stirring occasionally, for 5 minutes. Add the white wine and reduce by about 1/3. Add the chicken stock cornstarch mixture and continue cooking, stirring all the time, until thickened. Add the soy sauce, pepper, and black beans and reduce the heat to low. Cover the pan and simmer for 10 minutes, stirring occasionally, until thick and chunky.
  • While the beans are cooking, fill a large saucepan halfway up with lightly salted water. Bring it to a boil over high heat and add the shrimp. Bring back to the boil and cook for 5 minutes, then drain well. Immediately spoon a layer of the black bean mixture onto each of 6 heated plates. Scatter the shrimp over the beans and top with a generous mound of spring onions and sprigs of cilantro.

SHRIMP WITH BLACK BEANS IN LOBSTER SAUCE

This is my #1 favorite Chinese dish and it has taken me a few years to duplicate the restaurant recipes and then enhanced to my liking. This origins of this recipe comes from the Lobster Cantonese style dish (with Lobster Sauce and a Chinese-American creation) which was popular in Cantonese restaurants in North America around 1950 or so years ago. Then another variation was created using shrimp and this dish was called Shrimp in Lobster Sauce (which uses the same sauce as the Lobster Cantonese dish but no lobster meat is used). These basic recipes contained a white type of sauce and with some green peas and ground pork added. After this still another variation was created and this time using salted fermented black beans in a dark soy sauce and either Lobster or Shrimp was used. Further, for this recipe (and the other above dishes) getting the eggs to "set" on top of the sauce was a challenge since most home ranges can not generate a very high heat (when using a wok) for cooking. However, I was successful in getting the eggs to "Set" properly by using heated sesame oil. That is, getting the eggs to "set" by partially cooking them (slightly runny eggs) and not incorporated them completely into the sauce.

1 lb large shrimp, fresh
4 teaspoons coarse salt
2 tablespoons preserved black beans, fermented (found in Asian markets, food stores)
2 garlic cloves, minced
2 tablespoons ginger, grated
2 tablespoons rice wine
1/4 lb ground pork (1/4 to 1/2 cup)
2 tablespoons soy sauce
3/4 cup chicken stock (Optional, Won Ton or Asian Chicken Powder)
1 tablespoon dark soy sauce
1 tablespoon oyster sauce (no sweetened version, read label on bottle)
3 -4 tablespoons tapioca starch, powder with 3-6 tablespoons water (substitute cornstarch)
2 eggs, slightly beaten with 2 tablespoons water
2 scallions (spring, green onion)
2 tablespoons peanut oil
2 tablespoons sesame oil

Steps:

  • PREPARATION.
  • The shrimp- Remove the shells from the shrimp and devein by cutting a slit along the back of the shrimp (removing the vein), butterfly, place the shrimp in a bowl, add 2 teaspoons of salt, mix and then rinse under cold water, add another 2 teaspoons of salt, mix and then set aside for 15 or more minutes.
  • The salted black beans- Rinse the beans briefly, place in a small bowl, add minced garlic, graded ginger, 1-2 tablespoons rice wine (2 cover) and then set aside to soak for 15 minutes.
  • The ground pork- In a bowl add the ground pork, 1 tablespoon soy sauce, mix and then set aside.
  • The stock- In a bowl add the stock, 1 tablespoon light soy sauce, 1 tablespoon dark soy sauce, 1 tablespoon oyster sauce, stir and then set aside.
  • The thickening agent- In a small bowl add the tapioca powder (or cornstarch) with water, stir and then set aside.
  • The eggs- In a small bowl add the eggs, with the water, mix lightly and then set aside.
  • The scallions- Wash and clean the scallions and cut at an angle into 1/2 inch pieces, set aside.
  • The sesame oil- In a small frying pan heat 2 tablespoons sesame oil, keep warm and then set aside in the frying pan (to be heated later and used after the eggs are added), as an option see the notes below.
  • COOKING INSTRUCTIONS.
  • In a Teflon pan (or wok) add 1 tablespoons peanut oil and when medium hot add the shrimp, stir-fry until the shrimp turns pink, do not overcook, remove and set aside.
  • Next mash the salted black beans mixture a little, then add 1 tablespoons of oil to a clean Teflon pan (or wok) and when medium hot add the salted black bean mixture, then stir-fry until it starts to release its aroma.
  • Next add the pork mixture and stir-fry until it loses its pink coloring.
  • Next add the stock and stir-fry until boiling.
  • Next re-stir the tapioca powder (or cornstarch), add to the pan and stir-fry to thicken the sauce.
  • Next add the pre-cooked shrimp and cook for about a minute.
  • While the shrimp is re-heating, heat the sesame oil until almost smoking and then set aside (in preparation to add on top of the eggs in order to set).
  • Next add the egg mixture on top of the sauce.
  • Then pour the heated sesame oil on top of the egg mixture to set/cook briefly (eggs should remain somewhat runny and do not stir the eggs into the sauce).
  • Then add the scallions.
  • Finally ladle the shrimp and sauce into a dish and try to retain some of the "set" egg on top for appearance. Serve and enjoy.
  • NOTES:.
  • Instead of using heated sesame oil, do not heat the oil (step # 9, 17) but add to the sauce in step #19 and stir once. Then add the eggs on top and use a cover to let steam "set" cook the eggs. However, this will increase the cooking time and you might overcook the shrimp.
  • Serve with white rice on the side.

For the Marinade:
1 tablespoon rice wine or dry sherry
1/4 teaspoon salt
For the Sauce:
1 tablespoon light soy sauce

3/4 cup chicken broth
For the Cornstarch Slurry:
1 tablespoon cornstarch

Steps:

  • Gather the ingredients.
  • Rinse the shrimp and pat dry.
  • Place the shrimp in a bowl and stir in the marinade ingredients. Marinate the shrimp for 15 minutes.
  • In a small bowl, combine the sauce ingredients and set aside. In a separate small bowl, stir the 1 tablespoon of cornstarch into the 2 tablespoons of water and set aside.
  • Heat the wok or pan and add oil for frying. When the oil is hot, add the black bean sauce and fresh ginger, stirring it together for a few seconds until aromatic.
  • Add the shrimp. Stir-fry briefly, then push to the sides and add the red bell pepper . Stir-fry for about a minute, adding a bit of water, broth, rice wine, or dry sherry if it begins to dry out.
  • Push the shrimp and vegetables up to the sides of the pan. Give the sauce a quick re-stir and add into the middle of the pan. Bring to a boil. Give the cornstarch and water mixture a quick re-stir and add into the sauce, stirring to thicken.
  • Stir to mix the sauce with the shrimp and vegetables and then stir in the scallions. Serve hot over rice.

1/2 pound black beans, picked clean and rinsed
1 tablespoon olive or corn oil, plus more for frying
1 small yellow onion, finely chopped

1 garlic clove, minced
1 tablespoon honey
1 tablespoon apple cider vinegar
1 teaspoon chili powder
1/2 teaspoon ground cumin
Salt and pepper
Flour, for dusting cakes
Sour cream and cilantro sprigs, as garnish
Grilled Shrimp
4 (6-inch) bamboo skewers
2 tablespoons olive oil
1/4 teaspoon chili powder
1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/4 teaspoon salt
16 medium or large headless shrimp, peeled and deveined (leaving tails intact)
Coriander Sauce
1 medium shallot, finely chopped
1/2 teaspoon grated orange zest
1/4 cup orange juice
1/2 cup white wine
2 tablespoons sherry wine vinegar
1/2 teaspoon ground coriander
5 tablespoons butter, softened
2 tablespoons chopped cilantro
Salt and pepper

Steps:

  • Black Bean Cakes
  • Place the black beans in cold water to cover. Soak overnight, or for at least 1 hour. Drain, rinse, place in a large pot, and cover with fresh cold water. Bring to a boil, skim the foam, then simmer over low heat for about 1 hour. Add more water, if necessary, to keep the beans covered.
  • Meanwhile, heat the 1 tablespoon oil over medium-high heat in a large skillet. Add the onion, peppers, and garlic and cook for 2-3 minutes. Add the vegetables, along with the honey, vinegar, chili powder, and cumin, to the beans and continue to simmer. When the beans are quite soft and are starting to break down, season with salt and pepper. Continue to cook until the beans are creamy.
  • Remove the bean mixture from the heat and strain, reserving the liquid. Puree in a food processor, then transfer to a baking sheet. Spread the puree evenly and let it cool completely. Form the puree into little cakes shaped like hockey pucks (use about 1/2 cup per cake). The consistency is perfect if it is moist enough to gather into a ball, but not so wet that the mixture sticks to your hands.
  • Preheat the oven to 400°F. To finish the cakes, lightly dust them with flour. Heat a medium skillet (lightly coated with oil) over medium-high heat. Sauté the cakes just long enough to get a nice crust on each side. When ready to serve, place them on baking sheets in the oven to warm through. Garnish with a dollop of sour cream and a sprig of cilantro.
  • Grilled Shrimp
  • Soak the skewers in hot water.
  • In a medium bowl, combine the olive oil and seasonings. Toss the shrimp with this marinade and refrigerate while you make the coriander sauce.
  • Turn on the broiler or light the grill.
  • Place 4 shrimp on each skewer.
  • Meanwhile, heat the black bean cakes.
  • Broil or grill the shrimp 2-3 minutes on each side, until just cooked through. Remove from the skewers, arrange on four plates, and drizzle with the warm coriander sauce. Serve with a black bean cake.
  • Coriander Sauce
  • Place the shallot, orange zest and juice, wine, vinegar, and coriander in a small saucepan and bring to a simmer over medium heat. Cook until the liquid is reduced to 2 or 3 tablespoons. While it's still hot, whisk in softened butter by the spoonful until the sauce is emulsified (it will look thick and creamy). Stir in the chopped cilantro and season with salt and pepper to taste. Cover and keep warm over low heat.
