DADDY'S SHRIMP TOAST
My father made this for me while experimenting in the kitchen. It was absolutely the most delicious way to use shrimp. I think I've gotten pretty good at making this dish but it still doesn't compare to my father's! Don't be fooled by the ingredients. Most are optional and this is easy to make! Great for parties as appetizers or a main dish.

- In a mixing bowl, combine the shrimp, onion, water chestnuts, celery, and green onion. Stir in crabmeat, egg, parsley, sesame oil, soy sauce, and garlic. Season with salt and pepper to taste.
- Make the dipping sauce: In a small mixing bowl, whisk together soy sauce, water, sesame oil, parsley, garlic powder, and sugar; set aside.
- In a heavy skillet, heat 2 cups oil, or enough to be 1/2 inch deep, over medium heat. Spread a thick layer of shrimp filling on one side of each slice of bread.
- Fry the topped bread in hot oil until golden brown and shrimp is pink, turning once. Do not let the filling sit on the bread too long or the sandwich will get soggy. Drain on paper towels and let cool for a minute. Slice diagonally and serve with dipping sauce or alone.

SHRIMP TOAST
This quick & easy shrimp toast recipe will have you enjoying your favorite Chinese appetizer in under 30 minutes. A simple shrimp mousse is spread over sliced white bread triangles, breaded, and fried to golden brown perfections- it's finger food perfection!

- To the bowl of a large food processor fitted with the blade attachment, add the shrimp, egg, & salt. Pulse until the mixture's smooth.
- Add in the green onions, and pulse again- just until they're also blended in.
- Divide the shrimp evenly out among all the bread triangles. Carefully spread/smooth it out over one face of each triangle.
- Fill a large pot with oil, one inch deep. Heat it over medium high heat.
- While the oil's heating, dip the shrimp mouse covered side of each bread triangle into bread crumbs. Press it in if needed, to ensure that they're coated evenly.
- Transfer the coated pieces of shrimp to the hot oil. Working in batches of four, add them to the hot oil shrimp side first. When it's golden brown, flip it and cook until that side's also golden brown & crispy.
- Transfer to a paper towel lined plate to drain. Serve immediately after with dipping sauce of choice, and a garnish of fresh thinly sliced green onions.

- Place shrimp, water chestnuts, cilantro leaves, green onions, garlic, grated ginger, anchovy filet, sesame oil, fish sauce, soy sauce, egg white, sugar, paprika, cayenne pepper, and salt into the bowl of a food processor. - Very lightly toast bread slices. Trim crusts from bread. Spread shrimp paste onto bread in an equal thickness as the bread. Cut slices in half and then diagonally into diamond shapes. Sprinkle with sesame seeds.
- Place a heavy skillet over medium-high heat; pour in about 1/2 inch of vegetable oil. When oil is hot, place bread slices, paste side down, into the oil. Fry until crispy, 2 to 3 minute per side. - 1. Slice crusts off of each slice of bread and cut into 4 triangles. Set aside.
- 2. Peel, remove tails, devein & clean raw shrimp. Pat dry and set aside.
- 3. Finely dice scallions, water chestnuts & garlic clove on large cutting board then push aside. *I use the remaining water chestnuts in a simple chicken or beef & veggie stir fry served with these tasty treats*
- 4. Cut shrimp into more manageable pieces then begin to finely chop into a paste by rocking a large chef knife back and forth across the surface of the shrimp. This will take a few minutes.
- 5. Add the scallions, water chestnuts & garlic to the shrimp and mince together a bit more then place in a small mixing bowl.
- 6. Add red pepper flake, soy sauce, garlic powder & ginger to the shrimp paste and stir to combine. *you can use finely minced ginger root in this if you want to just be sure to mince well.
- 7. In a separate dish whisk together egg, 1tsp soy sauce (optional) & cornstarch until smooth and pour into shrimp paste. This is the glue so stir together really well.
- 8. Spread one side of each bread triangle with a small amount of the shrimp mixture.
- 9. Heat skillet with 1/4 inch of canola oil to about 350 degrees just intil it starts to ripple and place the bread shrimp side down in the hot oil.
- 10. Fry for 1 1/2 - 2 minutes on one side then turn and fry for 1 minute and remove onto a papertowel or rack for draining. They should be golden brown. Keep warm by placing in oven on very low warming setting until serving.
- 11. Serve these yummie bites with a store bought sweet & sour sauce, chinese duck sauce, chinese mustard or any other type of dipping sauce you like.

- Combine the shrimp, egg, egg white, green onions, parsley, garlic, salt, and white pepper in a food processor and process until blended but still slightly chunky. Add the cream cheese and pulse until smooth and thick. Add the cream and pulse just until blended, being careful not to over process.
- Spread 1/4 cup of the shrimp mixture onto each slice of bread, spreading to the edges and smoothing the top.
- Heat the vegetable oil to 360 degrees F in large deep skillet. Add the shrimp toast in batches, coated sides down, and fry until golden on the first side, 2 to 2 1/2 minutes. Turn and cook until golden on the second side, about 1 1/2 minutes. Drain on paper towels.
- To serve, cut each toast diagonally into quarters. Serve hot, with a drizzle of duck sauce or a dab of pepper jelly, as desired.

- Remove crusts from the bread.
- Using a food processor, blend shrimp, soy sauce, garlic, sesame oil and egg until a smooth paste has formed.
- Spread paste evenly on top of bread.
- Sprinkle bread with sesame seeds and press them into spread.
- Cut bread from corner to corner twice, to form small triangles.

- Line a baking sheet with aluminum foil or parchment paper.
- Place bread on baking sheet and brush with oil.
- Bake 5 minutes (oil side up).

- Make the shrimp paste: Process the egg white, ginger, garlic, 1 tablespoon of the soy sauce, 1 tablespoon of the sesame oil, the sherry, 3/4 teaspoon salt, 1/2 teaspoon of the brown sugar and several grinds of pepper in a food processor until all the ginger and garlic are pureed. Add the shrimp, and pulse until a thick paste forms. Transfer to a medium bowl, and fold in 2/3 of the scallions, the celery, water chestnuts and sesame seeds. (The shrimp paste can be refrigerated for up to 1 day.)
- Trim the crusts from the bread, and evenly divide the shrimp paste among the slices (about 2 heaping tablespoons each). Spread out into an even layer that completely covers the bread.
- Make the dipping sauce: Whisk together the remaining 2 tablespoons soy sauce, 1 teaspoon sesame oil and 1 teaspoon brown sugar, the lemon juice and a large pinch of salt in a small bowl.
- Fry the toasts: Line a baking sheet with paper towels. Fill a large, wide skillet with straight sides, with about 1 inch of vegetable oil. Attach a deep-fry thermometer to the skillet, and bring the oil to 375 degrees F over medium heat. Being careful of the hot oil splashing, put 5 to 6 shrimp toasts in the oil shrimp-side down and fry until the shrimp and the edges of the bread are golden brown, 2 to 3 minutes. Flip the pieces, and continue to fry until the bottoms are golden brown, about 1 minute more. (Adjust the heat as needed to maintain the temperature.) Transfer the shrimp toasts to the prepared baking sheet, and dab the tops with a paper towel to absorb some of the excess oil. Sprinkle the toasts all over with the remaining scallions and some sesame seeds and salt. Cut each toast into 4 triangles, and serve hot with the dipping sauce on the side.

- In a deep-fryer heat oil to 365 degrees. In a food processor combine next 9 ingredients; puree until a slightly chunky paste is formed. Using a rolling pin, flatten bread, one slice at a time. - 1. Peel shrimp. If shrimp is frozen, don't thaw; peel under running cold water. Make a shallow cut lenghtwise, down back of each shrimp; wash out sand vein. Cut shrimp lengthwise into halves. You may buy shrimp that is already deveined to save time.
