Garlic Shrimp Pasta with Spicy Sun-Dried Tomato Cream Sauce image

This is an Italian-inspired seafood pasta recipe with lots of flavors at play. Garlic Shrimp together with Sun-Dried Tomatoes is smothered in a lot of Spicy Creamy Sauce and served over fettuccine pasta. Everything spiced up with basil and crushed red pepper. YUM!

1/2 lb shrimp ((Use unfrozen uncooked shrimp. If you have to, you can use unfrozen cooked shrimp - it will work here too))
4 oz sun-dried tomatoes (in olive oil)
1/4 teaspoon salt
1/4 teaspoon paprika
4 garlic cloves (minced)
1 cup half-and-half (or whole milk)
1 teaspoon dried basil
¼ teaspoon crushed red pepper
1 cup Parmesan cheese (, freshly shredded)
8 oz fettuccine pasta ((use gluten free brown rice fettuccine for gluten free version))

Steps:

  • Note: if using sun-dried tomatoes in oil (in a jar), make sure to drain sun-dried tomatoes from oil, before using them. Reserve 2 tablespoons of this drained oil for sauteing as described below:
  • In a large skillet, saute minced garlic and sun-dried tomatoes (drained from oil) in 2 tablespoons of oil (reserved from the sun-dried tomatoes jar - see note above) for 1 minute until garlic is fragrant.
  • Add shrimp, sprinkle with a small amount of salt, paprika, and cook on medium heat for about 2 more minutes.
  • Add half-and-half, basil, and crushed red pepper to the skillet with shrimp, bring to boil and reduce to simmer. Whisk the Parmesan cheese into the hot cream and stir to melt cheese, on the lowest heat setting, until cheese is melted.
  • Remove the sauce from heat. Add more salt, basil, and more crushed red pepper if desired, to taste.
  • In the meantime, cook pasta according to package instructions. Drain (reserving some pasta water).
  • Add cooked pasta to the creamy mixture, add more salt, basil, and more crushed red pepper if desired, to taste. If the sauce is too thick, use the reserved pasta water to thin it out.

This creamy shrimp pasta in a sun-dried tomato and mascarpone sauce is rich and saucy, with big flavor that comes together fast and easy.

12 ounces long fusilli (, or other long noodle of choice)
4 tablespoons butter (, divided)
1 tablespoon extra virgin olive oil
1 pound shrimp (, peeled, cleaned, and deveined (leave the tails on if you like))
1/2 teaspoon kosher salt (, plus more for salting the pasta water)
freshly ground black pepper
2 tablespoons shallot (, minced)
2 large cloves garlic (, minced or pressed)
1/4 teaspoon red pepper flakes
1/4 cup tomato paste
1/2 cup sun dried tomatoes in oil (, drained and chopped (a 6-ounce jar))
1 cup mascarpone (, (an 8-ounce container))
1 cup reserved pasta water
1/2 cup fresh tarragon (, roughly chopped, plus more for serving (you could also use fresh basil if you prefer))

Steps:

  • Fill a large pot with water for your pasta. Once the water is boiling, generously season with kosher salt and add the pasta. While the pasta cooks, heat a large skillet over medium and add 2 tablespoons of butter and the olive oil. Season the shrimp with the salt and freshly ground black pepper. Once the butter has melted into the oil, add the shrimp and cook for 2 minutes on each side or until they turn pink and start to become opaque. Transfer the shrimp to a plate.
  • To the same skillet, add the remaining 2 tablespoons of butter over medium. Add the shallot, garlic, and red pepper flakes, and cook for 1-2 minutes or until fragrant, stirring so the garlic doesn't burn. Add the tomato paste and sun dried tomatoes and continue to stir for 3-4 minutes. Check the pasta which should now be al dente. Use a coffee mug to reserve 1 cup of pasta water then drain the pasta but do not rinse. Add half of the reserved pasta water to the tomato mixture, stirring and scraping up all of the browned bits on the skillet. Stir in the rest of the pasta water until saucy. Add the mascarpone and stir until it has melted into the sauce, then add the cooked shrimp, and tarragon and cook for another or minute or two. Add the pasta to the skillet, toss everything together, and taste for seasoning, adding more salt if desired. To serve, top with more tarragon and a kiss.

1/2 lb. (8 oz.) spaghetti noodles
2 tablespoons olive oil
1 lb. white shrimp, peeled and deveined
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons butter
1 tablespoon garlic, minced
1/4 cup sun-dried tomatoes
1 teaspoon all-purpose flour
1 cup heavy cream
1/4 cup Parmesan cheese, grated
3 cups baby spinach
2 tablespoons fresh basil, finely sliced

Steps:

  • Bring a large pot of salted water to a boil over medium-high heat. Add spaghetti noodles and cook until al dente (fully cooked but still firm) according to package directions, about 10 minutes. Drain well in a colander and set aside. Toss in some olive oil to keep the pasta from sticking together.
  • Meanwhile, heat oil in a large skillet over medium high heat for 2 minutes until the hot oil is sizzling hot. Add shrimp and season with salt and pepper. Sauté for 5 minutes until the shrimp becomes nicely browned on both sides. Set aside on a plate.
  • In the same skillet, add butter, garlic, and sun-dried tomatoes. Sauté until fragrant, about 1 minute. Stir in flour and mix until well combined.
  • Add heavy cream and Parmesan cheese. Stir well and bring the sauce to a simmer. Reduce the heat to medium and keep stirring until thickened to a desired consistency.
  • Stir in spinach and cook until softened, about 1 minute. Return the cooked shrimp to the skillet and toss well to coat.
  • Add in cooked spaghetti and toss well to combine. Sprinkle fresh basil and extra Parmesan cheese on top and drizzle with olive oil if desired.

Sun-dried tomatoes might scream 1980s nouveau cuisine to you, and that's a fair assessment considering their somewhat profligate use throughout the decade. Yet this dish may have you reconsidering their place in your pantry. Used sparingly, sun-dried tomatoes can impart a bold tomato-y taste that Mark Bittman argues is in some ways "better than 'real' tomato flavor." In this 20-minute sauté, the intense tang of capers and tomatoes plays beautifully off the mild sweetness of shrimp. Serve it over pasta or rice, or alone with a big hunk of good bread.

1/4 cup extra virgin olive oil
Several sprigs thyme
1 tablespoon minced garlic
1 cup sun-dried tomatoes, roughly chopped
2 tablespoons capers, drained if necessary
1/2 cup fish stock or dry white wine
16 to 24 large shrimp, peeled
Salt and pepper
Chopped fresh basil

Steps:

  • Preheat broiler; rack should be 2 to 4 inches from heat source and the heat as high as possible.
  • Put oil in a large, ovenproof skillet over medium heat and add thyme, garlic, tomatoes and capers. Cook just until mixture sizzles, then add stock or wine; raise heat and bring to a boil. Cook for about a minute, then add shrimp, turning them in sauce.
  • Put skillet under broiler and cook until shrimp are done, 3 to 5 minutes, turning once. Sprinkle with salt and pepper, garnish with basil, and serve hot or warm.

6 large cloves garlic, thinly sliced or chopped
1 pound medium-large shrimp, peeled and deveined, tails off
Salt and pepper
1 cup loosely packed Italian sundried tomatoes or sundried cherry tomatoes, not in oil
2 bunches broccolini or 1 bunch broccoli rabe
1 tablespoon fresh lemon zest, or 1 teaspoon dried lemon peel
½ tablespoon fresh orange zest, or ½ teaspoon dried orange peel
About 1 tablespoon fresh oregano leaves, chopped (or about 1 teaspoon dried oregano leaves, lightly crushed in palm)
About 1 teaspoon crushed red pepper flakes or ground pepperoncini, ⅓ palmful
About 1 teaspoon fennel seed and/or fennel pollen, ⅓ palmful
1 pound penne with lines or short-cut pasta
About 4 tablespoons extra-virgin olive oil (EVOO)
½ cup dry vermouth or white wine
1 lemon, juiced
1 cup feta crumbles or ricotta salata crumbles, optional but recommended ¼ cup chopped flat-leaf parsley, a handful ¼ cup sliced Greek pepperoncini or sliced Italian pickled cherry pepper rings and a splash of their brine

Steps:

  • Toss half the garlic with shrimp and season it with salt and pepper and let it hang out. Cover sundried tomatoes with boiling or very hot water, soak to soften 15 minutes. Heat a pot of water to boil for pasta. Add broccolini and boil 2 minutes, then remove to strainer and run under cold water, drain and chop into small ½ inch pieces. Drain sundried tomatoes very well, slice and toss with citrus zest, oregano, chili, fennel. Salt water and boil pasta 1-2 minutes less than directions, reserving a full cup of water just before draining. Add half the EVOO to a large pan and cook shrimp 2-3 minutes, then add white vermouth or wine to absorb, and transfer to a plate or bowl and cover. Add remaining oil to the pan, add sundried tomatoes, remaining garlic, and broccolini, then toss to heat through and combine, add pasta water, pasta, feta and shrimp, toss with parsley, adjust salt and pepper and serve garnished with hot pepper rings and brine.

Frozen shrimp is a freezer staple that can be counted on to save dinner any night - simply thaw to use them whenever needed. Here, shrimp and spaghetti are tossed with juicy cherry tomatoes, which are gently simmered until they burst and turn saucy. This dish is best with ripe, in-season cherry tomatoes, but the aromatic fennel seeds and garlic infused in the oil will coax maximum flavor out of less enthusiastic tomatoes while adding depth to the sauce.

8 tablespoons extra-virgin olive oil
1 pound peeled and deveined frozen shrimp (16/20-count), thawed and cut into thirds
Kosher salt (Diamond Crystal)
3 large garlic cloves, gently smashed with the flat side of a knife
1 teaspoon fennel seeds
1/4 teaspoon red-pepper flakes, or to taste
2 pounds cherry tomatoes, larger ones halved, small ones kept whole
1 pound spaghetti
Handful of basil leaves, torn
Black pepper

Steps:

  • In a large skillet, heat 2 tablespoons oil over medium. Add the shrimp, season with 1 teaspoon salt and cook, stirring occasionally, until just cooked through, about 3 minutes. Transfer the shrimp to a dish and set aside. Discard any excess liquid in the pan.
  • Add the remaining 6 tablespoons oil and the garlic cloves to the same pan and cook over medium-low, turning the garlic a couple of times until light gold and fragrant, taking care not to burn them, about 4 minutes. Add the fennel seeds and red-pepper flakes, stir and cook until fragrant, about 1 minute. Increase the heat to medium and add the cherry tomatoes and 1 1/2 teaspoons salt.
  • Cook the tomatoes, stirring occasionally, until they release their juices and get saucy, 25 to 30 minutes. While the tomatoes cook, bring a large pot of well-salted water to a boil for the pasta. Add the spaghetti and cook until al dente, about 10 minutes.
  • Transfer the shrimp with any juices to the tomatoes to reheat for a couple of minutes. Taste the sauce and adjust seasoning.
  • Set the pasta pot next to the saucepan and use tongs to transfer the spaghetti to the tomatoes and shrimp. The starchy water clinging to the spaghetti will make for a tasty and silky sauce. (You can drain the spaghetti, if you prefer. If you do, reserve 1/4 cup of the pasta water to add as needed for a silky sauce.) Remove the pan from the heat, add the basil and toss well. Season with black pepper to taste and serve.
