SHRIMP SCAMPI WITH CHERRY TOMATOES

Number Of Ingredients 13

3 1/2 tablespoons kosher salt
1 pound bucatini, spaghetti or fettuccine
3 tablespoons olive oil
2 cloves garlic, minced
2 shallots, minced
1 pound cherry tomatoes, sliced
1 tablespoon paprika
1 teaspoon chile flakes
1 cup white wine
1 cup heavy cream
1 pound large shrimp, peeled and deveined
1/4 cup chopped fresh chives
3 tablespoons fresh parsley leaves, chopped

Steps:

  • Fill a high-sided skillet set over high heat with water. Add 3 tablespoons of the salt and bring to a boil. Add the pasta, and gently stir using tongs to make sure the pasta doesn't stick to itself. Cook the pasta for 12 to 14 minutes, and then drain.
  • In a large skillet set over medium heat, add the oil. When hot, add the garlic, shallots, tomatoes and the remaining 1/2 tablespoon salt. Saute until the onions are translucent, 2 to 3 minutes. Stir in the paprika and chile flakes, and saute for 1 to 2 minutes. Pour in the wine, scraping up any bits on the bottom of the pan. Bring to a simmer. Add the cream and return to a simmer for 1 minute. Add the shrimp and cover with the sauce. Cook, stirring to make sure the shrimp cooks through, 3 to 5 minutes. Add the chives and parsley, and toss to mix. Serve the shrimp and sauce over the pasta.

8 tablespoons Butter - divided
2 tablespoons Olive Oil
1/2 cup Shallots, thinly sliced
1 1/2 tablespoons Garlic, chopped
1 lb Large Raw Shrimp, peeled, deveined, and thawed
Kosher Salt, to taste
Freshly Ground Pepper, to taste
Juice of 1 1/2 Lemons
1/2 cup Dry White Wine (I use Chardonnay)
10 ounces Pasta, cooked (I use Linguini)
5-ounce package Fresh Spinach (Baby or Regular)
2 cups Cherry Tomatoes, halved

Steps:

  • Heat a large skillet over medium-high, melt 4 tablespoons of butter and 2 tablespoons olive oil. Turn the heat to medium and add 1/2 cup thinly sliced shallots. Cook for 2 minutes until soft and translucent. Add 1 1/2 tablespoons chopped garlic and cook for 1 more minute.
  • Add 1 pound large raw shrimp (peeled, deveined and thawed) in one layer to the skillet and season with salt and pepper. Do not stir. Cook on one side for 1-2 minutes depending on the size of your shrimp. Turn the shrimp individually and cook for another 1-2 minutes. They should be a whitish opaque with the tails turning a reddish-orange color. Remove shrimp from the skillet and keep warm.
  • Add the juice of 1 1/2 lemons and 1/2 cup dry white wine. Bring to a boil and add the remaining 4 tablespoons of butter.
  • Add a 5 ounces package of fresh spinach and 2 cups cherry tomatoes (halved) along with 10 ounces cooked pasta into the skillet and gently toss until the spinach is wilted. Season again with salt and pepper to taste.
  • Return the shrimp to the skillet and mix all together.
  • Serve warm with crusty bread and a side salad (optional).

1 1/4 lbs large shrimp, peel and deveined
3 garlic cloves, minced
1/2 cup halved cherry tomatoes (or 2 Tbs slivered sun dried tomatoes)
1/2 cup dry vermouth or 1/2 cup dry white wine
1 tablespoon butter
salt and pepper

Steps:

  • Heat the olive oil in a large skillet over medium high heat add shrimp and brown for 1-2 minutes. Add garlic and tomatoes stir a few seconds then add vermouth. Cool until liquid is reduced and shrimp are cooked through 2-3 minutes longer.
  • Add Butter and salt and pepper to taste, swirling pan to melt butter.

3 lbs large shrimp, peeled
1 1/2 cups extra virgin olive oil
5 garlic cloves, finely chopped
1 lemon, juice of
1 lb angel hair pasta, prepared al dente'
1 lb fresh spinach
1/2 teaspoon salt
1/2 teaspoon ground black pepper (freshly ground is always best, but not necessary)

Steps:

  • Prepare angel hair pasta according to box directions. (boil 2 minutes).
  • In a 2 qt pot, add olive oil and heat.
  • Add garlic and cook until golden brown.
  • Add shrimp, salt, pepper and lemon juice, bring to boil.
  • Add spinach, stir and cover.
  • Cook until spinach has shrank (4 to 8 minutes), stir once half way through.
  • Stir well.
  • Pour over prepared pasta.
  • Stir well.
  • I use very little salt when I cook, more can always be added at the table.

10 ounces fresh Baby Spinach, 1 bag 6-10 oz
14 1/2 ounces canned diced tomatoes
8 ounces linguine, cooked and drained (about 4 cups)
grated parmesan cheese

Steps:

  • COOK the shrimp in a 12-inch skillet for 6 minutes.
  • ADD the spinach and tomatoes. Cook and stir for about 5-6 minutes more or until the shrimp turn pink and spinach wilts.
  • ADD pasta to the skillet and toss to coat. Portion onto plates and top with sprinkle of Parmesan cheese. Serve immediately.
