Shrimp Ramakis image

Shrimp marinated in teriyaki sauce are wrapped in bacon and broiled until crisp. Serve with white rice and steamed vegetables.

24 jumbo shrimp, peeled and deveined
1 ½ cups bottled teriyaki sauce
1 pound bacon strips, cut in half
1 (8 ounce) can whole water chestnuts, drained
24 wooden toothpicks

Steps:

  • In a glass bowl, toss shrimp with teriyaki sauce. Cover with plastic wrap and let marinate in the refrigerator for one hour.
  • Adjust oven rack to the middle setting and set oven to preheat.
  • Remove shrimp from marinade and place each on a half strip of bacon with a water chestnut. Roll and secure with a toothpick, then place onto a broiler pan approximately 1/2 inch apart from each other. Discard remaining marinade.
  • Broil ramakis for 5 minutes on each side, or until the shrimp is pink and the bacon is cooked (keep the oven door ajar and watch carefully). Drain on paper towels and serve immediately.

Number Of Ingredients 6

12 (1/2-inch-thick) slices brioche or firm white sandwich bread, crusts discarded
16 jumbo shrimp, peeled, leaving tail fan attached, and deveined
3/4 stick unsalted butter, softened
2 tablespoons finely chopped dill
1 tablespoon finely chopped shallot
Equipment: 8 (2-ounce) ramekins or small ovenproof cups

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Cut bread into 24 (2- by 1-inch) rectangles, then bake in a 4-sided sheet pan, turning once or twice, until golden, 8 to 10 minutes. (Leave oven on.) Transfer to a rack to cool.
  • Season shrimp with 1/4 teaspoon salt and 1/8 teaspoon pepper. Mash together butter, dill, shallot, and 1/4 teaspoon each of salt and pepper. Put a dab of dill butter in each ramekin, then put ramekins in sheet pan. Arrange 2 shrimp, with tails up and facing each other, in each ramekin. Spread remaining dill butter in ramekins and bake until shrimp are just cooked through, 20 to 25 minutes. Serve with toasts.

1 cup dried bread crumbs
1 cup crab meat
1 cup small shrimp
3 green onions, chopped
1 cup chopped celery
1 cup mayonnaise
1 tablespoon Worcestershire sauce
½ cup chopped parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, toss together 3/4 cup breadcrumbs, crab, shrimp, green onions, celery, mayonnaise, Worcestershire sauce and parsley. Mix well, and spoon mixture into clean, dry seafood shells or ramekins. Place stuffed shells on a foil-lined cookie sheet, and sprinkle with remaining 1/4 cup bread crumbs.
  • Bake in the preheated oven for 30 minutes.

30 (16/20) jumbo shrimp, peeled and deveined
2 teaspoons minced garlic
1/2 cup halved grape tomatoes
1/2 cup diced red onion
2 tablespoons Thai chili paste, or more to taste
Salt and freshly ground black pepper
1 cup grapeseed oil
1 cup vegetable oil
1 loaf baguette or French bread

Steps:

  • Preheat the oven to 400 degrees F. Divide the shrimp among 6 small ramekin dishes and set aside.
  • In a small bowl, mix the garlic, tomatoes, onions, chili paste, and salt and pepper, to taste. Divide the mixture between the 6 ramekin dishes over the shrimp. In a saucepan, over medium-high heat, blend both the oils and heat to 325 degrees F. When the oil reaches the proper temperature, pour it evenly into the ramekin dishes. Bake in the oven until the shrimp turn pink, about 6 to 8 minutes. To finish, slice the bread on a bias, about 1-inch thick. Remove the ramekins from the oven and serve immediately with the bread on the side for dipping.

400 g cooked shrimp
200 g salted butter
1 spring onion
2 cloves of garlic
1 tbsp chopped fresh dill
1 tbsp chopped fresh parsley
1/4 tsp ground black pepper

Steps:

  • Chop the peeled and cooked shrimp, and add it to a bowl.
  • Chop the spring onion, garlic, and add them to the shrimp together with the dill and parsley.
  • Mix everything well and season with ground black pepper.
  • Melt the butter over a low heat, and leave to cool slightly, so the milky bits are separated.
  • Divide the herb shrimp between 4 ramekins, then pour over the clarified butter.
  • Chill for at least 2 hours or until the butter sets.

2 lbs medium shrimp
2 (10 ounce) packages frozen chopped spinach, thawed
1/2 cup butter
1/3 cup all-purpose flour
2 1/2 cups half-and-half
salt, to taste
pepper, to taste
2 scallions, minced (white part only)
1/2 cup dry sherry
1/2 lemon, juice of
1/2 cup freshly grated parmesan cheese

Steps:

  • Put the shrimp in a large pan with enough water to cover; bring to a boil.
  • Remove from heat and let stand for 1 minute.
  • Drain into a collander, peel, and devein; set aside.
  • Cook the spinach by following the package directions; drain in a collander, squeeze almost dry and set aside.
  • In a medium saucepan, melt 6 tablespoons butter over moderate heat.
  • Add in the flour; whisk constantly for about 2 minutes or until very smooth.
  • Gradually add in the half-and-half, whisking for 5 minutes or until the sauce thickens.
  • Season to taste with salt and pepper, whisk and remove from heat.
  • Butter six to eight 4-oz. ramekins; set aside.
  • In a skillet, melt the remaining 2 tablespoons butter over medium heat.
  • Add in the scallions; stir/saute 1 minute.
  • Add in the sherry, cook until almost evaporated; stir onion mixture into cream sauce.
  • Add 1/2 cup cream sauce to the spinach mixture (adding more sauce, if necessary, for a creamy but not soupy mixture).
  • Divide half the spinach among the prepared ramekins; layer equal amounts of shrimp over the spinach; sprinkle each with some of the lemon juice; cover each with equal amounts of the remaining spinach mixture.
  • Sprinkle cheese over the top of each and bake on a heavy baking sheet in a 350° oven for about 10 minutes or until golden.
