CRAB OR SHRIMP ON CRACKERS
My mom has made these ever since I was little. We usually make these with crab meat, but you can use canned shrimp if you'd like. These are very easy and quick to make. I will sometimes make the mixture ahead of time and then just top on crackers and bake.

Steps:
- Mix all ingredients except the cheese until mixture sticks together. Put enough mixture to cover cracker and top with a pinch of cheese. Place on a baking sheet and bake at 350 until cheese melts.

CRACKER BREADED DEEP-FRIED SHRIMP
Make certain to crush the crackers to an smaller coarse texture do not crush to a fine texture. Leave the tails on the shrimp intact for this. If you are using the unsalted crackers, then adjust the seasoned salt to taste. This shrimp is better than any served at a fancy restaurant!

Steps:
- Peel the shrimp, devein and leave the tails on .
- In a bowl mix together the crushed Ritz crackers, flour, 1/4 teaspoon black pepper and seasoned salt.
- In another bowl mix/whisk together the buttermilk and egg, Tabasco and 1/4 teaspoon black pepper until well combined.
- Holding the shrimp by the tail dip the shrimp into the buttermilk mixture, then dredge into the cracker mixture.
- Pour about 3 inches of oil into a large deep heavy-duty skillet or a cast-iron skillet (or use a deep fryer) heat oil to 375 degrees.
- Holding the shrimp by the tail carefully place the shrimp into hot oil.
- Fry in batches for about 1-2 minutes or until golden brown.
- Drain on a wire rack with paper towels under the rack (do not place the cooked shrimp directly onto the paper towels or they will become soft).

- Mix, in a bowl, the first 5 ingredients. Spread in a 9x13 pan.
- Layer overtop, and in order given the next 5 ingredients.
- This is best if mixed the night before serving, but a few hours is great too. Serve with assorted wheat and rice crackers.

- Prepare the Seasoned Crackers: Stack crackers upright (as they are packaged in the sleeve) in an airtight container in a single layer. Whisk remaining 6 ingredients in a bowl; pour mixture evenly over all crackers. Put lid on container; let stand 10 minutes. Flip container; let stand 10 minutes. Repeat until oil and seasoning have soaked into crackers, about an additional 10 minutes.
- Prepare the Shrimp: Stir together shrimp, salt, and pepper in a bowl until evenly coated. Heat oil in a large nonstick skillet over medium-high. Arrange shrimp in 1 layer inside skillet. Cook until shrimp just turn pink and firm, 2 to 3 minutes per side. Transfer to a large bowl; cool slightly, about 5 minutes. Add parsley, lemon juice, chives, and dill; stir together until shrimp are evenly coated.
- Arrange 24 seasoned crackers on a platter. (Reserve remaining crackers for another use.) Spread 1 teaspoon cream cheese on each cracker. Top each cracker with 1 shrimp, and spoon ½ teaspoon pepper jelly onto each shrimp. Garnish with additional herbs. Serve immediately.
