1 red bell pepper, sliced into thin strips
1 green bell pepper, sliced into thin strips
1 red onion, sliced into thin strips
1 pound uncooked medium shrimp, peeled and deveined
1 (1.12 ounce) package fajita seasoning mix, divided
3 tablespoons olive oil, divided
4 (10 inch) flour tortillas, toasted

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Place bell peppers and onion in a large bowl. Place shrimp in a separate bowl. Sprinkle 2 teaspoons of the fajita seasoning over the shrimp. Sprinkle the rest of the seasoning over the vegetables. Drizzle 2 tablespoons olive oil over the vegetables and stir until evenly combined. Add remaining 1 tablespoon olive oil to the shrimp and stir until combined.
  • Place vegetables in the basket of the preheated air fryer and cook for 12 minutes, shaking halfway through cook time. Transfer mixture to a large bowl.
  • Place shrimp in the basket of the air fryer and cook for 5 minutes. Flip and cook for 3 minutes more. Divide vegetables among tortillas and top with shrimp.

1 pound (450g) raw shrimp (thawed)
3 small mixed bell peppers (sliced)
1 small yellow onion (sliced)
1 tablespoon vegetable oil (divided)
1 tablespoon fajita seasoning (divided)
4 tortillas
pico de gallo
1 avocado (sliced)
lime crema

Steps:

  • Preheat the air fryer to 375°F (190°F) for 5 minutes.
  • Meanwhile, season the vegetables. Toss with half of the oil and half of the fajita seasoning. Add the vegetables to the Air Fryer basket and Air fry for 3 minutes.
  • As the vegetables are being air fried, season the shrimp with the rest of the oil and fajita seasoning.
  • When the 3 minutes are up, with a spatula move the vegetables to one side of the air fryer basket, and add the shrimp to the other half.
  • Air fry for 6 minutes at 375°F (190°F) flipping halfway through. Mix everything together and serve.
  • Assemble the fajitas over tortillas, and top with your favorite toppings (pico de gallo, guacamole or avocado slices, and lime crema).

1/2 Cup Sweet Onion (Diced)
2 Tbsp of Gluten-Free Fajita or Taco Seasoning
1 Pound Medium Shrimp (Tail-Off & Defrosted)
Olive Oil Spray
White Corn Tortillas or Flour Tortillas

Steps:

  • Spray the air fryer basket with olive oil spray or line with foil.
  • Add the peppers, onion, and seasoning to the basket.
  • Add a coat of olive oil spray.
  • Mix it all together.
  • Cook at 390 degrees for 12 minutes.
  • Open the lid and add in the shrimp.
  • Apray it again and mix it together.
  • Cook an additional 10 minutes.
  • Serve on warm tortillas.

1 pound frozen cooked shrimp, peeled and deveined, tails removed, thawed
1 red bell pepper
1 green bell pepper
1 onion
1 tablespoon oil
1 teaspoon chili powder
1 teaspoon cumin
1 teaspoon sugar
1 teaspoon salt
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon cayenne

Steps:

  • Place the thawed shrimp in a medium sized bowl.
  • Slice the peppers and onion into strips and add to a second bowl.
  • Drizzle half the oil over the shrimp and half over the vegetables.
  • Add all of the seasonings to a small bowl and stir to combine.
  • Sprinkle the spice blend evenly over the bowl of shrimp and the bowl of vegetables. Stir well to coat.

Add 2 minutes of cook time if you prefer softer veggies. I like to toast my tortillas in the air fryer as well but it is not necessary. Serve with toppings of your choice such as salsa, sliced avocado, and cheese.

3 teaspoons olive oil, divided

1 pound chicken tenders, cut into strips

8 (6 inch) flour tortillas, warmed

Steps:

  • Place bell pepper strips and onion petals in a large bowl. Drizzle 2 teaspoons of olive oil over the top and season with salt and pepper. Stir until evenly combined.

1 lb raw shrimp, peeled and deveined
1/2 c olive oil
1/2 c lime juice
1 Tbsp cumin
1 Tbsp garlic powder
1 Tbsp onion powder
1 Tbsp chili powder
1 medium green bell pepper
1 medium red bell pepper
1 large white onion
2 jalapeno peppers

Steps:

  • 1. Add shrimp, seasonings, oil, and lime juice to Ziploc bag. Marinate in the fridge for at least 2 hours
  • 2. Cut up all veggies into strips. Remove seeds from jalapenos if you want less spicy. Add a little oil and all seasonings to veggies.
  • 3. Line your air fryer basket with foil to hold in the juices and promote steam. Add just the veggies which are oiled and seasoned and cook last 370 for 8 min.
  • 4. Open the air fryer and add marinated shrimp without excess juice on top of veggies. Cook for another 7 minutes at 370.
  • 5. Open air fryer and toss all together with tongs and look at shrimp. If needed which I did, cook for approx 2 more minutes. Open and toss and get your tortillas ready and build your yummy fajitas. Enjoy!
