LEMON SHRIMP PASTA IN GARLIC WHITE WINE SAUCE

Steps:
- In a large pan, add butter, oil and heat it for a minute on high flame and then reduce the flame to medium.
- Now add chopped garlic and chili flakes. Let them crackle for 10 seconds.
- Now, add the shrimp, Italian seasoning and let them cook for 3-4 minutes (saute in between).
- Once the shrimps are fully cooked, Transfer them to a large plate.
- In the same pan, add the butter, oil and let it heat for a minute.
- Add crushed garlic, stir 3-4 times and then discard the garlic.(This will flavor the sauce with garlic without giving it an over-powering garlic flavor) BUT (You may keep the garlic as per your choice and proceed with next step).
- Add the All-Purpose flour and saute for 2 minutes (over medium flame to prevent from burning).
- Once the flour is cooked, add the broth and wine.
- Whisk everything and reduce the flame to low.
- Bring this to a boil once and add the cream.
- Whisk everything and let this cook for 1-2 minutes over medium-low heat.
- Add the cooked shrimp, lemon juice and seasoning.
- Stir everything carefully and mix.
- Now add the pasta and give it a quick mix (I like to use tongs to mix everything here).
- Let this cook for 2-3 minutes and then turn off the heat.
- Transfer to a serving dish and top with fresh cilantro, chili flakes and add some lemon juice on top (if you are using any garnish).
- Serve immediately and enjoy.

- Heat two tablespoons butter in a large pot over high heat. Add half of the garlic and sauté, stirring constantly, for one minute. Add the broth and water; bring to a boil. Add the pasta and boil until the pasta is cooked. Lower the heat and simmer until most of the liquid is absorbed. Do not drain - there should be some liquid left in the pan to help coat the noodles.
- While the pasta is cooking, heat two tablespoons butter in a large skillet over medium heat. Add the shrimp and saute for 1-2 minutes on each side until the shrimp are almost cooked through.
- Add the garlic, sage, and white wine to the shrimp pan. Let the shrimp cook for another 3-5 minutes or until most of the wine has evaporated and the shrimp are lightly browned on the outside. Remove from heat and set aside. Cover so the shrimp stays warm.
- Add the shrimp, whipping cream, Parmesan, and parsley to the cooked pasta. Toss everything together and finish with a squeeze of lemon juice, salt, and pepper.

- Bring a large pot of water to a boil.
- Thaw shrimp in a colander under cool running water. Pat dry with paper towel. Sprinkle shrimp with salt and pepper.
- Heat oil in a large nonstick skillet set over medium-high heat. Sauté shrimp until just pink on both sides, but not bright white. (Bright white indicates overcooking.) Transfer cooked shrimp to a bowl and set aside.
- Add butter to skillet and adjust heat to medium. Add onions and garlic, sautéing until onions are translucent. Sprinkle flour over onions and let flour cook for about a minute, stirring and scraping pan as needed.
- Add 1 tablespoon salt and pasta to the pot of boiling water. Cook pasta according to package instructions.
- Slowly pour white wine into skillet, stirring constantly to combine. Let wine come to a simmer, then gradually pour in cream.
- Add spinach and tomatoes, stirring gently to combine. Continue simmering until tomatoes are softened to your liking. (I prefer mine soft but not mushy or falling apart.)
- Add Parmesan, salt, pepper, and oregano. Continue stirring and simmering as needed until cheese has melted and sauce has thickened a bit. If too thick, use some pasta water to thin it out.
- Return shrimp to the pan and toss to coat.
- Drain pasta, reserving ½ cup of pasta water if needed to thin sauce.
- Add cooked pasta to the pan with the sauce and stir to coat.
- Serve immediately.

SEAFOOD LINGUINI WITH WHITE WINE SAUCE
We were craving shrimp and white wine sauce on night, and this is what I came up with. Bay scallops were on sale at the store, so I threw those in too. Please feel free to use any white wine you like. I happened to have a nice bottle of sauvignon blanc on hand, and it worked just fine. As a matter of fact, it tasted amazing. Note on the sea salt: I have some Tuscan flavored sea salt which is what I used for seasoning. If you don't have a flavored salt, please feel free to add some dried spices to taste such as dried Italian spice or a little rosemary. This also tastes great reheated the next day after the pasta absorbs more of the sauce.

- Cook linguini according to package directions.
- In a large skillet over medium heat, warm the olive oil.
- Add garlic and crushed red pepper and cook for a couple minutes until fragrant.
- Melt a couple tablespoons of the butter into the olive oil and garlic, and add the shrimp.
- Add the white wine and bring to a boil.
- Reduce heat and simmer for another 3-5 minutes until wine reduces.
- Add scallops, remaining 1 tbsp of butter and lemon zest.
- Cook sea scallops for another couple minutes until just warmed through.

- When pasta is cooked , drain and add to a large serving bowl.

- I like to let the pasta sit for a bit covered in foil to absorb some of the sauce before serving.

- In a large saute pan, heat 1/4 cup oil and cook garlic and shallot until translucent, about 2 minutes. Deglaze the pan with the wine, and add parsley, basil and thyme and let the liquid reduce by half. Using a fine strainer, strain the reduction into a clean saucepan and add the cream. Over low heat, let the sauce reduce to medium thickness. To the now empty saute pan, add 2 tablespoons olive oil, saute scallops, cook until opaque and remove to a utility platter in a warm place. - Remove tails from shrimp and place in a small saucepan with 1 cup of water. Keep shrimp for later in the recipe.
- Bring shrimp tails and water to a boil, reduce and simmer for 10 minutes. Add chicken base and stir. Remove from heat, add saffron, cover and allow to steep for 5 minutes. Strain and reserve liquid for later in the recipe.
- In a large fry pan, cook shallots and garlic over medium heat until just soft in coconut oil or olive oil.
