A quick and easy shrimp pasta in a tasty tomato and feta sauce.

Number Of Ingredients 13

8 ounces linguine (gluten free for gluten free)
1 tablespoon olive oil
1 onion, diced
3 cloves garlic, chopped
red chili pepper flakes to taste
1/4 cup white wine or chicken broth
4 cups diced fresh tomatoes or 1 (28 ounce) can diced tomatoes
1 teaspoon oregano
1 pound shrimp, peeled and deviened
1/2 cup feta, crumbled
1 tablespoon dill, chopped
1/4 cup parsley, chopped
salt and pepper to taste

Steps:

  • Bring water to a boil in a large pot and cook the pasta as directed on package.
  • Meanwhile, heat the oil in a pan over medium heat, add the onion and cook until tender, about 5-7 minutes.
  • Add the garlic and chili pepper flakes and cook until fragrant, about 1 minute.
  • Add the wine and simmer for a few minutes.
  • Add the tomatoes and oregano and simmer until the sauce thickens, about 10 minutes
  • Add the shrimp and and simmer until cooked, about 2-4 minutes.
  • Mix in the feta, dill and parsley, season with salt and pepper and serve over the linguine.

1 pound medium shrimp (about 40)
2 pints vine-ripened cherry tomatoes
4 large garlic cloves
1 bunch scallions
1/4 cup extra-virgin olive oil
1/2 cup finely chopped fresh basil leaves
1 1/2 cups crumbled feta (about 6 ounces)
1 pound dried linguine

Steps:

  • Shell shrimp and, if desired, devein. In a large saucepan of boiling salted water cook shrimp until cooked through, about 1 minute, and drain well.
  • Halve tomatoes and mince garlic. Finely chop scallions. In a large bowl stir together all ingredients except linguine with salt and pepper to taste. Chill sauce, covered, 1 hour. Let sauce stand at room temperature, stirring occasionally, 20 minutes.
  • In an 8-quart kettle bring 6 quarts salted water to a boil and cook linguine until al dente. Reserve 1/3 cup pasta water and drain pasta. Add pasta to sauce and toss well, adding enough pasta water to reach desired consistency.

4 garlic cloves, minced
1 teaspoon olive oil
1 can (28 ounces) diced tomatoes, undrained
1/4 cup sun-dried tomatoes (not packed in oil), chopped
1/4 cup Greek olives, coarsely chopped
1/4 teaspoon salt
1/4 teaspoon pepper
1 pound uncooked medium shrimp, peeled and deveined
1/4 cup minced fresh parsley
2 tablespoons lemon juice
1/4 teaspoon crushed red pepper flakes
1/2 cup crumbled feta cheese

Steps:

  • Cook linguine according to package directions. Meanwhile, in a large skillet, saute garlic in oil for 1 minute. Add the diced tomatoes, sun-dried tomatoes, olives, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until thickened, stirring occasionally., Add the shrimp to the tomato mixture; cook, uncovered, for 5-6 minutes or until shrimp turn pink. Stir in the parsley, lemon juice and pepper flakes. Drain pasta; serve with shrimp mixture. Sprinkle with feta cheese.

1/2 cup fresh herbs such as parsley and basil (chopped)
1 lb linguine

Steps:

  • Heat the oil in a pan.
  • Add the onion and saute until tender, about 6-10 minutes.
  • Add the garlic and chili pepper flakes and saute until fragrant, about a minute.
  • Add the white wine and simmer for 5 minutes.
  • Add the tomatoes and oregano and simmer until the sauce just starts to thicken, about 15 minutes.
  • Meanwhile, cook the pasta as directed.
  • Season the tomato sauce with salt and pepper to taste.
  • Add the shrimp to the tomato sauce and simmer until cooked, about 2-3 minutes per side.
  • Remove the tomato sauce from the heat and mix in the parsley and basil.
  • Drain the pasta, toss in the tomato sauce and serve garnished with feta.

6 ounces linguine
2 tablespoons unsalted butter
1 lb large shrimp, peeled and deveined
1/2 teaspoon salt
6 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes
4 plum tomatoes, chopped
3 tablespoons parsley, chopped
1 tablespoon lemon juice

Steps:

  • Cook the linguine as per directions, drain.
  • Meanwhile, melt 2 tsp butter in large skillet over med-high heat. Sprinkle the shrimp with 1/4 tsp of salt and add to skillet.
  • Cook until pink and opaque, 1 1/2 -2 min each side. Transfer to a plate.
  • Melt the remaining butter in the same skillet over med-high heat. Add garlic and crushed red pepper, soak stirring until fragrant about 30 seconds. Add the tomatoes and remaining salt, cook striirring occassionally, until the tomatoes just begin to wilt, 1-2 minutes.
  • Add shrinp and cook until heated through, about 1 min longer.
  • Add the cooked linguini, parsley, and lemon juice, cook, tossing until combined.
