Spicy Grilled Shrimp (Gochujang Saewu Gui) image

Easy spicy grilled shrimp flavored with a gochujang sauce!

Provided by Hyosun

Categories     Main     Main Course

Number Of Ingredients 11

1 pound large or jumbo shrimp (peeled, tail on, and deveined)
salt and pepper
For the marinade:
2 tablespoons extra virgin olive oil
1 teaspoon minced garlic (or more to taste)
juice of 1/2 of a fresh lemon (about 2 tablespoons)
2 tablespoons gochujang
1 tablespoon sugar or honey
For the garnish:
finely chopped scallions or chives for garnish (optional)
Bamboo/wood skewers

Steps:

  • Soak the wooden skewers in water while preparing the shrimp. Peel and devein the shrimp if they are shell-on. Rinse the shrimp and drain well (or pat dry). Thread 3 or 4 shrimps on to the skewers. Lightly sprinkle them with salt and pepper.
  • Mix all the marinade ingredients well in a bowl.
  • Spoon (or brush) the marinade all over the shrimp to coat evenly. Let stand for about 30 minutes.
  • Preheat a lightly oiled grill. Grill the shrimp over moderate heat until they turn opaque and curled up, a minute or two each side, depending on the heat source. Do not overcook. Baste the shrimp with the remaining sauce while grilling and before serving. You can also cook the shrimp in a grill pan over medium high heat. Garnish with the optional scallions or chives.

MARINATED SHRIMP KABOBS

Succulent shrimp are marinated then grilled on skewers with pineapple and peppers. Lovely to look at and even better to eat. I love it because it cooks on the grill in just minutes. You can also use an indoor grill in cooler weather. The recipe comes from http://www.cookingnook.com/shrimp-kabobs.html

A wonderfully marinated Korean beef dish. Kimchi, white sticky rice, whole cabbage leaves and assorted pickled vegetables make a wonderful accompaniment. Optionally, add an assortment of vegetables to beef marinade.

KOREAN BEEF KABOBS (ASIAN)

Korean Beef Kabobs (Asian) image

I've been making this dish for years and it never fails to draw rave reviews. Using a good cut of meat is key, so it will be very tender. I use beef tenderloin or sirloin (choice at the minimum). The longer you marinate the beef the better the flavor (over night at a minimum). Cooking time does not include time to marinate.

Provided by Pokey in San Antonio

Categories     Meat

Time 30m

Yield 4-6 serving(s)

Number Of Ingredients 7

2 lbs beef, chunks (cut 2-inch thick)
1 cup soy sauce
1/4 cup sesame oil
1/4 cup cooking sherry
1/4 cup sugar
1 bunch green onion
2 garlic cloves

Steps:

  • Cut tenderloin or sirloin beef up into big chunks (2" x 2" cubes). Score 1/4' deep all sides with a sharp knife (several slices per side). Using a two prong fork, pierce the meet repeatedly on all sides (3 or 4 times per side). This will allow the juices to work their way deep into the meat.
  • Chop the scallions (just the white part) and mince the garlic.
  • Add all the ingrediences together and pour over the meat in a non-reactive container. I use a large zip lock bag.
  • Marinate the meet for at least 12 hrs (24 is best).
  • Place the meat on skewers with your choice of veggies in between. I like onions, bell peppers, and mushrooms.
  • Grill over hot coals turning occasionally and brushing often with remaining marinade. Cook to desired doneness.

  • Melt the butter over medium low heat in a skillet large enough to hold the shrimp in a single layer. If you aren't doubling the recipe you don't need a very large pan.
  • Add the garlic and gochugaru. Cook gently for about 2 minutes. You don't want the garlic to take on any colour here. Think garlic butter.
  • Add the fish sauce and lemon juice. Keep cooking over low heat for 2-3 minutes. You want a gentle simmer.
  • Add the shrimp and continue cooking over low to medium low heat. GIve them 3 minutes. Again, gentle simmer. Little bubbles.
