¼ cup olive oil
3 scallions, white bulbs and green tops cut separately into thin slices
4 cloves garlic, minced
½ teaspoon dried oregano
24 large shrimp, peeled and deveined
2 ½ tablespoons lemon juice
2 tablespoons white wine
1 tablespoon water
½ teaspoon ground black pepper, or more to taste
¼ teaspoon salt
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon minced fresh parsley

Steps:

  • Place 1/4 cup oil, scallion whites, garlic, and oregano in a large skillet or wok over medium heat. Cook, stirring often, until the oil starts to simmer, about 5 minutes. Add shrimp and increase heat to high. Cook, stirring and turning often, until opaque, 4 to 5 minutes.
  • Add lemon juice and wine to the skillet; simmer for about 1 1/2 minutes. Add water, pepper, and salt; cook for 30 seconds. Stir in butter, 1 tablespoon olive oil, scallion greens, and parsley until even distributed. Arrange the shrimp on warmed plates and spoon the sauce on top.

I finally managed to get Aunt Barb to divulge her recipe! Serve with rice or a nice crusty bread to dip in the tasty sauce. PLEASE NOTE: When adding chicken base, it must be low salt or salt free (depending on your own tastes)...or recipe will be very salty.

2 tablespoons olive oil
1 medium onion, chopped
3 garlic cloves, minced
6 ounces shrimp (small)
6 ounces scallops (small)
1/2 cup white wine
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
2 tablespoons chicken base (LOW SALT or SALT FREE)
3 tablespoons butter
pepper (to taste)
1/2 lemon, juice of
2 tablespoons dried parsley (can use fresh)
2 tablespoons parmesan cheese, grated

Steps:

  • Heat oil over medium/high heat.
  • Add garlic and onions.
  • Stir constantly for 1 minute.
  • Add shrimp and scallops.
  • Continue stirring for 2 minutes.
  • Add wine, basil, red pepper, chicken base.
  • Allow to simmer 2 minutes.
  • when cooked the shrimp will turn pink and the scallops will be opaque.
  • Add butter, lemon juice, salt and pepper.
  • Sprinkle with parsley and grated cheese.
  • Toss with rice.
  • (Any extra juices/sauce may be used for dipping bread).

This is an amazingly simple but satisfying recipe....It is a yummy garlicky creamy sauce with shrimp and just that little bit of "kick" in the back of your throat to spice things up!! Came from my best friend Shelia...........the "Italian Princess" who has encouraged my love for fine food and wine......and that preparing and creating is 1/2 the love of cooking!!

1 lb uncooked shrimp (peeled and deveined)
1/4-1/2 lb pancetta, diced
6 -8 garlic cloves, minced
1 -2 shallot, minced
1 -2 cup Chardonnay wine
1 -2 tablespoon butter
extra virgin olive oil
1/2-1 cup heavy whipping cream, to thicken..... (about 1/2 cup to 1 cup)
1 tablespoon cornstarch, at end if you want thicker sauce
1/2 lemon juice
1/2 cup fresh Italian parsley, chopped
1 cup parmigiano-reggiano cheese, 1 cup shredded
crushed red pepper flakes
spaghetti (I recommend Buccatini Riggati, Barilla)

Steps:

  • Circle Saute pan 2-3 times with olive oil.
  • Saute garlic and shallots until just tender.
  • (I usually end up adding more garlic because I'm a garlic fiend).
  • Add Pancetta -- saute on low-med heat until starting to crisp up.
  • Add White wine and scrape up bits of pancetta and garlic/shallots until starting to reduce.
  • Add Butter -- stir all together -- it will start to thicken.
  • To this add cream and cornstarch if wanted to thicken sauce to your preference -- just add slowly and stir constantly
  • Add lemon juice, red pepper flakes and cheese and stir until desired taste (heat).
  • Add Shrimp and cook until pink.
  • Cook Pasta as directed and toss together.
  • Add more crushed red pepper flakes, some fresh chopped parsley and more cheese to taste.
  • Good loaf of crusty bread and a good bottle of Chardonnay and you are in business!

This is, by far and bar none, the most popular Chinese seafood dish I know. In fact, it is better than its restaurant counterpart because it uses real garlic, not dried garlic reconstituted in water.

1 pound large shrimp (21 to 25 shrimp per pound), peeled
1 egg white
1/4 cup cornstarch
1 to 2 tablespoons water
2 cups plus 1 tablespoon vegetable oil
1/4 cup chicken broth
1/4 cup apple cider vinegar
1/4 cup ketchup
3 tablespoons black soy sauce
2 tablespoons dry sherry
8 garlic cloves, crushed and finely minced
2 tablespoons finely minced fresh ginger
5 tablespoons sugar
1 teaspoon chili paste, or to taste and tolerance
1/2 cup sliced fresh water chestnuts, optional
1 tablespoons cornstarch mixed with 3 tablespoons cold water
1/2 cup sliced scallions, on the diagonal in 1/2-inch pieces

Steps:

  • Using a cleaver or knife, slice the shrimp from the back, leaving a small donut-like hole in the center, essentially butterflying the shrimp. Be careful not to cut all the way through the shrimp. Rinse away any veins under cold water. Drain well.
  • Put the shrimp in a bowl and add the egg white, cornstarch and 1 to 2 tablespoons of water. Mix well. The consistency should be silky and the color milky.
  • In a large wok, heat 2 cups of the oil to 280 degrees F, or place 1 shrimp in the oil and when bubbles rise from it like Champagne bubbles in a glass, add the rest of the shrimp. Turn the shrimp gently in the poaching oil. When they are white and fluffy, remove them with a stainless steel strainer or brass metal strainer. Put the cooked shrimp in a colander to drain.
  • For the sauce. In a small saucepan, mix the chicken broth, vinegar, ketchup, soy sauce, sherry, garlic, ginger, sugar, and chili paste. Stir well. Bring the garlic sauce to a boil, lower the heat to a simmer.
  • In a clean wok, heat the remaining 1 tablespoon of oil to smoking. Add the sliced water chestnuts and stir-fry for 30 seconds. Add the garlic sauce, stir, and bring to a boil. Stir in the cornstarch mixture and bring to a boil, stirring until thickened. Add the shrimp. Toss and stir 3 times until well coated. Stir in the sliced scallions and serve.

4 tablespoons butter
4 tablespoons extra virgin olive oil, plus more for drizzling
1 large shallot, finely diced
5 cloves garlic, sliced
Pinch red pepper flakes, optional
20 large shrimp, about 1 pound, peeled and deveined, tail on
Kosher salt and freshly ground black pepper
1/2 cup dry white wine
1 lemon, juiced
1/4 cup finely chopped parsley leaves

Steps:

  • For the pasta, put a large pot of water on the stove to boil. When it has come to the boil, add a couple of tablespoons of salt and the linguini. Stir to make sure the pasta separates; cover. When the water returns to a boil, cook for about 6 to 8 minutes or until the pasta is not quite done. Drain the pasta reserving 1 cup of water.
  • Meanwhile, in a large skillet, melt 2 tablespoons butter in 2 tablespoons olive oil over medium-high heat. Saute the shallots, garlic, and red pepper flakes (if using) until the shallots are translucent, about 3 to 4 minutes. Season the shrimp with salt and pepper; add them to the pan and cook until they have turned pink, about 2 to 3 minutes. Remove the shrimp from the pan; set aside and keep warm. Add wine and lemon juice and bring to a boil. Add 2 tablespoons butter and 2 tablespoons oil. When the butter has melted, return the shrimp to the pan along with the parsley and cooked pasta and reserved pasta water. Stir well and season with salt and pepper. Drizzle over a bit more olive oil and serve immediately.

SHRIMP WITH GREEN SAUCE

5 cloves garlic, finely chopped
2 tablespoons brandy
1/2 cup dry white wine
1 cup chopped fresh parsley

18 large shrimp, peeled and deveined, tails intact
Warm baguette slices, for serving

Steps:

  • Heat 2 tablespoons olive oil in a skillet over medium heat. Add the garlic and cook until it softens slightly, about 1 minute. Add the brandy and swirl the pan until the alcohol evaporates. Add the wine and 1/4 cup water and cook to reduce slightly, 3 to 4 minutes. Stir in the parsley, 1/2 teaspoon salt, and pepper to taste. Transfer the mixture to a blender with 2 tablespoons olive oil and puree until smooth. Cover and set aside.
  • When ready to serve, heat the remaining 2 tablespoons olive oil in a skillet over high heat. Add the shrimp; cook until just pink, 1 to 2 minutes. Add the green sauce, season with salt and pepper, and warm through. Drizzle with olive oil or water to loosen the sauce. Serve with bread.

14 ounces medium raw shrimp or 400 g raw shrimp, tail on
1 cup water
1 tablespoon chicken base (preferably Better Than Bullion)
1 pinch saffron
2 tablespoons coconut oil or 2 tablespoons olive oil
3 large shallots, diced or 1 medium onion
2 garlic cloves, minced
1/2 cup white wine (preferably Pinot Grigio)
2 tablespoons dried parsley
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
2 tablespoons butter
1 1/2 tablespoons lemon juice
3 tablespoons parmesan cheese

Steps:

  • Remove tails from shrimp and place in a small saucepan with 1 cup of water. Keep shrimp for later in the recipe.
  • Bring shrimp tails and water to a boil, reduce and simmer for 10 minutes. Add chicken base and stir. Remove from heat, add saffron, cover and allow to steep for 5 minutes. Strain and reserve liquid for later in the recipe.
  • In a large fry pan, cook shallots and garlic over medium heat until just soft in coconut oil or olive oil.
  • Add shrimp to shallots and garlic mixture. Stir to combine and cook for 2 to 3 minutes. Shrimp should just be pink.
  • Add wine, parsley, basil, pepper flakes, and reserved stock. Cook over medium heat until back to temperature. (soft boil).
  • Add butter and lemon juice. Once butter has melt, remove from heat and cover.
  • Serve on pasta, rice, or Gnocchi with bread to dip in the sauce.

Extra-virgin olive oil
1 small onion, coarsely chopped
1 celery rib, coarsely chopped
Top of 1 fennel bulb, fronds reserved, coarsely chopped
Kosher salt
2 cloves garlic, smashed
1 pound cod bones, or other white fish bones
Shells from 8 jumbo shrimp, bodies reserved, peeled and deveined
3/4 cup anise-flavored liqueur (recommended: Pernod)
2 bay leaves
1 fresh thyme bundle
1 onion, julienned
1 small fennel bulb, julienned
2 cloves garlic, smashed and finely chopped
1/2 cup anise-flavored liqueur (recommended: Pernod)
1/2 cup dry white wine
4 (5-ounce) cod fillets
3 fingerling potatoes, sliced into rounds
1 zucchini, julienned
Big fat finishing oil

Steps:

  • For the fish stock: Coat a large, tall pot lightly with olive oil. Add the onions, celery, and fennel tops and bring the pot to a high heat. Season the veggies lightly with salt. Cook the veggies until they are soft and very aromatic, 7 to 8 minutes. Add the garlic and cook for 1 to 2 minutes more. Add the fish bones and shrimp shells, stir to combine, and cook for 3 to 4 minutes. Add the anise-flavored liqueur and let it reduce by half.
  • Add water to the pot until it covers the fish bones by 2 inches and season lightly with salt. Toss in the bay leaves and thyme bundle. Bring the pot to a boil, reduce to a simmer, and simmer for 30 minutes. Strain the liquid and reserve.
  • For the fish: Coat a straight-sided saute pan with olive oil. Add the onions and fennel, season with salt, and cook over medium heat until the veggies start to soften, 3 to 4 minutes. Add the garlic and cook for 1 to 2 minutes. Add the anise-flavored liqueur and white wine and reduce by half.
  • Add the reserved fish stock and season with salt. Bring to a boil, reduce to a simmer, and simmer the broth for 12 to 15 minutes. Taste to make sure it is delicious.
  • Meanwhile, coat a second saute pan with olive oil. Bring the pan to a high heat. Pat the cod dry with paper towels and season with salt. Add the cod to the screaming hot pan and cook the fish until it is golden and crisp on both sides and 3/4 of the way cook through. Remove the fish from the pan and reserve. Do the same with the shrimp and reserve. Add the potato rounds to the pan, season with salt, and brown on both sides. Remove the potatoes from the pan and reserve with the cod and shrimp.
  • When the fish broth is ready, add the cod, shrimp, potatoes, and zucchini. Turn off the heat and cover, letting the fish gently cook through, 2 to 3 minutes.
  • To serve, remove the cod and shrimp from the pan. Scoop the veggies out of the broth and divide them between 4 serving bowls. Lay a piece of cod on top of each of the veggies and arrange 2 shrimp next to the cod. Ladle the fish broth over each piece of cod. Drizzle with big fat finishing oil and top with fennel fronds.

  • For the white wine sauce:
  • Heat the oil in a medium saucepan over medium heat. Add the shallots and the garlic and cook until soft, about 1 minute. Increase the heat to high, add the wine, bring to a boil and cook until reduced by half. Add the cream and slowly start whisking in the cold butter, piece by piece and continue to whisk until the sauce is emulsified. Strain into a bowl and stir in the chives. Season with salt and pepper, to taste, and set aside.
  • For the shrimp:
  • Whisk together the oil, paprika, garlic and thyme in a large bowl; add the shrimp and toss to coat the shrimp in the mixture. Cover and let marinate in the refrigerator for 30 minutes.
  • Heat the grill to high.
  • Season the shrimp with salt and pepper and grill until slightly charred and just cooked through, about 2 1/2 minutes per side. Put some of the sauce on a large platter, drizzle with Basil Oil and top with the shrimp. Drizzle with more of the sauce; garnish with chives and serve.
