1 cup basmati rice, rinsed
2 teaspoons Madras-style curry powder
Kosher salt
3 1/2 tablespoons vegetable oil
1 medium white onion, quartered
3 cloves garlic
1 2-inch piece ginger, peeled
1 14.5-ounce can diced tomatoes
1 to 2 serrano chile peppers, halved (remove seeds for less heat)
1 pound medium shrimp, peeled and deveined
1/2 cup whole or low-fat plain yogurt
1/3 cup chopped fresh cilantro

Steps:

  • Combine the rice, 1 1/3 cups water, 1 teaspoon curry powder, 1/4 teaspoon salt and 1/2 tablespoon oil in a saucepan. Cover and cook, undisturbed, over medium-low heat, about 15 minutes; keep warm.
  • Meanwhile, chop the onion in a food processor, drain the excess liquid and set the onion aside. Mince the garlic and ginger in the processor and set aside, then puree the tomatoes with 1 cup water.
  • Heat the remaining 3 tablespoons oil in a Dutch oven or deep skillet over medium-high heat. Add the onion and cook until golden, about 12 minutes. Add the garlic-ginger mixture, chiles, 1 teaspoon salt and the remaining 1 teaspoon curry powder and stir-fry until slightly browned, about 3 minutes. Add the tomato puree and simmer until thickened, about 8 minutes. Add the shrimp, cover and cook over medium-low heat until the shrimp are firm, 3 to 4 minutes. Remove from the heat, then stir in the yogurt and half the cilantro.
  • Serve with the rice and garnish with the remaining cilantro.

1 large onion, quartered
1 (2-inch-long) piece fresh ginger, peeled
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 cup vegetable oil
1 1/2 teaspoons curry powder (preferably Madras)
1 to 2 fresh serrano chiles, halved lengthwise
1 cup water
1 (14-oz) can unsweetened coconut milk (not low fat)
1 tablespoon fresh lime juice
1 lb large shrimp in shell (21 to 25 per lb)
Accompaniment: cooked basmati rice
Garnish: lime wedges

Steps:

  • Pulse onion and ginger in a food processor until finely chopped. Cook onion mixture with salt and sugar in oil in a 12-inch heavy skillet over moderate heat, stirring frequently, until onion begins to brown, about 5 minutes. Stir in curry powder and chiles and cook, stirring frequently, 2 minutes. Stir in water, coconut milk, and lime juice and simmer, stirring occasionally, until thickened, 5 to 8 minutes.
  • While sauce simmers, peel shrimp (devein if desired) and season with salt and pepper. Add shrimp to sauce and simmer, stirring occasionally, until shrimp are just cooked through, about 3 minutes. Add salt to taste and serve immediately.

2 tablespoons salted butter
1 1/2 pounds peeled and deveined raw shrimp (I used U10, but any size is fine)
4 cloves garlic, minced
1 medium onion, finely diced
1 tablespoon curry powder
One 13 1/2-ounce can coconut milk (I used A Taste of Thai brand)
2 tablespoons honey, or more to taste
1/4 teaspoon kosher salt, or more to taste
Juice of 1 lime, or more to taste
12 fresh basil leaves, chopped, plus more for garnish
Hot sauce, as needed, optional
Cooked basmati rice, for serving

Steps:

  • Heat the butter in a large skillet (I used nonstick) over medium-high heat. Add the shrimp and cook, turning them over halfway through, until fully cooked, 2 to 3 minutes. Remove to a plate and set aside.
  • Add the garlic and onions to the skillet and stir to cook for 2 minutes. Sprinkle the curry powder over the onions and continue cooking, stirring, for another couple of minutes. Reduce the heat to medium low and pour in the coconut milk, stirring to combine. Add the honey, salt and lime juice, and allow the sauce to heat up until bubbling gently. Add the shrimp to the sauce, tossing to coat, and allow it to simmer until slightly thickened, 2 to 3 minutes. Taste the sauce and add more salt, lime juice or honey, depending on your taste. Stir in the basil. (Add hot sauce if you want a little kick.)
  • Serve the shrimp and sauce over a bed of cooked basmati rice, garnishing with more basil. Delicious!

Don't remember the first time I had this as a kid, but after my mother made it once, it became my requested dish every birthday. Serve with shredded sweet coconut, chopped dry-roasted peanuts, pineapple tidbits, raisins, chopped bacon, chutney, chopped egg, or chopped tomato. Because this recipe calls for condiments of choice, every plate will be customized and taste a bit different by all at the table.

5 tablespoons butter
½ cup minced yellow onion
2 ½ teaspoons curry powder
½ cup all-purpose flour
1 ½ teaspoons white sugar
1 ¼ teaspoons salt
¼ teaspoon ground ginger
2 cups milk
1 cup chicken broth
1 ½ pounds cooked medium shrimp, shelled and deveined
1 teaspoon lemon juice
4 cups cooked rice

Steps:

  • Melt butter in a large pot over medium heat. Cook and stir onion and curry powder in hot butter until onion is tender, about 5 minutes. Add flour, sugar, salt, and ginger; stir until completely incorporated.
  • Gradually pour milk and chicken broth into onion mixture, stirring constantly; cook and stir until mixture is hot and thickened. about 5 minutes.
  • Stir shrimp into milk mixture and cook until shrimp are heated through, 3 to 5 minutes. Stir in lemon juice.
  • Spread 2/3 cup cooked rice into a ring on a dinner plate. Spoon about 1 cup shrimp curry mixture into the center of the rice ring. Repeat with remaining rice and shrimp curry. Add condiments as desired.

12 ounces peeled deveined fresh shrimp or 12 ounces peeled deveined frozen shrimp
1 large onion, chopped
1 medium green sweet pepper, cut into 1-inch pieces
1 stalk celery, sliced
1 garlic clove, minced
2 tablespoons cooking oil
1 (14 1/2 ounce) can diced tomatoes
1/2 cup raisins
1/4 cup snipped fresh parsley
1/4 cup chili sauce
1 teaspoon lemon juice
1/2 teaspoon salt
1/2 teaspoon bottled hot pepper sauce
1/4 teaspoon white pepper
1/4 teaspoon curry powder
1/4 teaspoon dried thyme, crushed
2 cups hot cooked rice
1/4 cup slivered almonds, toasted

Steps:

  • Thaw shrimp, if frozen. Rinse the shrimp; pat dry with paper towels. Set aside.
  • In a 12-inch skillet cook onion, green pepper, celery, and garlic in hot oil until crisp-tender. Stir in undrained tomatoes, raisins, parsley, chili sauce, lemon juice, salt, hot pepper sauce, white pepper, curry powder and thyme. Bring to boiling; reduce heat. Cover and simmer for 30 minutes.
  • Stir shrimp into tomato mixture. Return to boiling; reduce heat. Cover and simmer about 5 minutes more or until shrimp turn pink.
  • Serve over rice. Sprinkle each serving with toasted almonds.

2 tablespoons white wine vinegar
1 teaspoon salt
1 teaspoon sugar
2 teaspoons ground ginger
2 teaspoons turmeric
1 teaspoon cumin
1/2 teaspoon crushed red pepper flakes
2 medium tomatoes, chopped
1 clove garlic
2 lbs shelled and deveined shrimp (3-4 lbs in shells)
3 -5 tablespoons safflower oil or 3 -5 tablespoons vegetable oil
1 cup minced onion
6 cups hot cooked rice
fresh cilantro stem (to garnish)

Steps:

  • About 30 minutes before serving, in blender or food processor, blend together yogurt through garlic on the ingredient list at medium speed until smooth.
  • In a large skillet over medium heat cook shrimp in 3 Tbs hot oil until just tender, approximately 5 minutes, stirring constantly.
  • Add more oil if necessary.
  • Remove shrimp from skillet with a slotted spoon; set aside.
  • In remaining oil (again add more if necessary), cook onion until tender, about 5 minutes.
  • Stir in yogurt mixture.
  • Heat to boiling, then reduce heat to low.
  • Simmer 5 minutes or until the mixture is slightly thickened, stirring frequently.
  • Return the shrimp to the skillet.
  • Cook until heated through, about 3 minutes.

2 tablespoons vegetable oil
1/4 heaping teaspoon whole cloves
10 cardamom pods
8 whole allspice
1 cinnamon stick, broken in half
1 bay leaf
1 medium yellow onion, sliced
2 teaspoons curry powder
1/2 jalapeno, or more to taste
1/2 cup whole, peeled, canned tomatoes (with puree), roughly chopped
3/4 cup coconut milk
2 cups water
2 1/2 teaspoons kosher salt
1 1/2 pounds medium shrimp, peeled and deveined
2 tablespoons chopped fresh coriander leaves
1 tablespoon freshly squeezed lime juice

Steps:

  • In a small food processor (mini-chopper), combine the garlic and ginger and puree into a paste. Set aside. Heat the oil in a large pot or Dutch oven over medium-high heat. Add the cloves, cardamom, allspice, cinnamon stick, and bay leaf and cook, stirring constantly, until toasted and fragrant and the cinnamon stick unfurls, about 30 seconds. Add the onion and cook, stirring, until lightly browned, about 3 minutes. Add the garlic-ginger paste, curry powder, and jalapeno and cook, stirring, until lightly browned and fragrant, about 1 minute. Add the tomato, coconut milk, and cook, stirring, until the oil separates from the sauce and there is a distinctive frying sound as the sauce begin to "refry", about 7 minutes. Continue to cook, stirring, for about 1 minute more. Add the water and salt and bring to a boil. Lower the heat and simmer, uncovered, stirring occasionally, until the liquid has thickened, about 6 minutes. Add shrimp, cover, and bring to a simmer and cook until just cooked through, about 5 minutes. Stir in the coriander and lime juice. Transfer to a serving bowl and serve with rice.
