1/2 teaspoon onion, grated
1 teaspoon prepared mustard
2 tablespoons lemon juice

Steps:

  • Combine all ingredients and chill before serving.
  • Serve with cold shrimp, crab claws, or raw oysters.

SALT-CRUSTED SHRIMP WITH LEMON-OREGANO DIPPING SAUCE



Salt-Crusted Shrimp with Lemon-Oregano Dipping Sauce image

Number Of Ingredients 9

1/2 cup best quality extra virgin olive oil
Juice from 1 large lemon
1/4 cup boiling water
2 cloves garlic, minced
1 teaspoon dried oregano
2 tablespoons minced fresh parsley
16 extra large shrimp in the shell (about 1 1/4 pounds)
3 tablespoons olive oil
3/4 cup medium grind sea salt or kosher salt

Steps:

  • Make the Dipping Sauce: Whisk together the oil, lemon juice and hot water. Stir in the garlic, oregano, and parsley. Let stand for at least 20 to 30 minutes to marry the flavors. Set aside.
  • Using a small sharp knife, make a slit about 1/4-inch deep down the backs of the shrimp and devein them but do not remove the shells. Place the shrimp in a large bowl and toss with the olive oil to coat lightly all over. Sprinkle the salt evenly over the shrimp and toss well to make sure each shrimp is thoroughly coated in a crust of salt.
  • Place the shrimp in the center of the cooking grate, 3 to 4 minutes per side or until the meat is opaque all the way through when cut into. Arrange 4 shrimp on each serving plate and accompany with a small ramekin of the dipping sauce. The shrimp may also be served on a communal platter with a bowl of the sauce in the center. Provide plenty of napkins and a small bowl for discarding the peeled shrimp shells.

1/2 cup fresh flat-leaf parsley, leaves and stems separated
1 tablespoon black peppercorns
4 cloves garlic, smashed
1 lemon, halved
1/2 shallot, halved
Kosher salt
2 pounds peeled and deveined colossal shrimp, tail on
1/2 cup mayonnaise
1 tablespoon drained green peppercorns in brine plus 1 teaspoon brine
1/2 teaspoon granulated sugar
1/2 cup ketchup
1 tablespoon prepared horseradish
1/4 teaspoon celery seed
2 dashes Worcestershire sauce

Steps:

  • For the shrimp cocktail: Add the parsley stems, peppercorns, garlic, lemon, shallot, 2 teaspoons salt and 3 quarts water to a large stockpot and stir to combine. Bring to a boil over high heat. Prepare an ice water bath.
  • Add the shrimp to the boiling water and cook just until opaque, 1 to 2 minutes. Remove the shrimp and shock in the ice water bath for 5 minutes. Drain the shrimp and refrigerate until ready to serve. Reserve the parsley leaves for the peppercorn remoulade sauce.
  • For the peppercorn remoulade sauce: Combine the mayonnaise, green peppercorns, brine and sugar in a small bowl. Chop the reserved parsley leaves and stir into the remoulade. Store in an airtight container in the refrigerator until ready to serve.
  • For the "bloody" cocktail sauce: Combine the ketchup, horseradish, celery seed and Worcestershire sauce in a small bowl. Store in an airtight container in the refrigerator until ready to serve. This can be prepared up to 2 weeks in advance.
  • Serve the chilled shrimp over crushed ice with the dipping sauces alongside.

This is a little different from the traditional shrimp cocktail sauce. You may add more lemon if you prefer, more/less curry, and more/less Tobasco sauce as you please. I hope you enjoy this. This is pretty much a "dump" recipe & then blend all ingredients together. The recipe makes a bunch, about 5 cups or so, so i divide recipe into small containers & freeze if we're not entertaining a large group. It does keep well in the frige. Do not use Miracle whip in this recipe.

2 small onions, finely chopped
3 teaspoons paprika (to taste)
2 teaspoons curry (to taste)
3 pinches salt
3 pinches pepper
1 (14 ounce) bottle ketchup
5 drops Tabasco sauce (to taste)
1 pint mayonnaise
2 tablespoons honey
3 lemons, juice of (to taste)

Steps:

  • Mix all ingredients together. Let set in frige several hours so all ingredients get happy together. Serve with chilled cooked shrimp. I also use this to dip with imitation crab.

6 tablespoons dry white wine
1 teaspoon white wine vinegar
1 lemon, juice and zest of, reserved for garnish
3 ounces unsalted butter, chilled and cubed
fresh ground black pepper
1 teaspoon olive oil
4 1/2 ounces button mushrooms
7 ounces jumbo shrimp, cooked
4 ounces asparagus tips, cooked

Steps:

  • Place the wine and vinegar in a small saucepan over a moderate heat and reduce to 2 tablespoons. Add the lemon juice.
  • Gradually whisk in the butter over a low heat, one cube at a time until slightly thickened and glossy.
  • Remove from the heat, add seasoning to taste, then set to one side.
  • Heat the oil, add the mushrooms and cook for 4-5 minutes, stirring occasionally until golden. Add the shrimp and asparagus, heat through and transfer to a warmed serving plate.
  • Serve straight away with the warm lemon butter sauce poured over.
