Time 50m

Number Of Ingredients 13

2 Pounds Large or Jumbo Shrimp ((SEE NOTES))
2 TBS + 1 tsp Kosher Salt (- DIVIDED)
½ tsp Baking Soda
6 Cups Water
2 ½ Cups Beer ((SEE NOTES))
2 large Stalks Celery (- roughly chopped)
1 medium Yellow Onion (- roughly chopped)
3 large Cloves Garlic (- smashed and peeled)
2-inch knob Fresh Ginger (- peeled and thinly sliced)
2 large sprigs fresh Flat Leaf Parsley
1 1/2 TBS Lemon Juice ((juice of 1 lemon))
Remoulade Sauce ((Or Cocktail Dipping Sauce of choice!))
Optional Garnishes & for Serving: Lemon Wedges, Fresh Parsley, Cocktail Sauce

Steps:

  • Prepare Shrimp: Remove shells from shrimp, leaving tails intact and devein. Set shells aside (do not discard!) Place shrimp in a large non-reactive mixing bowl and add 1 teaspoon of the salt along with all of the baking soda. Toss to evenly coat. Place in the refrigerator for 30 minutes- 1 hour.
  • Meanwhile, make the Poaching Liquid: In a medium pot combine - water, beer, celery, onion, garlic, ginger, parsley, lemon juice, remaining 2 tablespoons of salt and reserved shrimp shells. Bring contents to a simmer over high heat. Immediately reduce heat to simmer and cook for 20-25 minutes. Strain liquid through a fine-mesh colander and discard solids. Immediately return broth back to pot and adjust heat to medium. Fill a large bowl with ice water and set out two large zip-closure bags. Set aside.
  • Poach the shrimp: Add the shrimp to the poaching liquid (do NOT rinse them prior). Poach until shrimp are just cooked through, stirring occasionally. Depending on size of shrimp, this will take anywhere from 1-5 minutes, depending on the size. TIP: Shrimp are perfectly cooked when they form a "C" shape and are pink in color with some bright red accents. If shrimp are still translucent, they're not done cooking.Tips: If you have a thermometer, you want your poaching liquid to stay between 170-180 degrees F.
  • Shock the shrimp: Use a slotted spoon to transfer shrimp to Ziploc bags, dividing them in between the two as to not overcrowd bags. Immediately seal bags, removing as much air as possible, and submerge bags in the ice water (use a plate to weigh bag down if necessary). Transfer bowl to the refrigerator and allow to chill for at least 30 minutes.
  • Serve shrimp cocktail with remoulade sauce and lemon wedges.

1 shallot
1 cup orzo
2 cups chicken stock
salt, to taste

  • In the same saucepan and over low heat, add garlic, shallots and the orzo. Salt and pepper to taste. Stir until all the liquid has been absorbed.

SHRIMP COCKTAIL

Shrimp Cocktail image

This method for a beloved appetizer maximizes flavor by gently poaching shrimp in a deeply seasoned broth of salt, chile powder and celery seeds. Rather than wash away all the spices with a rinse or a plunge in an ice bath, you stop the cooking by pouring ice directly into the hot bath. For dipping, go for a classic cocktail sauce with the sharp brightness of lemon and horseradish, or a simple garlicky dill butter, which makes the shrimp taste somehow of lobster, or a comforting, warmly spiced honey mustard, because you always need a creamy option. Enjoy the plump shrimp with your favorite sauce - or all three.

Time 15m

Yield 8 servings

Number Of Ingredients 25

2 pounds large (21- to 25-count) shrimp, shelled and deveined
Kosher salt
8 cups ice cubes (about 2 pounds), plus more for serving
1/4 cup mild red chile powder, gochugaru or sweet paprika with a dash of ground cayenne
1 tablespoon celery seeds
2 lemons
1/2 cup ketchup
3 tablespoons lemon juice
2 tablespoons prepared horseradish
1 large garlic clove, finely grated
Kosher salt and black pepper
Tabasco sauce
1/2 cup unsalted butter
2 large garlic cloves, finely grated
1/4 packed cup finely chopped fresh dill (from 1 small bunch)
2 tablespoons lemon juice
1 teaspoon granulated sugar
Kosher salt and black pepper
1/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons honey
1 tablespoon lemon juice
1 teaspoon curry powder
1/2 teaspoon ground cayenne
Kosher salt and black pepper

Steps:

  • Make the shrimp: In a large bowl, toss together the shrimp and 2 teaspoons salt, and set aside. Keep the 8 cups ice nearby, either in another large bowl or directly in the icemaker tray of your refrigerator.
  • Meanwhile, fill a large pot with 8 cups water, 1/2 cup salt, the chile powder and celery seeds, and bring to a boil. Remove the pot from the heat and add the shrimp to the hot liquid, stirring occasionally, until just cooked through and no longer translucent on the inside, 2 to 3 minutes.
  • Immediately dump the ice into the pot to stop the cooking, stirring occasionally, until the liquid is cool to warm or room temperature, about 1 minute. Pour the contents of the pot into a colander in the sink, then transfer the drained, celery seed-dotted shrimp to a large platter and refrigerate until ready to eat. Cut the lemons into quarters lengthwise, then cut each piece in half crosswise.
  • Make the cocktail sauce: In a small bowl, stir the ketchup, lemon juice, horseradish and garlic to combine, and season to taste with salt, pepper and Tabasco sauce.
  • Make the garlicky dill butter: Melt the butter in a small saucepan over medium-low heat or in the microwave. Add the garlic, dill, lemon juice and sugar to a small bowl and stir in the hot melted butter. Season generously with salt and pepper.
  • Make the curried honey mustard: In a small bowl, stir the mayonnaise, mustard, honey, lemon juice, curry powder and cayenne to combine. Season to taste with salt and pepper. All three sauces can be stored in separate airtight containers in the refrigerator for up to 3 days. (The dill butter will need to be reheated in the microwave or on the stove over medium-low heat until liquid again.)
  • To serve, cover a large platter with cubed or crushed ice, top with the poached and cooled shrimp and scatter the lemon pieces all over. Serve with one or more of the dipping sauces on the side.

PROSECCO BUTTER POACHED SHRIMP

Prosecco Butter Poached Shrimp image

This Prosecco Butter Poached Shrimp is the ultimate easy-yet-elegant special occasion meal! Beautiful colossal shrimp slowly simmer in a full-flavored poaching liquid made of reduced Prosecco wine, butter, lemon, & garlic. They're tender, juicy, & infused with all of the aromatic flavor of the Prosecco sauce. Enjoy them on their own with some crusty bread or pile them on top of risotto for the ultimate special occasion dinner.

Provided by Jess Larson

Categories     Main Dishes

Time 35m

Number Of Ingredients 8

16 ounces Specially Selected Black Tiger Shrimp, thawed from frozen (see Recipe Notes)
one 750mL bottle Belletti Prosecco
1 1/4 cup (2 1/2 sticks) Simply Nature Organic Salted Butter, cut into tablespoons
1 small lemon, juiced
1 small lemon, thinly sliced
8 cloves garlic, smashed
optional: 2 teaspoons Stonemill Parsley Flakes
kosher salt & ground black pepper

Steps:

  • Transfer the thawed shrimp to a paper towel-lined plate. Use paper towel to pat the shrimp as dry as possible. Set aside.
  • Add the Prosecco to a medium saucepan over medium-high heat. Bring the Prosecco to a boil. Cook, stirring occasionally, until reduced roughly by half, about 12-15 minutes.
  • Reduce the heat under the Prosecco to medium-low, just enough for the Prosecco to maintain a gentle simmer. Whisking constantly, add a few tablespoons of the butter to the saucepan with the Prosecco. Once melted, continue to add butter to the saucepan, working a few tablespoons at a time. Be sure to whisk steadily throughout this process to help the butter emulsify with the reduced Prosecco & adjust heat as needed to maintain a gentle simmer. Once all of the butter is incorporated, add in the aromatics - lemon juice, sliced lemon, crushed garlic, dried parsley, etc. Season with 2 teaspoons kosher salt & ground black pepper as desired. Simmer 2-3 minutes, whisking steadily, to bloom the aromatics. Taste & adjust seasoning as desired.
  • Working in batches of 5-6 shrimp at a time, add the shrimp to the saucepan. All of the shrimp should be submerged in the Prosecco butter poaching liquid. Adjust heat as needed to maintain a gentle simmer. Cook 2-3 minutes, just until the shrimp is bright pink with opaque flesh. Transfer the poached shrimp to a large plate or bowl & set aside. Repeat 2-3 times with remaining shrimp.
  • Once all the shrimp are poached & cool enough to handle, peel them & serve immediately. You can enjoy this Prosecco butter poached shrimp appetizer-style with crusty bread, placing the shrimp in a shallow bowl & pouring some of the Prosecco butter poaching liquid over top. This Prosecco butter poached shrimp is also great as a special occasion main dish, served with some of its Prosecco butter poaching liquid over risotto, pasta, or mashed potatoes. Enjoy!

SHRIMP COCKTAIL WITH BUTTER-POACHED SHRIMP

Shrimp Cocktail with Butter-Poached Shrimp image

Poaching shrimp in butter gives it a texture and flavor similar to lobster. To make these shrimp even more special and festive they're served with a cocktail sauce made with roasted red peppers, rosemary and garlic.

Provided by Christine Pittman

Categories     Appetizer

Time 16m

Number Of Ingredients 11

1 (16 oz.) jar of roasted bell peppers that do not contain sugar or vinegar, drained
½ cup ketchup
1 clove garlic
1 Tbsp. spicy prepared horseradish
1 Tbsp. loosely packed fresh rosemary leaves
½ tsp. lemon juice
salt
black pepper
24 oz. extra large shrimp (21-25/lb. count, about 30 shrimp), peeled and deveined but with tail on
4 Tbsp. water
¼ cup unsalted butter

Steps:

  • In a food processor or blender purée the drained bell peppers, ketchup, garlic, horseradish, rosemary, lemon juice, ¼ teaspoon of salt, and a pinch of black pepper until smooth. Cover and refrigerate until ready to serve.
  • Preheat oven to 200°F if desired (see Step 4 below).
  • In a 10-inch skillet heat the water over medium heat until it bubbles. Reduce heat to low and add 1 tablespoon of the butter. Whisk gently to incorporate the butter into the water. Repeat with remaining butter, 1 tablespoon at a time, whisking until it is melted and incorporated each time before adding the next tablespoon. Each tablespoon should take about 30 seconds to melt. Adjust heat to melt it accordingly. The butter and water should form a creamy sauce, but it's alright if it separates since it tends to come back together again when the shrimp are added.
  • Once all of the butter has been incorporated into the sauce, add the shrimp in a single slightly overlapping layer. Sprinkle the shrimp with a pinch or two of salt. Stir shrimp gently to coat them in the butter. Cook stirring occasionally until the shrimp are pink and slightly curled, not tightly curled, 5-7 minutes. Use a slotted spoon to transfer the shrimp to a platter or pan. Blot shrimp lightly with kitchen towel to absorb some of the butter.
  • Serve immediately with the red pepper cocktail sauce or keep warm for up to 15 minutes in the 200°F oven. Alternatively, keep the shrimp at room temperature and put them out to serve within 30 minutes. Do not refrigerate as the butter will congeal on the shrimp.

1 head garlic, halved
1 lemon, halved
1 large onion, quartered
1/2 bunch parsley
5 sprigs fresh thyme
2 bay leaves

1 cup ketchup
4 teaspoons prepared and drained horseradish
1/4 teaspoon Worcestershire sauce

  • To serve put the cocktail sauce in a medium bowl and surround with the shrimp, or loop the shrimp over the edge of an individual cocktail glass and top with the sauce. Garnish with the lemon wedges and serve.
