These creamy, cheesy, bacon-filled appetizers do require you to cut the tops off of 30 cherry tomatoes. But the results are absolutely worth the effort.

30 cherry tomatoes
3 slices cooked OSCAR MAYER Bacon, crumbled
1/4 cup MIRACLE WHIP Dressing
1/4 cup KRAFT Grated Parmesan Cheese
4 green onions, finely chopped

Steps:

  • Cut tops off tomatoes; discard tops. Scoop out seeds from tomatoes; place tomatoes, cut sides down, on paper towels to drain.
  • Meanwhile, combine bacon, dressing, cheese and onions. Refrigerate 30 min.
  • Spoon bacon mixture into tomatoes.

My very favorite appetizer recipe of all time, Bacon Stuffed Cherry Tomatoes, is made using only five ingredients, including mayonnaise and Parmesan cheese.

2 pints cherry tomatoes
3/4 cup mayonnaise
1/2 cup freshly grated Parmesan cheese (NOT packaged)
1/8 teaspoon garlic powder
1 to 2 tablespoons fresh minced basil leaves
1 (16-ounce) package thin-sliced bacon, crisply cooked, drained, and crumbled

Steps:

  • Gather the ingredients.
  • Cut the top off each cherry tomato, as well as a very small portion of the bottom of each tomato so that they stand upright.
  • Using a melon baller or a sharp knife, carefully scoop out the seeds and pulp. Place each little tomato upside down on a paper towel to drain.
  • Combine the mayonnaise, Parmesan cheese, garlic powder, basil leaves, and bacon in a small bowl and mix well.
  • Stuff each cherry tomato with the bacon mixture using a very small spoon.
  • Cover all of the stuffed tomatoes and chill in the fridge for at least 2 hours to blend flavors before serving.

Mmmm, do you love avocado as much as I do? This is a nice veggie hors d'oeuvre, or you can add a sprinkling of bacon. I've made it with Havarti cheese as well as Swiss. Number of servings depends on people's appetites.

1 pint cherry tomatoes
1 large avocado, peeled and mashed
4 teaspoons lemon juice
1 tablespoon finely chopped onion
1 clove garlic, minced
1/2 cup finely shredded swiss cheese
1/4 teaspoon seasoning salt
6 slices bacon, cooked and finely crumbled or 6 slices bottled bacon bits (optional)

Steps:

  • Remove the tops from the tomatoes.
  • Scoop out and discard the seeds.
  • Drain cut-side down on paper towels.
  • In a small bowl beat together the avocado through seasoned salt until smooth.
  • Stuff the avocado mixture into the tomatoes.
  • Serve sprinkled w/ bacon bits.

This is an easy, simple recipe that goes over well. You can make the filling ahead and scoop out the tomatoes well ahead of time but do not fill the tomatoes until just before serving. I like to add the lettuce to the filling just before filling the tomato however the original recipe said you can mix it in when you combine all the stuffing ingredients. Looks great on a buffet table

20 cherry tomatoes
1/4 cup chopped fresh chives or 1/4 cup green onion
10 slices bacon, fried crisp and crumbled
1/2 cup lettuce, very finely chopped
3 tablespoons mayonnaise
salt and pepper

Steps:

  • Cut the top off the tomatoes, scoop out the seeds& pulp. Use the seeds & puld in some other recipe.
  • Salt the inside of the tomato and put them upside down on a paper towel to drain for about15 minutes.
  • Meanwhile combine the bacon, chives, lettuce and Mayo, season with salt and pepper (remember that you have already salted the inside of the tomatoes).
  • Fill the tomatoes just before serving.

½ pound cooked shrimp - peeled and deveined
1 (8 ounce) package cream cheese, softened
¼ cup mayonnaise
¼ cup Parmesan cheese
2 teaspoons prepared horseradish
1 teaspoon lemon juice
salt and pepper to taste
¼ cup chopped fresh parsley

Steps:

  • Cut the top off each cherry tomato, and scoop out the pulp. Place the tomatoes upside down on paper towels to drain.
  • In a food processor, mix the shrimp, cream cheese, mayonnaise, Parmesan cheese, horseradish, and lemon juice. Season with salt and pepper. Blend until smooth.
  • With a pastry bag, pipe the shrimp mixture into the cherry tomatoes. Garnish with parsley, and refrigerate until serving.

  • Use a small measuring spoon or melon baller to gently remove the pulp and seeds from each tomato. Turn the tomatoes cut side down onto a paper towel allow to drain while you prep the rest of the ingredients.
  • Cook the bacon. I always place my bacon on cookie sheets and cook in the oven at 350º. I flip it 2 or 3 times while it’s cooking. It needs to me crispy.
