SWEET-AND-SPICY ASIAN DIPPING SAUCE WITH SESAME-SCALLION FLATBREAD AND SHRIMP

Sweet-and-Spicy Asian Dipping Sauce with Sesame-Scallion Flatbread and Shrimp image

Prepared pizza dough eliminates half of the work in these Asian-inspired flatbreads, with scallions and sesame seeds sandwiched between soft, chewy layers of crust. The versatile dipping sauce can also be served with frozen dumplings, spring rolls or even chicken fingers.

Provided by Food Network Kitchen

Categories     appetizer

Time 45m

Yield 6 to 8 servings

Number Of Ingredients 12

1/4 cup sweet chili sauce
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
1 red Fresno chile or jalapeno, half minced, half thinly sliced
3 teaspoons toasted (dark) sesame oil
2 tablespoons sesame seeds
1 bunch scallions, finely chopped
1 pound prepared pizza dough, at room temperature
All-purpose flour, for dusting
1/2 teaspoon kosher salt
2 tablespoons canola oil
1 pound peeled, cooked shrimp, for dipping

Steps:

  • Stir together the chili sauce, soy sauce, vinegar, the minced chile, 2 teaspoons of the sesame oil and 1 tablespoon water in a small bowl. Pour into a small serving bowl and top with the sliced chile. Set aside to let the flavors blend.
  • Meanwhile, make the flatbread: Heat a medium nonstick skillet over medium heat and add the sesame seeds. Cook, stirring, until toasted, about 3 minutes. Transfer to a small bowl and reserve the skillet. Add the scallions and remaining 1 teaspoon sesame oil to the bowl and set aside. Roll the dough out on a lightly floured surface until it is about 1/8-inch thick. Sprinkle with the scallion mixture and salt and fold in half like a book. Press the halves together with your fingers and then roll the dough out again until it is 1/8-inch thick. Cut the dough into 6 equal pieces. Stretch and roll each piece until very thin, pinching the edges together to keep the filling from spilling out. When the dough is thin enough, you should be able to see the filling through the dough. The pieces should be 7 to 8 inches in diameter, although they need not be perfectly round.
  • Heat 1/2 tablespoon of the canola oil over medium-high heat in the same skillet. When very hot, add a piece of the dough and cook, turning once, until it is puffed and cooked through and has some charred spots, about 2 minutes per side. Transfer to a cutting board and repeat with the remaining pieces of dough, adding more canola oil as needed to just lightly coat the bottom of the skillet and reducing the heat if the dough starts to burn before it cooks through. Cut the flatbreads into pieces and serve with the dip and cooked shrimp.

Time 30m

Yield 8

Number Of Ingredients 11

1 pound large shrimp (21-25 per pound), peeled and deveined, tails left on
¼ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
2 large eggs
1 ½ cups sweetened shredded coconut
½ cup panko bread crumbs
8 tablespoons light olive oil, or any high-heat cooking oil
Reynolds® Parchment Paper
¼ cup sweet chili sauce
¼ cup apricot preserves or apricot fruit spread

Steps:

  • Rinse shrimp in cold water and pat dry with paper towels.
  • Set up 3 shallow bowls. In the first, stir together 1/4 cup flour, 1/2 teaspoon garlic powder and 1/2 teaspoon salt. In the second, add eggs and lightly beat with a fork. In the third, combine 1 1/2 cups coconut flakes and 1/2 cup panko bread crumbs.

1/4 cup unseasoned rice wine vinegar
1 tablespoon fresh ginger, peeled and minced
1 tablespoon fresh cilantro, chopped
2 tablespoons whole coriander seeds
1 1/2 pounds colossal (under 12 per pound; about 18), or jumbo (16 to 20 per pound; about 24 to 30) shrimp, peeled with tails left intact, deveined
9 scallions, white and light-green parts only, cut into 1-inch pieces
2 tablespoons vegetable oil
1/2 teaspoon kosher salt
1/2 teaspoon freshly coarse-ground black pepper

  • Shrimp butter. Blend shrimp paste and lime juice with butter for a Malaysian-inspired take on grilled shrimp.
  • Miso butter. Mix butter with miso, lemon zest and juice, and scallions for a savory-tangy sauce you can toss with shrimp post grilling.
  • Oregano and lemon. For Mediterranean-style shrimp, chop together capers, oregano and garlic, then blend in olive oil and lemon juice to serve at the table.
  • Pesto. Forget that rule about mixing cheese with seafood. Make a lemony pesto, enriched with Parmigiano-Reggiano, to serve with grilled shrimp.
  • Harissa. Toss shell-on shrimp with the North African–style chile paste known as harissa soon after it’s grilled and serve with lime wedges; let people peel and eat at the table.
  • Aioli. Doctor aioli (or a cheater version with store-bought mayo) with citrus zest and serve with shrimp for dipping.
  • Mango salsa. Make a sweet and spicy salsa with ripe mangoes, lime, Thai chile and ginger to serve over grilled shrimp.
  • Romesco. Spain’s sauce of roasted peppers, almonds and garlic is a natural with grilled shrimp. Serve a basic version or add cocoa nibs!
